I don't peel the tomatoes because there are lots of vitamins and fiber in the skin. If you puree the soup well, you won't taste them. I use half cherry tomatoes, half regular tomatoes.

2 tablespoons extra-virgin olive oil
1 onion, chopped
4 cloves garlic, minced
4 tomatoes, chopped
3 ½ cups cherry tomatoes, halved
¾ cup vegetable broth
2 bay leaves
2 sprigs fresh basil, divided

Steps:

  • Heat olive oil in a pot over low heat and cook onion until soft and translucent. Add garlic and cook until fragrant, about 1 minute. Increase heat to medium, add all tomatoes, and cook until they start to break down, about 5 minutes. Stir occasionally. Add vegetable broth, bay leaves, and 1 sprig of basil. Bring to a boil, reduce heat, and simmer until tomatoes have broken down and soup starts to thicken, about 30 minutes.
  • Remove soup from heat and cool slightly. Remove bay leaves and basil.
  • Puree tomato soup with an immersion blender until smooth. Reheat soup before serving and garnish with basil leaves.

2 pounds Roma tomatoes, chopped
1 red bell pepper, chopped
1 large carrot, chopped
1 head garlic, cloves peeled
½ cup raw sugar
1 cup fresh basil
1 quart vegetable stock
2 tablespoons salt
1 pinch freshly cracked black pepper to taste

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium to medium-high heat. Add tomatoes, bell pepper, carrot, and garlic cloves. Cook and stir until softened, about 15 minutes. Stir in sugar.
  • Fill blender or food processor halfway with the tomato mixture. Cover and hold lid down with a potholder. Blend until smooth, adding 1/2 the basil and pouring in 1/2 the vegetable stock slowly. Transfer soup mixture to a large pot. Repeat with remaining tomato mixture, basil, and vegetable stock.
  • Bring soup to a simmer over medium heat. Continue simmering until flavors combine, about 20 minutes. Add salt, pepper, and remaining olive oil.

  • Cook orzo according to package (I recommend slightly under cooking), drain and set aside.
  • Add tomato soup to a pot with cannellini beans and cook until heated through. Add spinach and orzo and cook until spinach is wilted. Remove from heat and serve.

I couldnt be bothered roasting tomatoes etc to make covent garden roast tomato soup which is my favourite and i dont have much to play with in the fridge, turned out really well yum yum, my husband says its almost as good (but different) as the covent garden one. I posted that recipe a while back. the leftover from this would do well as a sauce for a chickpea stew. If i make one tommorow ill post the recipe for that too.

1 red onion, finley chopped

3/4 cup raw cashews
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 white onion, sliced
4 cloves garlic, smashed
3 to 4 sprigs thyme, plus leaves for topping
1 28-ounce can whole peeled San Marzano tomatoes, crushed by hand
1/2 cup sliced jarred roasted red peppers

Steps:

  • Bring the cashews, 1 cup water and a pinch each of salt and pepper to a simmer in a small saucepan over medium-low heat. Simmer until softened and about 1/4 to 1/3 cup water remains, 15 to 20 minutes.
  • Meanwhile, heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the onion and cook, stirring, until softened, 4 to 5 minutes. Add 3 cloves garlic, the thyme sprigs and a pinch each of salt and pepper; cook 30 seconds. Add the tomatoes, roasted peppers, 3 1/2 cups water, 1 teaspoon salt and a few grinds of pepper. This is a new product which you can find next to the refrigerated soy milk at your health-food store. 1 large onion, finely chopped
1 garlic clove, minced (1/2 tsp minced garlic)
1 stalk celery, finely chopped
3 vine-ripened tomatoes

2 tablespoons fresh flat-leaf parsley

Steps:

  • Heat the oil in a large suacepan over medium heat. Add the onion, garlic, and celery and cook for about 5 minutes or until they have softened.
  • Score a cross in the base of each tomato then plac in a bowl of boiling water for 1 minute.
  • Plunge them into cold water and peel the skin away from the cross.
  • Halve the tomatoes and scoop out the seeds, roughly chop the flesh.

3 teaspoons curry powder
1 teaspoon ground coriander

One 35-ounce can Italian peeled tomatoes
One 6-ounce container precut diced mirepoix
2 tablespoons olive oil
1 teaspoon red pepper flakes
1/4 teaspoon kosher salt, plus additional as needed
16 ounces vegetable broth
1 slice sourdough bread, crust removed
Ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed sheet pan with parchment paper.
  • Drain the peeled tomatoes and reserve the liquid. Place the tomatoes evenly on the lined sheet pan. Spread the mirepoix on the sheet pan with the tomatoes. Drizzle the tomatoes and mirepoix with oil, and sprinkle with red pepper flakes and salt.
  • Bake until the mirepoix is lightly browned, about 30 minutes. Allow to cool slightly.
  • Place the cooked tomato mixture in a blender using tongs, along with the vegetable broth, bread and reserved tomato juice, Blitz until smooth and transfer to a medium soup pot.
  • To serve immediately, place the pot over medium heat. Warm the soup through and season with salt and pepper to taste.
  • To freeze, divide the soup evenly among four 16-ounce mason jars. Leave at least 1 inch of space at the top of each jar to prevent cracking. Screw on lids and freeze. To serve, place jars in a saucepan filled with cold water over medium heat until warm. Or, place a frozen jar in your lunchbox and reheat in the microwave for an on-the-go lunch.
