1 tablespoon olive oil
1 yellow onion, diced
1 clove garlic, chopped
1 tablespoon ground cumin
Two 15-ounce cans beans, rinsed and drained (I use black and kidney beans)
2 cups roasted diced butternut squash (or frozen cooked butternut squash, thawed)
1 can diced tomatoes with their juices
1/4 cup tomato paste
1 bunch kale, stems removed and leaves chopped (about 3 cups)
Kosher salt and freshly ground black pepper
Eight 8-inch whole-wheat tortillas (or corn tortillas, if gluten-free)
1 cup vegan shredded cheese or Cashew Cheese Sauce (recipe follows)
Chopped cilantro, for serving
Vegan sour cream, for serving
1/2 cup raw cashews
1 cup unsweetened almond milk
2 tablespoons nutritional yeast
1 tablespoon fresh lemon juice
1 clove garlic
1 1/2 teaspoons smoked paprika
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the olive oil in a large skillet over medium heat. Add the onions, garlic, and cumin and cook, stirring occasionally, until the onions are softened, 3 to 4 minutes. Add the beans, squash, tomatoes and their juices, tomato paste and kale; season with salt and pepper. Cook, stirring occasionally, until the kale is wilted, 3 to 5 minutes. Set the vegetable filling aside.
  • In a 9-by-13-inch baking dish, layer 2 of the tortillas, 1/4 of the vegetable filling and 1/4 cup of the vegan cheese or cashew cheese sauce. Repeat the layers 3 times, ending with the cheese or cheese sauce.
  • Bake uncovered until the cheese is bubbly and the casserole is hot all the way through, about 20 minutes. Serve with cilantro and vegan sour cream.
  • Soak the cashews in a bowl with cold water for 8 to 12 hours. (Alternatively, "flash soak" them in a heatproof bowl with boiling water for 10 minutes.) Drain then transfer to a food processor or high-powered blender. Add the remaining ingredients and blend until smooth.

1 1/4 pounds green beans, trimmed and cut into 2-inch pieces
3 tablespoons olive oil
8 ounces cremini mushrooms, thinly sliced
Freshly ground black pepper
1 medium onion, finely diced
2 cloves garlic, minced
1 tablespoon fresh thyme leaves
3/4 cup low-sodium vegetable broth
3 tablespoons all-purpose flour
1 cup unsweetened, unflavored almond milk
1/3 cup dairy-free sour cream
1 teaspoon soy sauce
2 cups crispy fried onions

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a large pot of salted water to a boil and fill a large bowl with ice water.
  • Add the green beans to the boiling water and cook until crisp-tender and bright green, 4 to 5 minutes. Drain well and transfer to the ice water to cool completely. Drain again and transfer to a paper towel-lined baking sheet; pat dry.
  • Meanwhile, heat the olive oil in a large oven-proof skillet over medium-high heat. Add the mushrooms, a pinch of salt and several grinds of pepper and cook, stirring occasionally, until almost all the excess moisture has cooked off and the mushrooms start to turn golden brown, about 6 minutes. Add the onion, garlic and thyme, then continue to cook, stirring, until tender, about 2 minutes.
  • Pour 1/4 cup of the vegetable broth into the skillet. Cook, using a wooden spoon to scrape up any browned bits from the bottom of the pan. Simmer until broth is reduced by half, about 1 minute. Stir in the flour and cook, stirring, until completely absorbed, then add the remaining 1/2 cup vegetable broth, almond milk, 1/2 teaspoon salt and several grinds of pepper. Cook, stirring, until thickened and saucy, 3 to 4 minutes. Stir in the vegan sour cream and soy sauce until smooth. Taste and adjust the seasoning with salt and pepper.
  • Stir the blanched green beans into the sauce, tossing until evenly coated, then spread into an even layer. Top evenly with the fried onions.
  • Bake until golden brown and bubbling at the edges, about 15 minutes. Let sit 5 minutes before serving.

