1 cup uncooked barley
1 (14.5 ounce) can canned diced tomatoes
2 carrots, chopped
2 stalks celery, chopped
1 zucchini, chopped
1 onion, chopped
1 cup frozen corn kernels
2 bay leaves
1 teaspoon salt
1 teaspoon white sugar
½ teaspoon ground black pepper
½ teaspoon garlic powder

Steps:

  • Combine vegetable broth, barley, tomatoes, carrots, celery, zucchini, onion, corn, bay leaves, salt, sugar, pepper, and garlic powder in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

VEGAN "CREAM" OF BROCCOLI SOUP WITH BARLEY

This vegan vegetable soup is a cream of broccoli with barley. Tastes great served with bagel chips. Place 3 or 4 bagel chips at the base of the bowl and pour the soup over top.

5 cups water
4 cups chopped broccoli florets, divided
1 celery heart, chopped
1 onion, cut into large chunks
1 cup chopped carrot
1 teaspoon chopped garlic
1 teaspoon dried rosemary
½ teaspoon dried thyme
2 cups quick-cooking barley
1 (14 ounce) can light coconut milk
sea salt and ground black pepper to taste

Steps:

  • Combine water, 3 cups broccoli, celery, onion, carrot, garlic, rosemary, and thyme in a large pot over medium heat. Cook until vegetables are tender, 20 to 30 minutes. Add remaining 1 cup broccoli and continue cooking until just tender, about 5 minutes more. Remove soup from heat.
  • Puree soup using an immersion blender. Return pot to medium heat. Add barley and coconut milk. Cook until barley is tender but still firm to the bite, about 10 minutes more. Season with salt and pepper.

1 onion, chopped
2 tablespoons cooking oil
1/2 cup mixed mushrooms, chopped
1 cup carrot, chopped
2 cups zucchini, chopped
1 cup green beans, chopped
1 cup celery, chopped
1 garlic clove, minced
14 ounces kidney beans, canned
14 ounces diced tomatoes, canned
4 cups vegetable broth
1/2 cup barley, uncooked
1 tablespoon salt
1/2 teaspoon oregano
1/2 teaspoon basil

Steps:

  • Heat cooking oil in a large soup pot over medium high heat. Cook onion until translucent.
  • Add all remaining fresh and canned vegetables.
  • Pour broth over all and bring to a boil.
  • Add the barley and spices to the boiling soup.
  • Lower heat and simmer for 60 minutes.
  • Add water as needed if the soup becomes too thick.

2 tablespoons vegetable oil
1 large onion, peeled and thinly sliced
2 leeks, finely chopped (use both white and green parts)
1 bird chiles, chopped or 1/4 teaspoon cayenne
2 garlic cloves, cushed and peeled
1/2 cup dried garbanzo beans
12 cups vegetable stock or 12 cups water
1 cup barley
1/2 cup dry green lentils, picked over
3 teaspoons salt
1 teaspoon ground black pepper
2 large tomatoes, peeled and chopped
1/2 teaspoon ground turmeric
2 cups fresh swiss chard, chopped
1/2 cup fresh dill, chopped
1/2 cup fresh parsley, chopped
1/2 cup fresh cilantro, chopped
1/2 cup tahini
2 tablespoons fresh lime juice
1/2 teaspoon fresh ground black pepper
2 tablespoons fresh parsley, chopped

Steps:

  • Heat the oil in a large pot over medium heat. Add the onion, leeks, chili and garlic and stri fry for 10 minutes.
  • Add the chickpeas and vegetable stock, and bring to a boil. Reduce the heat to medium-low, partially cover and simmer for 40 minutes.
  • Add the barley, lentils, salt and pepper and bring back to a boil. Reduce heat to simmer, partially cover and cook for 30 minutes until barley and lentils are tender, stirring occasionally.
  • Add the tomatoes and herbs, cover and simmer over low heat for 40 more minutes longer.
  • Add the tahini and lime juice.
  • Using a hand held mixer, plunge it into the pot and puree some of the ingredients.
  • If the soup is too thick, add some warm water and bring back to a boil. Adjust seasonings to taste, adding salt, pepper or lime juice as needed.
  • Just before serving, pour the sooup into a tureen or individual serving bowls. Garnish with black pepper and parsley or a sprig of your favorite herb.

