Fast vegetable soup with old fashioned taste. Sent to me by mom years ago. It was a big time saver while I was raising 3 boys as a single parent.

Number Of Ingredients 8

1 lb ground beef
2 (14 ounce) cans condensed chicken broth
2 (14 ounce) cans water (use empty broth cans)
4 cups water
1 (1 1/4 ounce) envelope Lipton French Onion soup mix
1 (14 ounce) can diced tomatoes
1 (12 -16 ounce) bag frozen vegetables
1/2 cup small shell pasta (like orzo, stars,alphabets, etc)

Steps:

  • In a large pot brown ground beef, stirring to break up.
  • Drain well.
  • Add broth, onion soup mix, water, tomatoes, bring to a boil, reduce heat simmer 5 minutes, add frozen vegetables, continue to simmer 10 minutes more.
  • Stir in pasta cook about 8 minutes more till pasta is done.
  • This makes a fast, great-tasting soup in no time at all--freezes well.

There are several versions of this soup. I have tried 3 of them and this one, which was passed down to me from my mom, is my favorite.

Number Of Ingredients 10

1 -1 1/4 lb ground beef
1 (32 ounce) box chicken broth
4 cups water
1 (1 1/4 ounce) envelope French onion soup mix
1 (14 1/2 ounce) can diced tomatoes
2 -3 stalks celery, chopped
1 (16 ounce) bag frozen mixed vegetables
2/3 cup small shell pasta (or other small pasta)
1 tablespoon Worcestershire sauce
1 dash hot pepper sauce

Steps:

  • In a large pot brown ground beef.
  • Drain fat.
  • Add broth, water, celery, soup mix and tomatoes.
  • Bring to a boil, reduce heat and simmer for about 5 minutes.
  • Add pasta and frozen vegetables, along with worcestershire sauce and hot pepper sauce, and cook for 10 minutes more.
  • Serve with parmesan cheese, if desired.

1 Tbsp. olive oil
1 small onion, diced
1 tsp. salt, divided
1 lb. ground beef
½ cup pearl couscous or orzo pasta
1 (15 oz.) bag mixed frozen vegetables
1 (15 oz.) can diced tomatoes, lightly drained
4 cups chicken stock

Steps:

  • In a large saucepan heat olive oil over medium-high heat until shimmering. Add onion, ground beef, and half the salt.
  • Cook, stirring occasionally, breaking up any large pieces of beef, until well browned, about 10 minutes.
  • Stir in pearl couscous, vegetables, tomatoes, remaining salt, and chicken stock. Bring to boiling, reduce to a simmer.
  • Cook, stirring occasionally, until pasta is soft and vegetables are crisp-tender, about 10 minutes. Serve warm.

1- 1 lb. can Veg-All brand with liquid
1- 1 lb. can diced tomatoes
4 cups water
4 beef bouillon cubes
1 medium onion, chopped
1 lb. lean ground beef
1/2 cup uncooked orzo
salt & pepper to taste

Steps:

  • Saute chopped onion in small amount of oil. Add ground beef & cook thoroughly. Drain meat then transfer to a large saucepan. Add all remaining ingredients. Simmer 15 minutes, stirring occasionally. Serve with grated parmesan cheese.

This is a long time family favorite based on the famous minestrone soup served at a local restaurant. Delicious served with fresh Italian bread!

1 Tbsp olive oil, extra virgin
1 pkg dry onion soup mix
2 can(s) chicken broth
2 can(s) veg all (mixed vegetables)
2 can(s) tomatoes, canned italian-style and diced
1/4 c orzo pasta, uncooked
parmesan cheese

Steps:

  • 1. In a large soup pot brown ground beef in olive oil, breaking up into small pieces.
  • 2. Add onion soup mix and mix well.
  • 3. Add all canned ingredients, including the liquids, and bring to a boil.
  • 4. Add orzo and reduce heat. Simmer for 20 minutes (until orzo is cooked through).
  • 5. Serve with grated parmesan cheese.

This is a good and delicious way to use up leftovers. The recipe came from my mother who got it from her mother and so on. Everyone always asks for the recipe after eating it. I have tried many alterations such as canned veggies, whole tomatoes, could even use ground turkey instead of beef if prefered. All are delicious!

1 lb ground beef
16 oz can(s) tomatoes, crushed
1 lg can(s) college inn chicken or beef broth
1 pkg lipton onion soup mix
1 pkg frozen mixed vegetables
1/2 lb orzo pasta, cooked (i use uncooked)
1 qt water
1 Tbsp cooking oil (i prefer olive, but can use other)

Steps:

  • 1. Brown ground beef in 1 tbls oil.
  • 2. In a large stock pot combine tomatoes, beef, broth, onion soup mix, water & mixed vegetables.
  • 3. Simmer for 1/2 hour
  • 4. Add cooked or uncooked Orzo.
  • 5. Let simmer for additional 15 minutes or until orzo al dente.
  • 6. Serve hot and enjoy. Very filling and great for lunch on a cold winter day.
