5 vanilla beans
2 cups vodka

Steps:

  • Split the vanilla pods lengthwise down the center to expose the seeds, keeping the ends of the beans intact.
  • Place the beans with the vodka in a large jar with an airtight seal.
  • Store in a dark, dry place for at least 4 weeks, shaking the jar several times each week.
  • When ready, transfer the extract and the beans to a bottle.
  • As you use the extract, top off with more vodka to replenish your supply. The beans will continue to impart flavor for many months.

This is a great way to warm up! Sweet but not too sweet, a little heat from the vodka and some extra flavor from the vanilla. I use 1% milk and it's creamy and delicious. There aren't a lot of ingredients in this, so use good vodka. This is dessert in a glass! Adapted from Sunset Magazine

2 tablespoon(s) vanilla vodka
1 tablespoon(s) miniature marshmallows

Steps:

  • Heat milk in a saucepan until VERY hot - but don't let it get to a boil.
  • While milk is heating, measure white chocolate chips.
  • Put marshmallows in a heatproof glass. Add vanilla vodka.
  • When milk is hot, whisk in white chocolate chips. Whisk until chips are melted and milk is a little frothy.
  • Pour milk over the vodka and marshmallows in the glass.
  • Enjoy!

1/4 cup sugar
1/4 cup water
2-inch piece fresh ginger, peeled and chopped
1/2 vanilla bean, split and seeds scraped
2 cups fresh pineapple juice
3 cups fresh pineapple juice, poured into ice cube trays and frozen
1/4 cup vanilla vodka or plain vodka
Mint sprigs, for garnish
Pineapple slices, for garnish

Steps:

  • Combine the sugar, water, ginger and vanilla bean and seeds in a small saucepan over medium heat and bring to a boil. Cook the mixture until the sugar is completely dissolved, about 1 minute. Cool at room temperature and strain.
  • Combine the pineapple juice, 1 cup of pineapple cubes, the simple syrup and vodka in a blender and blend until smooth. Pour into glasses filled with pineapple cubes, if desired, and garnish with mint and pineapple slices.

250g (9oz) each plump raisins and sultanas
100g (31/2oz) dried cranberries or blueberries
200g (7oz) natural glace cherries, halved
200ml (7fl oz) vanilla vodka – You can buy this or stick a vanilla pod in the vodka overnight
150g (5oz) flaked almonds
200g (7oz) unrefined dark muscovado sugar
4 medium organic eggs, beaten
100g (31/2oz) plain flour

Steps:

  • Put dried fruit and cherries in a bowl and add the vodka. Soak for at least 3 hours but preferably overnight.
  • Grease and line an 8" cake tin.
  • Preheat oven to 150C
  • Cream together the butter and sugar. Gradually add beaten eggs. Add flour and nuts.
  • Tip in fruit with any remaining liquid and stir well.
  • Pour mix into cake tin
  • Bake for 3 and 1/2 hours or until a skewer comes out clean.
  • Marzipan and ice once cooled or keep and feed regularly with more vanilla vodka.
  • Enjoy!!!

2 cups ice cubes
1 cup vanilla vodka
1/2 cup irish cream, whole milk, whipping cream, half-and-half or 1/2 cup light cream
1 tablespoon Cointreau liqueur, Grand Marnier, orange liqueur or 1 tablespoon orange juice
thin orange slice (optional)

Steps:

  • Rub the rim of four to six chilled martini glasses with a wedge of orange. Spread vanilla sugar onto a plater. Invert glasses into the sugar to coat rims. Set aside.
  • In a cocktail shaker or container with tight-fitting lid, combine half of the ice cubes, half of the vanilla vodka, half of the Irish cream liqueur, and half of the Cointreau®. Cover and shake vigorously. Strain mixture into two or three of the martini glasses; discard ice cubes. Repeat with remaining ice cubes, vodka, liqueur, and Cointreau®. Strain into remaining martini glasses.
  • Garnish drinks with orange slices and chocolate shavings, if you like. Makes 4 to 6 drinks.

  • 1. Cut vanilla beans in 1/2 lengthwise to about 1 inch from the bottom leave this part uncut. Pour out about 1/2 c or a smidgen more of vodka in a glass and add some orange juice- have a sip.
  • 2. Now put the cut beans into the bottle of vodka. Take another sip of your drink.Set aside. Screw on cap to vodka. Shake bottle-to mix up a bit; and store in a cool dry place for 1 or 2 months and give the bottle a shake whenever you think of it.
  • 3. The longer it sets the better it gets. When it is ready- pour mixture into smaller bottle with screw on caps or corks. This makes great gifts to give to your friends at holidays. Now just sit back and finish your drink- it's a long wait! LOL

1/2 cup (packed) dark brown sugar
1/2 cup (1 stick) unsalted butter, melted
12 teaspoons vodka
6 1/2 teaspoons vanilla extract

2 8-ounce packages cream cheese, room temperature
2/3 cup plus 1/4 cup sugar
2 vanilla beans, split lengthwise
6 tablespoons whipping cream
3 cups mixed berries (such as raspberries, blueberries and halved strawberries)

Steps:

  • Preheat oven to 350°F. Mix first 3 ingredients in large bowl until evenly moistened. Divide mixture among eight 4 1/2 x 3/4-inch tartlet pans with removable bottoms; press over bottoms and up sides. Bake until light brown, about 12 minutes. Cool crusts completely in pans on racks.
  • Mix 8 teaspoons vodka and 4 teaspoons vanilla extract in small saucepan; sprinkle gelatin over. Let stand 10 minutes. Stir ober very low heat just until dissolved. Cool to barely lukewarm.
  • Combine cream cheese, 2/3 cup sugar and 1/2 teaspoon vanilla extract in large bowl. Scrape in seeds from vanilla beans. Beat in cream, then gelatine mixture. Divide filling among crusts. Press bottoms of pans up releasing tartlets. Arrange tartlets on baking sheet. Chill 3 hours or overnight.
  • Gently stir berries, 4 teaspoons vodka, 2 teaspoons vanilla extract and 1/4 cup sugar in bowl. Let stand 15 minutes.
  • Top tartlets with berry mixture.

APRICOT VANILLA VODKA

This recipe makes a great, home made, flavored vodka. Tastes awesome out of the freezer, or with a splash of tonic, or club soda, or even with some Orange Juice. Needs to sit in the fridge about a week for the full flavor to permeate. Oh and use a decent vodka, (no cheap bar stuff) but you dont' have to go crazy, with Van Gogh or Belvedere or anything. (I estimated the servings, we don't keep track of that sort of stuff) Cooking time does not include 'resting' in the fridge.

1 (1 liter) bottle vodka
3/4 lb dried apricot
2 vanilla beans
water

Steps:

  • place the dried apricots in a saucepan with just enough water to cover.
  • bring to boil and immediately turn off.
  • allow to soak until soft about 15 minutes.
  • In a large glass jar (don't use plastic or metal) place the apricots, any remaining liquid, the vanilla beans and the vodka.
  • Give it a good stir and place in the fride.
  • Allow to rest in the fridge about a week, stirring or gently shaking on occasion.
  • You can either strain at this point and decant or, if you use a 'sun tea' type of jar with a spiggot at the bottom you can just pour directly from the jar.
