1 tablespoon unsalted butter
2 small heads fennel, finely chopped (about 3 cups)
1/2 medium yellow onion, finely chopped
2 medium carrots, peeled and finely chopped (about 2/3 cup)
12 ounces white button mushrooms, sliced (about 5 cups)
1 small russet potato, peeled and diced small (about 2 1/2 cups)
1/4 cup all-purpose flour
1 cup low-sodium mushroom broth
1 cup whole milk
1 cup frozen baby green peas
1/4 cup thinly sliced fresh chives
1/4 cup parsley
1 tablespoon white vinegar
1 large egg yolk
7 ounces store-bought puff pastry or pie dough, defrosted if frozen

Steps:

  • Heat the oven to 400 degrees F and arrange a rack in the middle.
  • Melt butter over medium heat in a 3- to 4-quart Dutch oven or heavy bottomed saucepan. When it foams, add fennel, onions, and carrots, and cook until just soft and onions are translucent, about 2 minutes. Add mushrooms and potato, season well with salt and freshly ground black pepper, and stir to coat. Cook, stirring rarely, until mushrooms have let off water and are shrunken, about 6 minutes.
  • Sprinkle flour over vegetables, stir to coat, and cook until raw flavor is gone, about 1 to 2 minutes. Carefully add broth and milk, stirring constantly until mixture is smooth. Bring to a simmer over medium heat and cook until slightly thickened, about 5 minutes.
  • Remove from heat, add peas, herbs, and vinegar, and stir to coat. Season well with salt and freshly ground black pepper. Turn filling into an 8 by 8-inch baking dish.
  • Whisk egg together with 2 teaspoons water and a pinch of salt until evenly mixed. Set aside.
  • With kitchen shears, cut dough to fit over the baking dish. Place dough over filling and tuck into the edges of the dish. Brush dough with egg wash and cut slits in the top to vent. Place on a baking sheet and bake until crust is golden brown and mixture is bubbling, about 25 to 30 minutes. Let sit at least 5 minutes before serving.

Steps:

  • Preheat oven to 400°F.
  • Saute onion, celery, carrots and potatoes in butter for 10 minutes.
  • Add flour to sauteed mixture, stirring well Cook one minute stirring constantly.
  • Combine broth and half and half.
  • Gradually stir into vegetable mixture.
  • Cook over medium heat stirring constantly until thickened and bubbly.
  • Stir in salt and pepper and tyme; add tofu and stir well.
  • Pour into shallow 2 quart casserole dish and top with pie shells.
  • Cut slits to allow steam to escape.
  • Bake for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.

4 tablespoons butter
1 medium onion, chopped
1 cup chopped mushrooms
2 cloves garlic, minced
2 teaspoons Italian seasoning blend

½ teaspoon ground sweet paprika

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 1 1/2-quart souffle or other baking dish with cooking spray.
  • Melt butter in a large, nonstick skillet over medium heat until bubbly. Add onion and cook until it begins to turn translucent, 2 to 3 minutes. Add mushrooms and cook until they begin to soften and release a little moisture, about 4 minutes. Stir in garlic and cook until fragrant, 1 to 2 minutes.
  • Stir in Italian seasoning, salt, pepper, sage, paprika, and cayenne. Stir in spinach and parsley; cook until spinach is just wilted, about 1 minutes. 1 package Gardein vegetarian chicken scallopini, cut into 1/2" cubes
6 cups vegetable stock
1 onion, diced (about 1 cup)
3 carrots, diced (about 1 cup)
1 cup green peas
1 1/2 t thyme
3/4 t salt
3/4 t pepper
1 T nutritional yeast flakes
1 T soy sauce
3 T canola oil
3/4 c flour
3/4 c butter
2 pie crusts for 9" deep dish pie

Steps:

  • Preheat oven to 375℉. Put vegetable stock in a pan & heat to a simmer. It must be boiling when added. Brown "chicken" in a skillet with 1T oil. Season with salt & pepper. Remove from the pan & set aside. Make a roux by melting butter, adding flour, and whisking constantly until light brown in color. Set aside. In large stock pot, cook onions in oil for 5 minutes or until they begin to become clear, then add carrots, thyme, salt & pepper. Cook another 5 minutes or so. Add boiling stock and cook another 5 minutes. Whisk in nutritional yeast. Add in the roux a bit at a time and continue to cook as the sauce thickens. Finally add the "chicken", soy sauce and peas. Remove from heat and let cool a bit. Roll out one pie crust and line a 9" deep dish pie plate. Add the cooled pie filling, and top with the second pie crust. Cut some air slits into the top crust. Bake for about an hour, or until the top is nicely browned and the filling is bubbling a bit. You could omit the bottom crust and simply use a top crust if desired. You could also make small individual pies, but limit the baking time to about half an hour if you do this. I haven't tried this, so the baking time is an estimate.

