This is my famous butternut squash soup recipe and it just so happens to be a perfectly vegan main dish! There are lots of warm spices and because the veggies are all cooked slowly until soft, when blended it becomes so creamy, without any cream added! Please enjoy!

2 tablespoons olive oil
2 large onions, chopped
4 cloves garlic
1 (2 inch) piece ginger, minced
1 ½ teaspoons salt, divided
½ teaspoon allspice
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon
¼ teaspoon paprika
¼ teaspoon ground cloves
¼ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon red pepper flakes
1 butternut squash, peeled and chopped
1 yam, peeled and chopped
2 carrots, peeled and chopped
2 stalks celery, chopped
1 quart water, or as needed
2 tablespoons maple syrup
1 tablespoon apple cider vinegar

Steps:

  • Heat olive oil in a large saucepan over medium heat. Add onions, garlic, and ginger. Cook and stir until browned, about 5 minutes. Stir in 1/2 teaspoon salt, allspice, nutmeg, cinnamon, cumin, cloves, coriander, paprika, and chile flakes. Add butternut squash, yam, carrots, and celery. Add enough water to just cover.
  • Increase heat and bring soup to a boil. Reduce heat and simmer until all vegetables are fork-tender, 30 to 45 minutes.
  • Fill a blender halfway with soup. Cover and hold lid down with a potholder; pulse a few times before leaving on to blend. Pour back into the saucepan. Repeat with remaining soup. Add maple syrup, apple cider vinegar, and remaining 1 teaspoon salt.

1 tablespoon vegetable oil
1 small onion, chopped
1 (1 1/2 inch) piece fresh ginger root, minced
1 butternut squash - peeled, seeded, and cut into 1/2-inch cubes
1 carrot, chopped

4 cups vegetable broth
1 (14 ounce) can coconut milk
salt and freshly ground pepper to taste
1 small lemon, juiced
1 teaspoon maple syrup, or to taste

Steps:

  • Heat oil in a large pot over low heat and cook onion and ginger until soft and translucent without browning onion, about 10 minutes. Add butternut squash and carrot; cook and stir, about 3 minutes. Add apple and cook for 2 minutes. Pour in broth, increase heat to medium, and bring to a boil. Reduce heat to low and simmer until vegetables are soft, about 20 minutes. Puree soup with an immersion blender until smooth.

3 cloves garlic
2 tablespoons olive oil, plus more for brushing
1 sweet onion, chopped
3 cups peeled and cubed butternut squash
3 cups vegetable broth
salt and ground black pepper to taste
1 cup unsweetened vanilla-flavored almond milk, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cut off the top 1/4-inch of the garlic cloves and brush the cut cloves with a small amount of olive oil. Wrap in aluminum foil.
  • Bake in the preheated oven until cloves are tender and browned, about 45 minutes. Let cool until safe to handle, about 5 minutes; chop.
  • Heat olive oil in a 5-quart pot over medium-high heat. Add garlic and onion; saute until onion is translucent, about 5 minutes. Add butternut squash and broth. Season with salt and pepper. 1 medium onion, chopped
1 medium tart apple, peeled and coarsely chopped

  • Preheat oven to 400°. Cut squash in half lengthwise; discard seeds. Place squash, cut side down, in a greased 15x10x1-in. baking pan. Bake, uncovered, until tender, 45-60 minutes. Cool slightly. Scoop out flesh; set aside., In a Dutch oven, cook onion and apple in oil until tender. Add garlic; cook 1 minute longer. Stir in seasonings; cook until fragrant, about 10 seconds.   • Preheat the oven to 400 degrees F (200 degrees C). Coat a baking sheet with olive oil.

