VELVEETA CHICKEN SKILLET
A very yummy and easy dinner, especially if you cook the chicken ahead of time! After one bite of this dish my DH said "This one's a definite keeper!" It's also kid friendly!

Steps:
- Spray large skillet with Pam.
- Add Chicken and cook on medium until no longer pink.
- Stir in chicken broth.
- Bring to a boil and add pasta.
- Reduce heat to medium-lo.
- Cover and simmer 8 minutes, or until pasta is tender.
- Add Velveeta and veggies, stir until smooth.
- Serve with salad and garlic toast!

Steps:
- Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Place 1 chicken breast, 1 bell pepper wedge, 2 tomato halves and 2 onion wedges on center of each sheet. Pour 2 tablespoons dressing over chicken and vegetable mixture on each packet.
- For each packet, bring up 2 sides of foil over chicken and vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
- Place packets on grill over medium heat. Cover grill; cook 18 to 22 minutes, rotating packets 1/2 turn after 10 minutes, until juice of chicken is clear when center of thickest part is cut (170°F). Place packets on plates. Cut large X across tops of packets; carefully fold back foil.

CAMPFIRE CHICKEN PACKETS
Cracker Barrel restaurant serves something similar to this dish. This is our at-home version. Bone-in meat works best. The chicken flavors the potatoes & veggies so well.

Steps:
- For each packet, place a 10 inches long piece of aluminum foil on the counter. Spray with nonstick cooking spray.
- Place sliced potato on the foil. Season them with salt & pepper to taste.
- Top with onions, peppers, then the chicken.
- Drizzle a little extra virgin olive oil on top of the chicken. Season chicken with salt & pepper.
- Wrap the aluminum foil up tightly, making sure there are no tears or "leaks". Double wrap the packets in foil if necessary.
- Grill at 400 for 35 minutes, or until done. Or, cook over an open fire.
VELVEETA CHEESY CHICKEN & RICE SKILLET
I decided to refer to my cookbook collection to find a tasty meal last night and this was the ticket. Richard prepared it and was tickled ppink with how well it turned out. We made 4 large breasts so we used some more oil than called for and cooked them slowly so they wouldn't burn etc. This came from my Favorite brand Name Best-Loved Recipies cookbook. This tasted like rice a roni with moist chicken... yummy!

- heat oil in a large skillet on med hi heat..
- add chicken cover.
- cook 4 minutes on each side or until cooked through
- Remove chicken from skillet.
- add soup and water to skillet
- stir and bring to a boil.
- stir in rice and 1 c of velveeta.
- top with chicken.
- sprinkle with remaining velveeta
- cover and cook on low heat 5 minutes.

Don't use the thinner spaghetti and cook a minute or two less if you usually like your pasta al dente! Oh my goodness... A fellow RN brought this to work once. I have been asking her for TWO YEARS for the recipe and have searched and searched the internet. Finally she emailed it to me! This one dish meal is so freaking good!!!!! Don't be afraid of the ingredients , just try it! Your family will probably fight over the leftovers!

- Preheat oven to 350 degreees.
- Cook spaghetti as directed on package, minus a minute or two if you like your pasta firmer.
- Melt butter in large deep pan, and saute onions and celery.
- Add chicken, cheese, cooked spaghetti, mushroom soup, black olives, rotel tomatoes, garlic powder and mix well.
- Transfer to a casserole dish and bake in preheated oven for 45 minutes.