VEGETARIAN SHEPHERD'S PIE (CROCK POT)

Next time you buy sweet potatoes, buy a few extra to make this delicious low fat vegetarian supper. If you prefer a "meat" dish just omit the bulgar and salt, and saute 1 pound of ground beef and add it to crock pot adding it to the crock pot before adding the vegetables to the crock pot. This recipe requires a greased 5 quart (or larger) slow cooker When I made this I only used two parsnips instead of the 4 as in the instructions but huge sweet potatoes. We served this with sourdough bread and I topped mine with low-fat sour cream. I also think this would be a great veggie side dish (skipping the bulgur) to accompany chicken. 4 sweet potatoes, peeled and sliced
1 tablespoon butter

1 cup bulgur (see note in description if you prefer a meat-lovers shepherd pie)
2 cups boiling water
1 tablespoon olive oil
2 onions, chopped
4 -5 carrots, peeled and sliced
4 -5 parsnips, peeled and sliced
4 garlic cloves, minced
2 teaspoons rosemary (or 1 tablespoon fresh rosemary minced)
1 teaspoon salt
1/2 teaspoon pepper
8 ounces cremini mushrooms (or 8 ounce regular mushrooms, quartered)
1 tablespoon flour
1 cup vegetable broth
1/4 cup tomato paste
1 cup swiss cheese (optional)

Steps:

  • To make the topping: in a pot of boiling water, cook sweet potatoes until tender (20-30 minutes). Drain; mash potatoes, stir in butter and season with salt and pepper. Set aside.
  • To make the pie: in a bowl combine bulgur and boiling water; set aside for 20 minutes or until water is absorbed. Set aside.
  • Over medium heat, heat oil in a skillet for 30 seconds or so.
  • Add vegetables (onions - parsnips) and cook, stirring until vegetables are softened (6-10 minutes).
  • Stir in garlic, rosemary, salt and pepper, continuing to cook stirring for another minute or so.
  • Stir in mushrooms, tossing to coat.
  • Stir in flour and cook stirring for another minute or so.
  • Stir in broth and tomato paste. Bring mixture to a boil and then transfer to slow cooker.
  • Add bulgur and stir in well.
  • Spread sweet potato topping over mixture.
  • Place a tea towel folded in half over top of stoneware to absorb excess moisture. (I used a paper towel but a tea towel would probably work so much better.).
  • Cover and cook on low for 7-8 hours or on High for 3-4 hours or until vegetables are tender.
  • Sprinkle with Swiss cheese if using, and cover and cook on high for another 15 minutes or until cheese is melted.

3 potatoes, peeled and cubed

1 cube vegetable bouillon (such as Telma®)

1 (6 ounce) package seasoned chicken-style vegetarian strips (such as Lightlife Smart Strips®), chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Press 1 pie crust into a pie pan.
  • Bring a large pot of water to a boil over high heat. Add potatoes and carrots; boil until tender, about 15 minutes. Add broccoli and cook for another 3 minutes.

Meatless but very flavorful. This is hard-core comfort food! Also very easy to make. Adapted from "Fresh from the Vegetarian Slow Cooker" by Robin Robinson. Serve with your favorite salsa, and a dab of sour cream, if you like. Like many reviewers, I don't particularly like the topping, so I substitute another cornbread made from another recipe, or from 1 box of Jiffy cornbread mix.

2 tablespoons light olive oil, divided
1 teaspoon light olive oil
1 small onion, chopped
1 medium carrot, chopped
1 bell pepper, chopped
2 garlic cloves, minced
1 cup frozen corn kernels
3 cups cooked pinto beans (or 2 15.5-oz cans of pinto beans, drained)
1 jalapeno chile, minced (remove the seeds and white ribs for a milder "hot")
3/4 cup vegetable stock
1 tablespoon tamari or 1 tablespoon other soy sauce
2 tablespoons fresh cilantro, chopped
salt and pepper
1/2 cup cornmeal
1/2 cup all-purpose flour
2 teaspoons baking powder

Steps:

  • The beans can be prepared in the slow cooker! The night before you wish to make the pot pie, pick and rinse 1/2 lb of dry beans, put them in the slow cooker with water to cover plus one inch, and cook them on Low overnight. In the morning, the cooked beans are ready to drain and use in this (or any!) recipe.
  • In a skillet over medium heat, saute the onion and carrot about 5 minutes, until softened.
  • Lightly oil a 3 1/2 - 4 quart slow cooker with 1 tsp oil.
  • Transfer the onions and carrot to the cooker, and add the bell pepper, garlic, corn, pinto beans, and chiles.
  • Stir in the stock, tamari, and cilantro.
  • Cool on Low for 5 hours.
  • Add salt and pepper to taste.
  • Make the topping: In a separate bowl, combine the cornmeal, flour, baking powder, and baking soda, and mix well. Add the remaining 1 Tbsp oil and the milk (for vegan use the soy milk), and mix until just combined.
  • Place the topping on top of the filling, turn the cooker up to High, and cook for 1 hour more.

