BACON BROCCOLI QUICHE

Even folks who claim not to like quiche rave about this one! I developed the recipe by combining the best of five others that I'd tried. Now it's a hearty family favorite that always gets star billing at my traditional Christmas morning brunch.

Number Of Ingredients 12

2 tablespoons all-purpose flour
1/2 cup mayonnaise
1 tablespoon dried minced onion
1 tablespoon butter, melted
1 teaspoon salt
3 large eggs
1-1/2 cups whole milk
3 cups frozen chopped broccoli, thawed and patted dry
12 bacon strips, cooked and crumbled
8 medium fresh mushrooms, chopped
2 cups shredded Monterey Jack cheese
1 sheet refrigerated pie pastry

Steps:

  • In a large bowl, combine the first five ingredients. Whisk in eggs, one at a time. Stir in the milk, broccoli, bacon, mushrooms and cheese. , Line a 9-in. deep-dish pie plate with pastry. Trim pastry to 1/2 in. beyond edge of plate; flute edges. Pour broccoli mixture into crust. Bake at 350° for 55-60 minutes or until a knife inserted in the center comes out clean. Let stand for 10-15 minutes before cutting.

Number Of Ingredients 12

1 uncooked 9-inch pie shell
1 cup zucchini, coarsely chopped
1/2 cup green bell pepper, diced
1/2 cup red bell pepper, diced
4 -5 slices bacon, cut into 3/4-inch pieces
1 small chopped onion
1 cup shredded cheddar cheese
4 eggs
1 cup evaporated milk
1 tablespoon coarse grain mustard
2 tablespoons flour
parsley or red pepper flakes, to garnish (to garnish)

Steps:

  • Precook piecrust in preheated 350-degree oven (prevents soggy crust).
  • In a large skillet, fry the bacon pieces until they are crisp.
  • Set bacon aside to drain on paper towel, but do not discard bacon drippings.
  • Sauté the onions, zucchini and peppers in the bacon drippings.
  • Drain the vegetables well and put them in the precooked crust followed by cheese.
  • Blend eggs, mustard, flour, and evaporated milk and pour the mixture into piecrust over other ingredients.
  • Bake at 350 degrees for 50 minutes.
  • After about 35 minutes of baking time, spread the cooked bacon pieces over the pie and sprinkle some more shredded cheese on top.
  • Pie is cooked when knife comes out clean when inserted in pie.
  • Let set for 5 minutes or so before cutting.
  • Garnish as desired and serve hot, warm, or cold.

1 frozen pie shell (9 inches)
1 small red onion, sliced
1/2 cup sliced fresh mushrooms
1/4 cup diced yellow summer squash
1 tablespoon butter
1/2 cup fresh baby spinach
3 garlic cloves, minced
1 cup shredded Swiss cheese
4 large eggs, lightly beaten
1-2/3 cups heavy whipping cream
1/2 teaspoon salt
1/2 teaspoon minced fresh rosemary
1/4 teaspoon pepper

Steps:

  • Let pastry shell stand at room temperature for 10 minutes. Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 400° for 4 minutes. Remove foil; bake 4 minutes longer. Cool on a wire rack. Reduce heat to 350°., In a large skillet, saute the onion, mushrooms and squash in butter until tender. Add spinach and garlic; cook 1 minute longer. Spoon into crust; top with cheese. , In a large bowl, whisk the eggs, cream, salt, rosemary and pepper until blended; pour over cheese. , Cover edges of crust loosely with foil. Bake for 40-45 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.