8 medium russet potatoes, peeled and cubed
1 splash olive oil
½ cup vegan butter (such as Earth Balance®)
¼ teaspoon ground black pepper
salt to taste
1 (15.25 ounce) can whole kernel corn, drained
1 (14.5 ounce) can green beans, drained
½ medium onion, minced
2 cloves garlic, minced
1 tablespoon vegan butter (such as Earth Balance®)
4 cups water
2 packets vegetable bouillon
½ tablespoon vegetable base (such as Better than Bouillon®)
2 tablespoons cornstarch
1 tablespoon all-purpose flour
2 ¼ cups French-fried onions

Steps:

  • Place potatoes and olive oil in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 12 minutes. Drain and set aside to cool for 2 minutes.
  • Transfer potatoes to a large bowl. Add 1/2 cup vegan butter, pepper, and salt and mash with a fork until combined and potatoes are smooth.
  • Combine corn, green beans, onion, garlic, and 1 tablespoon vegan butter in a microwave-safe bowl. Microwave for 30 seconds. Add to the potatoes; stir until thoroughly mixed and set aside.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine water, vegetable bouillon, and vegetable base in a small saucepan over medium heat. Once bouillon is dissolved, stir in cornstarch and flour until thoroughly mixed and boiling. Let mixture boil for 3 minutes until thick like gravy, them remove from the heat.
  • Grease two baking pans. Spread 1/2 of the potato-veggie mixture into one pan and pour 1/2 of the gravy over top. Sprinkle with 1/2 of the French-fried onions and cover the pan with foil. Repeat with remaining ingredients in the second pan.
  • Bake in the preheated oven for 30 minutes. Remove from the oven and allow to cool for 5 minutes before serving.

1 medium onion, chopped
2 stalks celery, chopped
10 ounces baby portabella mushrooms, sliced
4 tablespoons vegan margarine
1 teaspoon soy sauce
1/4 cup flour
2 cups vegetable broth
1 1/2 cups plain soymilk
2 teaspoons lemon juice
1 cup canned chick-peas, drained and mashed
1/2 cup plain potato chips, crushed
1/2 cup French-fried onions
8 ounces fusilli

Steps:

  • Preheat oven to 350 Degrees F and prepare an 8x8" glass baking dish with a quick spray of cooking oil.
  • Heat 1 tablespoon vegan margarine in a pan. Add onion, celery and mushrooms and saute for a few minutes. When mushrooms give off liquid, add soy sauce. Keep cooking until all vegetables are tender, turn off heat.
  • In a medium soup pot, melt the remaining 3 tablespoon vegan margarine over low heat. Stir in the flour and whisk for a few minutes. It will get thick. Start adding the broth bit by bit, whisking all the while and bring to a boil. Add the soymilk little by little and continue to stir and simmer. Add the mushroom/celery/onion mixture and lemon juice. Season with salt, pepper and some paprika. Add the mashed chickpeas a spoonful at a time to break it up evenly throughout the sauce.
  • Cook pasta until al dente, approximately 9 minutes. Drain and return it to the pot. Add the mushroom sauce to the pasta and stir gently to combine. Transfer the mixture to the baking dish. Cover tightly with foil and bake for 15 minutes. Uncover the dish and sprinkle crushed chips and french fried onions on top and bake for another 5-6 minutes or so or until the top is browned and crispy.

1 cup soymilk
28 ounces French-fried onions, divided
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups onions, finely diced
2 teaspoons canola oil
2 tablespoons garlic, minced
8 cups vegetable stock
2/3 cup tamari
2 teaspoons rubbed sage
1 teaspoon dried thyme
2 teaspoons salt

Steps:

  • Grease casserole then combine half of the french fried onions with all of the ingredients and stir well.
  • Bake at 350F for 15-20 minutes or until bubbly.
  • Sprinkle the remaining french fried onions over the top of the casserole and bake an additional 5 minutes or until onions are crisp and golden brown.
  • Creamy Onion Gravy:.
  • Saute onions in canola oil until lightly browned, about 5 minutes.
  • Add garlic and saute an additional 2 minutes.
  • Add 5 Cups of the vegetable stock, tamari, sage, thyme, salt, and pepper, and simmer for 7 minutes or until onions are tender.
  • In a bowl, whisk together remaining 3 Cups vegetable stock and the browned flour.
  • Remove saucepan with simmering broth from the heat.
  • Quickly whisk flour mixture into the broth to avoid lumps. [And if you have lumps that is why they invented Gravy strainers or pop it into the blender and pulse once].
  • Return to heat, whisking constantly, and cook until thickened.
  • Whisk in parsley. Taste and add more salt and pepper if needed.
  • Yield: 6 1/2 cups.

The classic Thanksgiving side dish becomes instantly more flavorful with the use of fresh green beans, shallots and mushrooms. This recipe is also vegan, owing to a quick, creamy sauce made with non-dairy milk and thickened with flour. You can save yourself the trouble of deep-frying onions by using store-bought French fried onions. They're usually vegan, but be sure to double check the ingredient label to be sure.