1 butternut squash, cubed
cooking spray
3 stalks celery, chopped
2 garlic cloves, minced
1 large potato, peeled and cubed
1 medium carrot, chopped
1/2 yellow onion, chopped
4 cups water, separated into 2-cup portions
3 teaspoons marjoram
2 bay leaves
1 teaspoon sage
salt & pepper, to taste (I like 1 1/2 teaspoons salt & 1 teaspoon pepper)
2 cups soymilk

Steps:

  • Preheat oven to 375°F Spray a baking sheet with oil and spread squash onto sheet. Spray squash lightly, covering the surface of them. Roast for 20-30 minutes, until tender.
  • Place celery, garlic, potato, carrot and onion in a large pot with 2 cups water, marjoram, bay leaves, sage, and salt & pepper. Bring water to a boil then simmer for 30 minutes.
  • Remove bay leaves and add 2 cups water, soy milk, and squash to pot. Using an immersion blender puree soup. It doesn't need to be completely smooth, but try to avoid leaving large chunks of vegetables.
  • (If you don't have an immersion blender put the vegetables into a food processor with the 2 cups of water and blend until smooth. Return to pot and add milk.).
  • Heat soup until warm.

4 cups Midwest-grown Butternut Squash, cubed
1.5 cups Fresh Carrots, cubed
1 tsp Fresh Ginger (optional)
1/2 cup Almond Butter
4 Cloves Garlic
1 medium White or Red Onion
1 tbsp Extra Virgin Olive Oil
1/4 tsp Nutmeg
1/2 tsp Ground Cumin
1/4 tsp Crushed Red Pepper
2 Vegan Bouillon Cubes
4 cups Water
Salt to taste
1 Medium Midwest-grown Jonathan or Honeycrisp Apple, for Garnish
Fresh Dill, for garnish

Steps:

  • In a medium-sized pot, boil water and dissolve bouillon cubes. Turn down to simmer. In another large pan, heat oil on medium heat, add and sauté onions until browned. Add fresh ginger (optional), garlic and crushed red pepper and sauté for another minute. Pour bouillon broth mixture over browned onion mixture, and bring the mixture to a boil. Add butternut squash and carrots and turn heat to medium-low. Simmer for 3-4 minutes, then add almond butter and stir well. Stir in cumin and nutmeg. Cover and simmer another 3-4 minutes or until carrots and squash are tender. Turn heat off. Using an immersion blender, stir mixture until it is creamy. Garnish with thin planed slices of sweet/sour apple Voila!

This was one of the recipes I made in the Vegetarian Cooking class I attended at Johnson & Wales University Culinary School. This soup was particularly delicious because you could REALLY taste the sweet, earthy goodness of the squash, because it was not masked over by heaps of butter or cream. This class was also the first time I had used an immersion blender (industrial stength, of course!). This mechanical wonder pureed our gigantic pot of soup into pure, velvety smoothness in minutes. At home, I will probably use my plain ol' blender, and work in batches. Since I did get this recipe from the chefs at the Culinary School, please note the "precise"ness of the directions regarding the size of the dice etc. I am sure at home, we are all not that precise, but for one day, it was fun to cook with the pros!

3 quarts vegetable stock
4 lbs butternut squash
2 cups carrots, diced 1/2 inch dice
2 cups celery, diced 1/2 inch dice
1 cup onion, diced 1/2 inch dice
1/2 cup dry sherry
2 tablespoons olive oil
2 teaspoons salt
1 bay leaf
1 pinch white pepper
1/2 teaspoon nutmeg, freshly ground
2 teaspoons parsley, finely chopped
1/4 teaspoon paprika

Steps:

  • Cute butternut squash in half lenghtwise and remove seeds.
  • Place squash cutside down on a parchment lined sheet pan and roast in a 350 degree oven for 30-40 minutes or until squash is soft to the touch, and the skin begins to pull away from the flesh.
  • Remove from oven and let cool.
  • Spoon roasted squash out of the skin and pass it through a ricer or food mill to remove any of the stringy fibers.
  • Heat olive oil in a large stockpot and sute/swet the carrots, celery and onions, until the onions and carrots just start to caramelize.
  • Deglaze the pot with sherry.
  • Add the vegetable stock, salt, pepper, nutmeg and bay leaf and bring to a boil.
  • Add the squash, reduce to a simmer and cook for 45 minutes.
  • Remove the by leaf, and puree the soup in the pot with an immersion blender until it reaches a smooth creamy consistency.
  • Taste, and add salt and pepper if needed.
  • Garnish with chopped parsley and paprika and serve.
