2 cups all-purpose flour
½ cup packed brown sugar
½ teaspoon ground cinnamon
1 cup unsalted butter
4 eggs
2 cups white sugar
½ cup flour
½ teaspoon salt
4 cups diced rhubarb
2 cups sliced strawberries
1 cup blueberries
½ cup flour
½ cup brown sugar, packed
½ cup rolled oats
¼ cup butter, melted
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 13x9-inch baking dish.
  • Mix 2 cups flour, 1/2 cup brown sugar, and 1/2 teaspoon cinnamon together in a bowl. Cut 1 cup unsalted butter into the flour mixture until crumbs form; press into bottom of prepared baking dish.
  • Bake crust in preheated oven until golden brown, about 15 minutes.
  • Blend eggs, white sugar, 1/2 cup flour, and salt in a blender until smooth; pour into a large bowl. Fold rhubarb, strawberries, and blueberries into the blended egg mixture. Spread the fruit mixture onto the baked crust.
  • Mix 1/2 cup flour, 1/2 cup brown sugar, oats, melted butter, and 1/2 teaspoon cinnamon together in a bowl; sprinkle over the fruit mixture.
  • Bake in preheated oven until lightly browned on top and the filling has set, 45 to 50 minutes.

Classic marshmallow cereal treats get a burst of berry flavor from Very Berry Cheerios™ cereal.

4 tablespoons unsalted butter
1 bag (16 oz) miniature marshmallows
5 cups Very Berry Cheerios™ cereal
1 1/2 cups freeze-dried strawberries or raspberries
1/2 cup white vanilla baking chips

Steps:

  • Line 8-inch square pan with cooking parchment paper, leaving paper overhanging on two sides. Spray paper with cooking spray.
  • In 4-quart saucepan, melt butter over medium heat. Add marshmallows; cook and stir until melted. Remove from heat; gently stir in cereal and 1 cup of the freeze-dried berries until evenly coated with marshmallow mixture. Spread in pan. Spray or butter hands, and firmly press mixture in pan.
  • Sprinkle top of bars with remaining 1/2 cup freeze-dried berries. In small microwavable bowl, melt chips uncovered on High in 30-second bursts, stirring between each, until melted and smooth. Drizzle over bars. Let stand at room temperature until firm, about 2 hours. Lift from pan by paper overhangs to remove. Cut into 4 rows by 4 rows.

CREAMY VERY BERRY CAKE BARS

I've been dabbling w/ different ingredients for an easy cake bar recipe using what I have on hand to NOT have to go to the market & came up w/ these. My husband usually is not a fan of cream cheese & that's why I ended up using some cream cheese ready made frosting Believe me, it makes it less " cream cheese" tasting. I know it sounds odd but he ate the whole pan w/in 2 days. lol.

1 box(es) yellow cake mix, ( not the butter kind,)
1/3 cup(s) room temp butter
2 cup(s) berries, i used a mix of frzn & thawed over a sieve
1/2 cup(s) high quality strawberry preserves
8 ounce(s) softened cream cheese
1/2 cup(s) sugar
1-1/2 teaspoon(s) real vanilla
1/4 cup(s) very soft cream cheese frosting from a 16 oz container
1 jumbo egg

Steps:

  • Heat oven to 350. Lightly spray a 9" x 13" baking pan w/ olive or vegetable cooking oil.
  • In large bowl, combine cake mix, butter and egg. Mix w/ pastry cutter or a fork until crumbly. Reserve 1 cup, set aside. Press remaining crumbs into bottom of pan. Bake 10 mins.
  • Meanwhile, in medium bowl, w/ a mixer, beat cream cheese with sugar & vanilla until creamy. Add 1/4 cup of the cream cheese frosting until smooth. In medium bowl, gently mix berries w/ preserves, spoon over crust. Then spread cream cheese mix over berries. Sprinkle w/ reserved cake crumbles. Bake about 25 minutes. I serve these cake bars w/ homemade whipped cream-delicious!

I adopted this recipe on JAP and made a few changes. I made two versions...one is a blueberry bar using almond extract and a dash of cinnamon in the sugar topping. The second is a triple berry bar using vanilla extract. I dusted powdered sugar over these for presentation. These are very moist and more like a dessert than a bar cookie. Delicious!

1/4 cup(s) granulated sugar
1 dash(es) cinnamon (see description)
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
2/3 cup(s) buttermilk
1 teaspoon(s) vanilla extract (or almond)
1 1/2 cup(s) raspberries or blueberries (fresh or frozen)
2 tablespoon(s) sugar
1 teaspoon(s) cornstarch
1 teaspoon(s) grated lemon peel

Steps:

  • Blueberries/raspberries should be fresh or frozen, not thawed.
  • May use a mixture of the two.
  • Preheat oven to 350 degrees.
  • Spray an 8\" square baking pan with nonstick cooking spray.
  • In a small bowl, whisk flour, sugar, baking soda and salt.
  • Whisk in buttermilk and vanilla.
  • Spread evenly into prepared pan.
  • Distribute berries evenly over batter.
  • In a small bowl, combine sugar, constarch, and lemon peel.
  • Sprinkle evenly over berries and bake in upper third of oven 35-40 minutes, or until golden brown and beginning to pull away form the edges of pan.
  • Cool completely before cutting.