Olive oil, for greasing the baking dish
1 tablespoon plus 2 teaspoons kosher salt
1 1/2 pounds green beans, trimmed
2 tablespoons vegan butter
1 pound sliced white button or baby bella mushrooms
2 small or 1 large shallot, chopped
2 garlic cloves, minced
2 tablespoons unbleached, all-purpose flour
2 cups unsweetened soy, oat or almond milk
Black pepper, to taste
1 1/2 cups store-bought fried onions

Steps:

  • Heat the oven to 350 degrees and oil a 3-quart baking dish.
  • Fill a large pot with water. Add 1 tablespoon salt to the water and bring to a boil. Add the green beans and boil for 4 minutes (or 3 minutes if you are using French beans). Drain the green beans and rinse them under cold running water. Give them a shake to remove excess water, then cut them into 2-inch pieces. Transfer the cut green beans to the baking dish.
  • Heat the butter in a 12-inch skillet over medium heat. Add the mushrooms and shallots. Cook for 5 minutes, or until the mushrooms have released their juices and are reduced in size. Stir frequently to prevent the shallots from burning. Add the garlic and cook the mushrooms for another 3 minutes, stirring as you go.
  • Place the flour in a small bowl and add 1/4 cup of the non-dairy milk. Whisk together to create a slurry.
  • Pour the remaining 1 3/4 cups non-dairy milk into the skillet with the mushrooms. Stir in the slurry, 2 teaspoons kosher salt and the black pepper. Bring the liquid to a simmer and reduce the heat to low. Cook, stirring occasionally, for 4 to 5 minutes, or until the sauce has thickened enough to coat the back of a spoon.
  • Pour the mushroom sauce over the green beans and give it a gentle stir to coat. Top with the fried onions. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, or until the onions turn a deep golden brown and the sauce is bubbling. Allow the casserole to cool for 15 minutes before serving.

1 large bell pepper, diced
1 large onion, diced
2 medium tomatoes, diced
2 cups salsa
1/2 bunch fresh cilantro, chopped finely (more or less to taste)
1 bunch fresh chives, chopped
2 garlic cloves, minced
1 teaspoon cumin
4 1/2 ounces black olives, sliced
10 corn tortillas
1 (15 1/4 ounce) can corn, drained
3 (16 ounce) cans refried beans
1 (16 ounce) can black beans, rinsed and drained (can use ranchero or other bean if desired)
1 (15 ounce) can enchilada sauce (optional)
1 teaspoon chili powder (optional)
1/2 jalapeno pepper (finely chopped) (optional)

Steps:

  • Preheat oven to 375°F.
  • In a non-stick pan with a little water (1 tbsp.), sauté the pepper, garlic, and onion for about 5-10 minutes, or until softened (not too long, the onions are SO good crunchy).
  • Place mix in a medium bowl and add diced tomatoes, cilantro (alternately, the cilantro can be sprinkled in as two layers, if easier) and chives. Mix well and set aside.
  • Spray a 9 X 13-inch baking pan with non-stick spray. Line the bottom with a layer of tortillas (cut some of them to fit, if desired). Cover most of the bottom of the pan. For reference: I use four tortillas on the bottom, three for the next layer and three for the final layer.
  • Place 1 ½ cans of the refried beans in a small bowl, stir, and spread evenly over the tortillas.
  • Cover the refried beans with half of the pepper-onion-tomato mixture.
  • Sprinkle entire dish lightly with 1/2 tsp cumin.
  • Cover with half the can of corn.
  • Cover with half the can of beans.
  • Cover with 1/2 THE SALSA, add another layer of tortillas and REPEAT above layers (steps 5-9).
  • Cover with a final layer of tortillas.
  • Sprinkle with black olives.
  • Top with the remaining 1 cup salsa.
  • Bake for about 30 minutes or until hot throughout. If allowed to cool for about 10 minutes, it will be easier to cut.

I took a simple cabbage recipe that I found on a vegan website and spruced it up to add more "substance". This takes less than 20 minutes to throw together, so on busy nights I love to prepare this - it's very warm & cheesy and so it's the perfect comfort food. Plus, it's almost a 1-dish meal, though I like mine with a small baked potato & some corn on the cob on the side. I don't think any vegan cheeses come close to "Follow Your Heart" because it's so tasty and melts very well - any other substitutions I've used have not been as successful.

