SOUTHWESTERN MEATLOAF

2/3 cup panko breadcrumbs
1/2 cup milk
1/4 cup chopped fresh cilantro
1/4 cup ketchup
2 tablespoons barbecue sauce
2 tablespoons Dijon mustard
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
4 cloves garlic, minced
4 green onions, thinly sliced
2 large eggs
1 small Spanish onion, diced
1 small red bell pepper, diced
2 pounds ground beef

Steps:

  • Preheat the oven to 375 degrees F. Add the panko, milk, cilantro, ketchup, barbecue sauce, Dijon mustard, chili powder, cumin, cayenne, garlic, green onions, eggs, Spanish onion and red bell pepper to a large bowl and mix until thoroughly combined. Add the beef and mix until incorporated, being careful not to overwork. Put the meat mixture in a loaf pan set on a rimmed baking sheet and bake until it registers 165 degrees F on an instant-read thermometer, 60 to 75 minutes. Let stand 10 to 15 minutes before slicing. Serve with smashed red potatoes, green onions and sour cream.

1 pound ground beef
1 pound ground pork
1 (1 ounce) envelope dry onion soup mix
2 eggs, beaten
1 ½ cups dry bread crumbs
ground black pepper to taste
¾ cup water
2 cups shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
  • Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

1 loaf (16 oz. box) VELVEETA™ Original Cheese, cut into cubes
1 can (15.25 oz) whole kernel corn, drained
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 can (10 oz) diced tomatoes with green chiles, undrained
1 cup milk
Fresh cilantro sprigs, if desired

Steps:

  • In 4-quart Dutch oven, mix all ingredients except cilantro.
  • Cook over medium-low heat, stirring frequently, until cheese is melted and soup is hot. Garnish each serving with cilantro.

I was tired of eating the same plan meatloaf, so I decided to give it a twist, and stuff it with cheese......

1 lb ground beef
1/2 cup finely chopped onion (white or yellow)
1 tablespoon garlic powder
2 eggs (beaten)
1/2 cup Italian seasoned breadcrumbs
1/4 cup barbecue sauce (hickory)
1/4 Worcestershire sauce
1/2 lb Velveeta cheese (cubed)
1/4 cup ketchup
1/4 cup French dressing
2 tablespoons brown sugar

Steps:

  • Pre heat over at 325°F.
  • Mix ground beef, onion, garlic powder, eggs, bread crumbs bbq sauce, and worcestershire sauce together.
  • Form into a loaf, place in a baking bag, and put it in a small roaster.
  • Bake 1 hr, then pull loaf out of the baking bag and place on cookie sheet.
  • Melt velveeta cheese on stove top, use low heat or it will burn.
  • Cut the top of the meatloaf making a deep well. Keep it 1 whole piece.
  • DO NOT scoop the meat out with a spoon, because the top will go back on the loaf.
  • Pour the melted cheese in the meatloaf, and place the piece of hamburger back on the meatloaf.
  • Mix together the sauce, and pour over meatloaf.
  • Place back in the over for 20 to 30 minutes.
