1/2 cup garden vegetable-flavored cream cheese
4 flour tortillas (8 to 10 inches in diameter)
1 cup lightly packed spinach leaves
1 large tomato, thinly sliced
3/4 cup shredded carrot
8 slices (1 ounce each) Muenster or Monterey Jack cheese
1 small yellow bell pepper, chopped (1/2 cup)

Steps:

  • Spread 2 tablespoons cream cheese over each tortilla. Top with spinach and tomato to within 1 inch of edge. Sprinkle with carrot. Top with cheese. Sprinkle with bell pepper.
  • Roll up tortillas tightly. Serve immediately, or wrap securely with plastic wrap and refrigerate no longer than 24 hours.

1/2 cup reduced-fat garlic-herb spreadable cheese
4 flour tortillas (10 inches)
1-1/4 cups chopped seeded tomatoes
1-1/4 cups julienned fresh spinach
3/4 cup chopped sweet red pepper
2 bacon strips, cooked and crumbled
1/4 teaspoon coarsely ground pepper

Steps:

  • Spread 2 tablespoons spreadable cheese over each tortilla. Top with tomatoes, spinach, red pepper, bacon and pepper. Roll up tightly.

3 tablespoons red wine vinegar
3 tablespoons olive oil
1 teaspoon lemon-pepper seasoning
1 garlic clove, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
2 medium zucchini, cut lengthwise into 1/4-inch slices
1 medium yellow summer squash, cut lengthwise into 1/4-inch slices
1 medium sweet red pepper, cut into strips
4 ounces cream cheese, softened
1 tablespoon prepared pesto
4 whole wheat tortillas (8 inches), warmed

Steps:

  • In a large resealable plastic bag, combine the first six ingredients; add zucchini, yellow squash and red pepper. Seal bag and turn to coat; refrigerate overnight, turning once. , In a small bowl, combine cream cheese and pesto; set aside. Drain and discard marinade. Place vegetables in a grill basket or disposable foil pan with slits cut in the bottom. Grill, covered, over medium-high heat for 3-4 minutes on each side or until tender. , Spread reserved pesto cream cheese over tortillas; top with vegetables. Fold sides over filling. Serve immediately.

1 medium zucchini, cut lengthwise into 1/2-inch slices
1 yellow summer squash, cut lengthwise into 1/2-inch slices
1 small sweet red pepper, cut in half
2 tablespoons olive oil, divided
1/2 teaspoon salt
1 large tomato, chopped
1/4 cup reduced-fat mayonnaise
2 tablespoons prepared pesto
1 tablespoon minced fresh basil
1 tablespoon minced fresh oregano
4 whole wheat tortillas (8 inches)
1 cup shredded part-skim mozzarella cheese

Steps:

  • Brush the zucchini, summer squash and red pepper with 1 tablespoon oil. Sprinkle with salt. Grill vegetables over medium heat for 4-5 minutes on each side or until tender. Cut into 1/2-in. cubes and place in a small bowl; stir in tomato., Combine the mayonnaise, pesto, basil and oregano; set aside. Brush both sides of tortillas with remaining oil. Steps:

  • Heat tortillas as directed on package. Meanwhile, in small bowl, mix cream cheese, cumin and salt until blended.

1/4 cup tub-style fat free cream cheese
4 8-inch fat-free flour tortillas
4 clean raw spinach leaves (other good-quality lettuces work just as well)
1 cup alfalfa sprout
1 cup shredded red cabbage
1/2 cup chopped tomato
1/4 cup crumbled feta cheese (or any other crumbly cheese(blue, for instance)
2 tablespoons finely diced red onions

Steps:

  • Spread 1 tbs cream cheese over each tortilla; top each with a piece of spinach.
  • Divide sprouts and remaining ingredients evenly among tortillas; roll up.
  • Cut each wrap in half diagonally.

I've made these for years, but it never occurred to me to post it until a request for tortilla pinwheels was posted. These are always a hit and are also fairly healthy! Cook time is refrigeration time.

8 ounces cream cheese, softened
1 package Italian salad dressing mix
1 cup fresh cauliflower floret
1 cup fresh carrot, baby or chunks
1 cup fresh broccoli florets
1/2 cup green pepper, chunks
1/2 cup onion, chunks
6 6-inch flour tortillas

Steps:

  • Mix softened cream cheese and dressing mix until well blended.
  • Finely chop all vegetables (in a food processor if available).
  • You don't want any big chunks, but you also don't want puree.
  • Spread each tortilla with 1/6th of the cream cheese mixture.
  • Sprinkle with 1/6th of the veggies.
  • Roll up tightly and wrap each tortilla in plastic wrap.
  • Refrigerate at least 4 hours and up to 12 hours.
  • Remove wrap and slice in 1 inch pieces, skewering with a toothpick if needed.
  • Serve immediately or refrigerate until serving.