3 cups cabbage
8 ounces fire roasted diced tomatoes
1 tablespoon nutritional yeast
3 tablespoons Braggs amino acids
4 ounces ground vegan sausage

1 organic carrot, shaved

Steps:

  • Chop ½ of a head of cabbage up into thin strips and place (uncooked) in the bottom of a lightly greased casserole dish.
  • Sautee mushrooms, garlic, cayenne pepper, oregano & sausage in the Braggs amino acids on medium-high heat until the mushrooms start to soften. Layer on top of the cabbage.
  • Layer ½ cup nacho cheese on top of the mushrooms/sausage mixture.
  • In same pan, add canola oil and the onion. Add salt to taste. Cook until onions are translucent. Add it on top of the cheese layer.
  • Mix the nutritional yeast with the rice, and then layer the rice on top of the onions.
  • On top of the rice, layer the entire shaved carrot.
  • On the carrot, layer the fire roasted tomatoes.
  • Add the bread crumbs on top of the tomatoes.
  • Add the rest of the nacho cheese, spread evenly, on top of the bread crumbs. Sprinkle with salt & pepper.
  • Cook at 350 for 55 minutes; then broil for 5 minutes.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a casserole dish with nonstick cooking spray.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 20 minutes. Drain and return to the pot. This is a Mexican casserole recipe from my mother that I translated to vegan. I love this recipe and so does my non-vegan wife. (I add real cheese to her portion and top it with real sour cream.) It is easy to change and transform to make it your own. Enjoy!

1 tablespoon vegetable oil
½ yellow onion, diced
3 cloves garlic, diced
18 ounces soy chorizo
1 (15 ounce) can black beans
1 (15 ounce) can tomato sauce
3 tomatoes, diced
1 (4 ounce) can diced jalapeno peppers
1 (4 ounce) can diced green chilies
1 package chicken taco seasoning mix
½ bunch cilantro
4 (8-inch) wheat soft taco shells
1 (8 ounce) package vegan Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine onion and garlic in a skillet over medium-high heat. Saute until fragrant, about 1 minute. Add chorizo, black beans, tomato sauce, diced tomatoes, jalapeno peppers, and green chiles. Cook until bubbling, 5 to 7 minutes. Stir in taco seasoning and cilantro and remove from heat.
  • Spread 1 cup of the chorizo mixture on the bottom of a 9x13-inch baking pan. Add 2 tortillas to cover. Add half the remaining chorizo mixture and top with vegan Cheddar cheese. Add remaining tortilla shells and remaining chorizo mixture.
  • Bake in the preheated oven until bubbling hot, about 30 minutes.

1 tablespoon olive oil
2 zucchini, quartered lengthwise and sliced
1 medium red onion, chopped
1 orange bell pepper, chopped
1 pound fresh green beans, cut into 1-inch pieces
4 links vegan sausage, sliced
2 cloves garlic, chopped
1 (19 ounce) can cannellini beans, drained and rinsed
1 (14 ounce) jar vegan marinara sauce
¼ cup chopped fresh basil
3 tablespoons spicy Dijon mustard (such as French's®)

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat oil in a large skillet over medium-high heat. Add zucchini, onion, and bell pepper and saute until crisp-tender, about 5 minutes. Add green beans, sausage, and garlic and saute for another 3 to 4 minutes. Stir in cannellini beans, marinara sauce, basil, and mustard; bring to a boil. Spoon into a shallow 2-quart baking dish.
  • Bake in the preheated oven until vegetables are tender and casserole is heated through, about 20 minutes. Serve warm.

1 water-packed block of firm or extra firm tofu, crumbled
1/4 cup of nutritional yeast
1 tsp of crushed garlic or 2-3 cloves crushed
1 tsp of salt
1-2 tsp hot sauce of your choice
2 big bunches of spinach, steamed and chopped
1 can of black beans rinsed and drained
1 cup of corn (fresh, frozen or canned)
1 red bell pepper diced
1/2 cup of diced green chiles (canned or roast, peel and dice fresh chiles)
1/4 cup of chopped cilantro
1 medium onion diced
1 tbsp olive oil
1 tsp of cumin
1 32 oz. can of red enchilada sauce
12-16 corn tortillas (depending on size)

Steps:

  • All measurements are approximate. If you prefer one veggie over another, feel free to increase/decrease the amounts used. Preheat your oven to 375 F Into a large bowl, add the crumbled tofu, nutritional yeast, garlic, salt and hot sauce. Mix well. Then add the chopped spinach, black beans, corn, red bell pepper,diced green chiles and cilantro to the tofu mixture. Saute the diced onion and cumin in olive oil over medium heat until translucent. Add the onion to the bowl of ingredients and mix well. Oil or spray a large baking dish. Spread about 1/2 cup of enchilada sauce in the bottom of the dish. Line the bottom of the dish with corn tortillas, slightly overlapping as you go. Spread the tofu and veggie mixture evenly over the tortillas and then cover the mixture with another layer of corn tortiallas. Pour the remaining enchilada sauce over the top. Garnish with sliced black olives if you'd like. Bake uncovered for 20-25 minutes. Serve with a nice green salad.

