CRESCENT ROLL VEGGIE BARS
Whip up a quick-fix appetizer or snack with this family favorite recipe for veggie bars made with crescent rolls.

Steps:
- Preheat the oven to 350°F.
- Unroll the crescent rolls onto a nonstick baking sheet, separating the dough and arranging it in a single layer covering the entire baking sheet. Press together the perforations, and then using a fork, prick the dough all over. Bake the dough for 10 minutes until golden brown then remove it from the oven and allow it to cool completely.
- In a medium bowl, combine the cream cheese, mayonnaise and Ranch dressing mix. Using a handheld mixer, blend together the ingredients until smooth and creamy. (Alternately, beat the ingredients together in a stand mixer fitted with the paddle attachment.)
- Spread the cream cheese mixture onto the completely cooled baking sheet of crescent rolls, covering the entire surface in an even layer.
- Sprinkle the grated broccoli, cauliflower, carrots, tomatoes and scallions on top of the cream cheese then place a piece of parchment paper or wax paper on top and lightly press down the veggies. Cover the baking sheet securely with plastic wrap and refrigerate the bars for a minimum of one hour and up to overnight.
- When ready to serve, slice the sheet into bars and serve.

A great way to use up an abundant zucchini crop, add some other vegetables and you have an easy to make appetizer. I usually serve this with sour cream and chives on the side.

Steps:
- Heat oven to 350ºF.
- Make sure your zucchini is well drained, I put it in a clean tea towel and squeeze it dry.
- Grease bottom and sides of rectangular pan, 13x9x2 inches.
- In a medium bowl, mix eggs, parmesan cheese, pepper sauce, parsley and vegetables. Set aside
- Combine dry ingredients and stir into liquid mixture.
- Stir in melted butter.
- Spread mixture evenly into the baking dish.
- Sprinkle grated cheddar cheese over top.
- Bake about 30 - 35 minutes or until golden brown.
- Cool slightly, cut into tiny 1" squares, serve warm or cold, I prefer these at room temperature.

- 1. Preheat oven to 350.
- 2. Unroll crescent dough and press seams together in the bottom of an 11 x 15 pan sprayed with cooking spray.
- 3. Bake for 12 to 15 minutes or until golden brown. Let cool.
- 4. Combine cream cheese, mayo, and ranch packet Spread on over the cooled crust. Sprinkle vegetables evenly over this mixture. Sprinkle shredded cheese over the vegetables and press down.
- 5. Chill for an hour prior to serving. Cut into squares to serve.

- 1. Unroll crescent rolls and pat into a 15-1/2 x 10-1/2 x 2 inch baking pan. Bake according to package directions. Cool.
- 2. In a small mixing bowl, stir together cream cheese, mayonnaise, dill weed, and salad dressing mix. Spread evenly over cooled crust.
- 3. Sprinkle with desired veggie toppings and shredded cheese.

CHEESE SQUARES APPETIZER
This is a wonderful baked appetizer blending the tastes of Cheddar cheese and jalapeno peppers. The amount of jalapenos used can easily be adjusted to personal taste, although baking does take a lot of the burn out of the peppers. I've made this several times and I never have leftovers. My husband wishes I would make these for him every day. I don't recommend doubling the recipe; make multiple batches instead.

- 1. Preheat oven to 375. Unroll both packages of crescent rolls and lay in the bottom of a 9 x 13 baking pan lining the bottom, squeeze it all in..you may have some left over. Bake 10-12 minutes...or until light golden brown; remove from oven.
- 2. Meanwhile combine mayonnaise, sour cream and soup mix; mix well. Drain spinach in small colander, squeezing out as much moisture as possible; add to mixture. Drain artichokes and water chestnuts..chop with knife or food chopper. Add artichokes, water chestnuts, feta cheese and garlic..mix well with all the other ingredients.
- 3. Spread spinach mixture evenly over crust. Sprinkle Parmesan cheese over entire pan. Bake 10-12 minutes or until heated through. Remove from oven; cut into squares.

ROXY'S SPINACH SQUARES
This is a great recipe that disappears fast when slightly warm. It can be gluten free or not, you decide. This recipe is light on the spinach.

Steps:
- Brown Sausage. Place butter in 13x9 pan and warm in oven to melt, take out of oven. Chop spinach until very fine and blot out water with a towel.
- Beat eggs with mixer until frothy then add milk and all other ingredients and stir until mixed.
- Pour in 13x9 with butter and bake at 350 degrees for 35 minutes or lightly browned on top. Cool slightly and cut into squares.
- Notes: I like the gluten free. I still used the baking powder. I use any left over cheese in the fridge as my sister suggested. Colby Jack is good. Also I used Jimmy Dean sausage but my sister uses a turkey sausage. Enjoy.
CREAM CHEESE VEGETABLE SQUARES
Steps:
- 1. Preheat oven to 350.
- 2. Press crescent rolls dough into a 9 X 13 baking pan; press perforations to seal.
- 3. Bake for 12 minutes or until golden brown. Let cool.
- 4. Stir together softened cream cheese, mayonnaise and salad dressing mix. Spread over crust.
- 5. Sprinkle chopped broccoli slaw evenly over top and gently press into cream cheese mixture.
- 6. Cover and chill for at least 2 hours.
- 7. Cut into squares before serving.

- Preheat oven to 375 degrees F (190 degrees C).
- Roll out crescent rolls onto a large non-stick baking sheet. Stretch and flatten to form a single rectangular shape on the baking sheet. Bake 11 to 13 minutes in the preheated oven, or until golden brown. Allow to cool.
- Place cream cheese in a medium bowl. Mix cream cheese with 1/2 of the ranch dressing mix. Adjust the amount of dressing mix to taste. Spread the mixture over the cooled crust.