6 tablespoons fine barley, uncooked
6 cups vegan vegetable stock
8 garlic cloves, crushed
1 large onion, sliced
1 large carrot, scrubbed and sliced into rounds
1 medium parsnip, scraped and cut into rounds
1 large yellow potato, chopped
1 (32 ounce) can of organic tomatoes with juice (crushed or diced)
fresh ground pepper, to taste
1 head mustard greens (or cress, whatever) or 1 head kale, roughly chopped (or cress, whatever)
4 tablespoons Braggs liquid aminos

Steps:

  • Rinse barley breifly in a fine mesh strainer and throw the barley in a pot. Cover it with 3 to 4 cups of water and boil.
  • Meanwhile, wash and cut veggies.
  • When barley has finished, drain it in the mesh strainer, but do not rinse it.
  • Add veggies to the pot along with vegetable stock and garlic. Boil until veggies are begining to get tender (30 - 40 minutes).
  • Add tomatoes, barley, ground pepper and greens and bring to a boil.
  • When greens have wilted, removed from heat. Just before eating, stir in Bragg's liquid aminos.

this soup is awesome, its in kiddies section of nigella feast, starchy sweetly comforting and give you a big hug. It makes you feel better when your ill and can be made into other things with leftovers, the only change I have made from nigellas recipe is to use veg stock. Now this soup my way is vegan and very good for you however it can be transformed into naughty meaty very easily. EG: add chopped extra crispy bacon on top or stirred in = gorgous and filling tea. Leave it thick add some rosemary and serve as a side to roast lamb. My husband put bacon on his tonight. the leftovers will tommorow provide a base for a chicken stew for the husband, add some wine/ lemon juice chicken etc. ill post recipe for that tommorow after ive made it. its all about being economical at the mo with credit crunch. i should know im a debt counsellor for a national charity- did i mention this recipe is actually very cheap? oh yeah i dont add parsley cos my husband doesnt like it oh and i season mine with plenty of pepper

250 g dried butter beans
125 g barley
250 g parsnips (1-2 whole parsnips)
250 g carrots (2-3 whole carrots)
1 large onion (roughly chopped)
1 bunch parsley
500 g potatoes (peeled)
2 1/4 liters vegetable stock
1 tablespoon caster sugar

Steps:

  • soak beans and barley overnight. skin the beans by poppin them out of their shell- nigella finds it relaxing doing this- suprisingly it is.
  • chop and process all of the peeled fresh veg or chop finley by hand inclduing parsley. add stock to large sauce pan, add the veg and beans and barley. add potaoes in small dice.
  • stir in sugar bring to boil, turn down heat and and simmer for 2 hours adding more stock or water if it gets too thick. season to taste.

1 cup pearled barley ($0.89)
1/2 tsp dried basil ($0.05)
1/2 tsp dried oregano ($0.05)
freshly cracked pepper ($0.05)
6 cups vegetable broth ($0.78)
1 russet potato (about 3/4 lb.) ($1.22)
1 cup frozen green beans ($0.271)
1/2 cup frozen corn ($0.10)
1/2 cup frozen peas ($0.19)
1 Tbsp lemon juice ($0.03)
1 handful fresh parsley (optional garnish) ($0.20)

Steps:

  • Dice the onion and mince the garlic. Add the onion, garlic, and olive oil to a large soup pot and sauté over medium heat for about 5 minutes, or until the onion is soft and translucent.
  • Meanwhile, peel and dice the carrots. Once the onions are soft, add the carrots to the soup pot, along with the canned diced tomatoes (with juices), barley, basil, oregano, some freshly cracked pepper, and vegetable broth.
  • Stir the contents of the pot to combine, place a lid on top, turn the heat up to medium-high, and bring the broth up to a boil. Once boiling, turn the heat down to medium-low, and let the soup simmer, with the lid in place, stirring occasionally, for 30 minutes.
  • While the soup simmers, peel and dice the potato into 1/2-inch cubes. After the soup has simmered and the barley is mostly tender, add the diced potatoes and continue to simmer for 10 minutes more, or just until the potatoes are tender.
  • Once the potatoes are tender, add the frozen green beans, corn, and peas. Stir to combine, and heat through (about 5 minutes in the simmering soup).
  • Finally, add the lemon juice to the soup and stir to combine. Taste the soup and adjust the salt or pepper to your liking. Serve hot, with fresh chopped parsley on top as a garnish, if desired.