This comforting savory vegetarian pot pie is filled with vegan mushroom stew and topped with a golden brown crust.

1 sheet storebought pie dough
Flour, for dusting
1 Tbsp. olive oil
1 tsp. maple syrup
1 Tbsp. olive oil
7 oz. green beans, trimmed
2 garlic cloves, minced
Sea salt

Steps:

  • Preheat the oven to 400°F (or follow the pie crust package instructions).
  • Place the stew in a small but deep roasting tin or oven dish that's appropriate for a pie.
  • Roll out the pastry on a lightly floured surface until ¼-inch thick. Brush around the edge of the roasting tin or dish with water, then lay the pastry over it and press it down to make it stick. Use a sharp knife to trim off any excess pastry, then press around the edges with a fork. Cut a steam hole in the middle. Mix the olive oil and maple syrup in a small bowl, then brush this mixture over the pastry. Place in the oven and bake for 30 minutes until golden brown.
  • Meanwhile, prepare the green beans. Heat the olive oil in a frying pan over a medium heat. Add the green beans and garlic, season with salt and cook, stirring occasionally, for 6 minutes until the beans are tender but still have a slight bite. Serve the beans alongside the pie for a warming winter meal.

This a hearty dish and easy to prepare. The 'chicken' is a package of (vegetarian) Morning Star Farms Meal Starters 'Chicken Strips'. Great served with mashed potatoes, extra gravy and salad. I used Bisquick for the top but you can use any biscuit recipe you like. It's also good topped with pie crust or even puff pastry if you want to be extravagant with the fat.

2/3 cup raw cashews
1/4 cup soy sauce
3 tablespoons cornstarch
1 (16 ounce) bag frozen mixed vegetables
8 ounces chicken, cubed
biscuit dough or 1 pie crust
1 (8 ounce) package Morningstar Farms Meal Starters chicken strips

Steps:

  • Place the cashews, soy sauce, cornstarch and half the water in the blender. Blend 3 full minutes, add the remainder of the water and blend to mix well. Pour mixture into a large non stick frying pan and heat stirring till thickened. Add vegetables and 'Chicken Strips' and stir to mix well with gravy. Pour filling into deep casserole dish (I use a 4 liter corning casserole dish) and top with drop biscuits. Bake according to directions for the biscuits, or until they are golden brown and the filling is bubbly hot.

I have always loved pot pied; my mom seemed to make them on a weekly basis, especially in the winter. This version, which is actually not technically a pie, is a perfect go-to meal that's ready in about half the time as conventional recipes. And if you like you can add your favorite meat to it. I bake the pastry by itself to achieve a super-crispy top you can lay over a bowl of creamy filling. You can even bake the pastry toppers a day ahead of time and pop them in an airtight container until you're ready to use them.

2 sheets frozen puff pastry
1 tablespoon all-purpose flour, plus more for dusting
1 medium or large egg
4 tablespoons (1/2 stick) unsalted butter

3 celery stalks, diced

3 cloves garlic, roughly chopped
1 teaspoon kosher salt

1 pound sweet potatoes, peeled and diced

Steps:

  • Remove the puff pastry sheets from the freezer and let them thaw for 30 to 40 minutes.
  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Place one puff pastry sheet on a work surface dusted with flour and use a rolling pin to flatten out any creases. Whisk the egg with a splash of water. Cut the pastry into 4 to 6 square pieces, place on the prepared baking sheet and brush with egg wash. Bake until golden brown and puffed, about 10 minutes. Repeat with the second sheet.
  • Meanwhile, in a large pot or Dutch oven over a medium-high heat, melt the butter and add the onion, celery, carrots, garlic, salt and pepper and cook for 8 to 10 minutes, stirring occasionally, to soften everything.
  • Stir in the mushrooms, tarragon and thyme and cook until the mushrooms are almost halved in size, 5 to 6 minutes. Add the sweet potatoes and the 1 tablespoon flour and stir to combine. Stir in the broth and let simmer until the potatoes are tender, 8 to 10 minutes. Stir in the cream and peas and cook until the mixture is nicely thickened. Remove from the heat.
  • For each serving, scoop 8 to 10 ounces of the creamy pot pie mixture into a large bowl or onto a plate and top with one of the baked puff pastry pieces.