4 teaspoons cornstarch
1 cup white wine
5 ounces button mushrooms
½ sweet onion, chopped
5 cloves garlic
2 teaspoons thyme

¼ cup tomato paste
¼ cup lemon juice
16 cups cooked green beans
5 ⅓ cups French-fried onions (such as French's®), divided
4 teaspoons soy sauce
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place mushrooms in a blender or food processor; pulse until pureed.
  • Blend vegetable broth, cashews, and cornstarch together in a blender until cream is smooth.
  • Stir white wine, mushrooms, onion, garlic, thyme, and salt together in a large pot over medium heat until mushrooms are softened, about 3 minutes.
  • Pour cream into soup; cook and stir until the soup thickens, about 7 minutes. Stir in tomato paste and lemon juice.
  • Transfer the soup to a casserole dish; mix green beans, 1 1/3 cup of the fried onions, soy sauce, and pepper into the soup until combined.

1 medium onion, thinly sliced
2 medium tomatoes, thinly sliced
1 cup sliced fresh mushrooms
½ cup canned lentils, drained and rinsed
1 teaspoon garlic powder, or more to taste
½ cup shredded vegan Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a loaf pan with cooking spray.
  • Layer 1/2 of the zucchini in the bottom of the prepared pan, followed by 1/2 of the onion, 1/2 of the tomatoes, and all of the mushrooms. Sprinkle garlic powder over top, followed by 1/2 of the vegan cheese. Add remaining onions in a layer and spread all lentils over top. Finish layers with remaining zucchini, tomatoes, and cheese.

1 cup vegetable broth
1 1/2 cups water
1 1/2 tablespoons Braggs liquid aminos
1/2 teaspoon garlic powder

1/4 teaspoon paprika
12 ounces tomato sauce
4 cups cooked pasta

Steps:

  • Lightly toast flour and nutritional yeast flakes in a saucepan over low heat. Gradually add vegetable broth until sauce becomes thick. Slowly add water and stir until sauce becomes smooth and slightly thick. Add remaining ingredients with the exception of the pasta. Stir well. Put cooked pasta in casserole dish and stir in sauce. 2 lbs butternut squash, cut into 1-inch pieces

Steps:

  • Preheat oven to 350. Lightly oil 9" x 13" baking dish.
  • Heat oil in medium pot/large skillet over medium heat. Add onions and cook until softened, 5-7 minutes.
  • Add squash, coconut milk, salt & pepper and bring to a boil. Cover and reduce heat to medium low for 20 minutes. In separate pot, cook macaroni al dente (~5 minutes).
  • Add in sage to butternut squash mixture and cook 1 more minute. Mash some, but not all, of the squash pieces.
  • Combine squash mixture, macaroni, and walnuts.

1 cup vegetable broth
2 tablespoons soy sauce
1 teaspoon liquid smoke
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
1 1/4 cups water
1 cup plain unsweetened soymilk
3/4 cup nutritional yeast
3 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon stone ground mustard
1/2 teaspoon spanish paprika
1 pinch cayenne
2 tablespoons tahini
2 teaspoons white miso
1 teaspoon fresh tarragon, snipped (optional)
1 1/2 lbs yukon gold potatoes
black pepper, to taste
1 teaspoon vegan parmesan cheese (optional)

Steps:

  • Slice the tempeh about 1/4-inch thick. In a flat, microwavable baking dish arrange the tempeh slices in a single layer. Mix the remaining ingredients and pour over the tempeh.
  • In the microwave, cook on high power for 3 minutes. Turn or rearrange any pieces that were not covered by broth and microwave on high for 2 minutes. Then cook at 50% power for 3 more minutes. Allow the tempeh to stay in the broth until you're ready to assemble the casserole.
  • Make the sauce by putting all the sauce ingredients except the tarragon into a blender and blending until completely pureed. Stir in the tarragon just before using the sauce.
  • Preheat the oven to 400°F Oil a large, 3-quart casserole (or use two smaller casseroles). Wash the potatoes and cut them in half lengthwise. Slice each half into 1/4-inch slices.
  • Put half of the potato slices in the bottom of the casserole dish. Lift the tempeh out of its marinade and arrange it on top. Put the remaining potatoes over the tempeh. Stir the sauce and pour it over the potatoes. Sprinkle with freshly ground black pepper and cover tightly.
  • Bake for 45 minutes. Remove the cover, sprinkle with vegan Parmesan, and bake for 10-15 more minutes, until potatoes are tender and sauce has thickened. Remove from the oven and let stand a few minutes before serving.
