3/4 cup flour
1/2 cup coconut milk
1 cup coconut milk
1/2 cup sugar
1 1/2 teaspoons salt
3 tablespoons toasted sesame seeds

Steps:

  • Start a large pot of water to boiling.
  • Stir together the flour with 1/2 cup coconut milk until dissolved. Cook over medium low heat, stirring constantly, until it forms a thick dough that pulls away from the side of the pan and is no longer sticky.
  • Turn dough out onto a large cutting board and as soon as it is cool enough to handle knead it for several minutes to form a homogenous ball.
  • Using a press or your fingers and a fork shape small dumplings, keeping the dough that you aren't working with covered with a damp towel.
  • After you have formed all of the dumplings, cook in boiling water until brightly colored and cooked through, then immediately drain.
  • While the dumplings are cooking, combine the coconut milk, sugar, and salt in a large saucepan and bring to a simmer.
  • Add the cooked dumplings into the simmering coconut sugar mixture and simmer for a few minutes.
  • Serve warm in bowls, and sprinkle with sesame seeds.

2 (250 g) packages halloumi cheese
1 red onion
3 red peppers
150 g mushrooms
250 g cherry tomatoes
12 bamboo skewers, soaked in water

Steps:

  • Cut the cheese into 2 1/2 cm cubes.
  • Cut the onion and peppers into large pieces roughly the same size.
  • Thread the cheese and vegetables onto the skewers.
  • Barbecue or grill for about 10 minutes or until the cheese and vegetables turn golden.
  • Otherwise, marinate the cheese in a mixture of lime, olive oil and corriander for about an hour before cooking.

This is a great recipe. When I make the kebabs as a meal I serve them with a loaf of crusty italian bread. Sometimes I grill up some italian sausage to complete the meal. If there are any leftovers I use them in my recipe for pasta sauce. They are also excellent toppings for pizza.

2 zucchini
2 yellow squash
2 green peppers
2 red peppers
1 lb mushroom
1 bulb of garlic
2 onions
1 lb grape tomatoes
1 cup olive oil
1/4 cup balsamic vinegar
fresh oregano or dried oregano
fresh basil or dried basil
fresh parsley or dried parsley

Steps:

  • cut up the vegetables in chunks and put in large bowl.
  • mix up the ingredients for the marinade (I vary the amounts of herbs to my taste).
  • pour the marinade over the vegetables.
  • cover the bowl with plastic wrap.
  • Refrigerate for at least 2 hours.
  • after marinating put vegetables on skewers.
  • grill for at least 10 minutes turning frequently.

GEORGIAN VEGETABLE KEBABS



Georgian Vegetable Kebabs image

A very simply seasoned dish using whole peppers, mushrooms and tomatoes. Tomatoes should be ripe but still firm (so they don't fall off the skewer). Use flat skewers if possible. Adapted from the Barbecue Bible. I've changed the number of tomatoes from 6 to 8, so they would come out even.

8 plum tomatoes
16 large white mushroom caps
3 tablespoons olive oil
salt
pepper
1 lemon, halved

Steps:

  • Preheat grill to high.
  • Thread vegetables onto skewers, alternating like this: pepper, mushroom, tomato, mushroom, etc.
  • Brush with olive oil and season with salt and pepper.
  • Arrange on grill.
  • Cook, turning with tongs, until nicely browned, 4-6 minutes per side, basting with oil.
  • Squeeze lemon juice over vegetables and serve.

assorted vegetables, of choice diced and parboiled
tofu, squares (optional)
1 tablespoon vegetable oil
4 green shallots
2 cloves garlic, minced
1 teaspoon ginger, minced
2 teaspoons ground cumin
1 teaspoon paprika
1 1/2 cups coconut cream
1 tablespoon lime juice
2 tablespoons chili sauce
1 1/2 tablespoons finely chopped coriander

Steps:

  • Thread vegetables and tofu onto skewers- keep warm.
  • Coconut Cream Sauce: Blend all ingredients, warm slightly and pour over kebabs.
  • Serve on rice to soak up sauce.
