Steps:
- In a large bowl, combine almond flour, cocoa powder, ground coffee, baking soda and salt.
- In a smaller bowl, stir together grapeseed oil, agave and vanilla.
- Stir wet ingredients into dry and then mix in chocolate drops (or chunks).
- Drop dough by heaping tablespoonfuls onto a parchment lined baking sheet.
- Bake at 350° for 7-8 minutes.
- Cool and serve.
VEGAN DOUBLE CHOCOLATE KAHLUA COOKIES
I love to bake with liqueurs and came up with this easy to make, versatile vegan cookie. These are chocolaty and delicious. I use soy creamer (SILK) hazelnut but any flavor of soy milk or creamer will do. You can switch up the flavor profile, for example, maybe use Hazelnut Liqueur with hazelnuts, Amaretto with almonds, etc... Please let me know what interesting combos you all come up with. Steps:
- Preheat oven to 350.
- In a large bowl, mix sugar and oil. Add flaxseeds, soy (creamer or milk), vanilla, almond extract, and mix well.
- In a separate bowl, sift together flour, cocoa, baking soda, and salt.
- Fold the dry ingredients into the wet a ¼ cup at a time until dough forms. Add chocolate and walnuts (optional), best to use your hands for even distribution.
- Roll dough into 1-inch balls and flatten into disks. Place the disks 1-inch apart on a lined cookie sheet.
- Bake for 10 minutes, remove from oven and let cool for about 5 minutes on the cookie sheet before transferring them to a wire rack or countertop to cool completely.

- Cream margarine, sugar, vanilla and molasses until fluffy.
- Add soy milk and combine.

These are tasty and very easy. Make sure the cake mix you are using doesn't have milk or butter products in it.

- Preheat oven to 350.
- Line a cookie sheet with parchment.
- In a mixer, stir up the cake mix to break up lumps.
- Melt margarine in the microwave.
- In a blender, place the brown sugar, melted margarine, vanilla, egg replacer and water, pulse to blend thoroughly.
- Stir into the cake mix until incorporated.
- Stir in chocolate chips and nuts.
- Drop by tablespoonfuls onto cookie sheet, and bake for 10-12 minutes. They will flatten and get a crinkly look on the top.
- Let cool for 3 minutes on cookie sheet, then transfer to a cooling rack to cool completely.

- Heat the oven to 180°C/ gas mark 4 and line a tray with a reusable baking sheet
- Put both the white and brown sugar in a bowl with the margerine and cream together with an electric whisk until light and fluffy then add the vanilla
- Sift the baking powder, cocoa powder and flour together until the margerine mixture
- Add the milk and mix by hand until combined
- Add 3/4 of your chocolate chunks and disperse evenly through the mix
- Roll into balls and flatten with your finger tips adding the remaining chocolate chunks on top
- Bake in the center of the oven for 10 minutes (note they will be very soft but firm up when you take them out of the oven)
