We poached ripe plums with a vanilla bean, then pureed them with buttermilk and ice for a rich, tangy treat for breakfast or anytime.

2 cups sugar
1 vanilla bean, halved with scraped seeds
5 plums, quartered, pitted
1/2 cup buttermilk
1 1/2 cups small ice cubes

Steps:

  • Put 4 cups water, sugar, and halved vanilla bean with scraped seeds into a large saucepan. Bring to a boil over medium-high heat, stirring until sugar has dissolved. Add plums. Reduce heat to medium-low, and simmer until plums are tender, about 15 minutes. Using a slotted spoon, transfer plums to a plate to cool completely; remove bean, and discard poaching liquid.
  • Puree cooled plums in a blender. Add buttermilk and small ice cubes; blend until smooth.

4 cups frozen diced mango
1 ripe banana, peeled and chopped
2 cups very cold buttermilk
1 tablespoon sugar or honey, plus more if mango isn't super sweet
1/2 teaspoon vanilla extract
1/2 teaspoon ground cardamom

  • Combine the mango, banana, buttermilk, sugar, vanilla and cardamom in a blender and blend until smooth. Divide among 4 glasses and serve.

For the filling:
Unsalted butter, for the baking dish
2 pounds peaches or nectarines, peeled, pitted and thinly sliced
1 pound plums, peeled, pitted and thinly sliced
2/3 cup packed light brown sugar
1 tablespoon honey
1 teaspoon grated peeled ginger
Pinch of kosher salt
1/4 cup all-purpose flour
For the biscuits:
1 2/3 cups all-purpose flour, plus more for dusting
1/4 cup granulated sugar
1 1/2 tablespoons baking powder
1/8 teaspoon kosher salt
6 tablespoons cold unsalted butter, cut into small pieces
2/3 cup buttermilk, plus more for brushing
Coarse sugar, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Butter a shallow 2 1/2-quart baking dish.
  • Prepare the filling: Toss the peaches and plums in a medium bowl with the brown sugar, honey, ginger and salt. Sprinkle in the flour and toss to coat. Pour into the prepared baking dish.
  • Make the biscuits: Whisk the flour, granulated sugar, baking powder and salt in a medium bowl. Cut in the butter with your fingers or a pastry blender until the mixture looks like coarse meal with pea-size bits of butter. Add the buttermilk and stir with a fork until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead a few times to bring it together. Pat into an even 1/4-inch thickness. Cut out the biscuits with a 2-inch-round cookie cutter, rerolling the scraps as needed.
  • Arrange the biscuits on top of the filling. Brush with buttermilk and sprinkle with coarse sugar. Bake until the biscuits are golden and the filling is bubbling, about 50 minutes.

BLUEBERRY PLUM BUTTERMILK SMOOTHIE

What to do with all those berries? The buttermilk gives this a nice tang and the blueberries make this rock with healthy goodness. Great any time of day. Add rum for an adult get-together. Adapted from a recipe I saw demonstrated by Martha Stewart. This makes 2-- approximately 12 ounce servings. Time does not include cooling time for fruit.

6 plums, black plums are best
1/2 cup blueberries
4 cups water
1 cup sugar
1/2 cup buttermilk
2 cups crushed ice
1/4 teaspoon vanilla extract
1/2 cup ice cube, for serving

Steps:

  • Remove pits and cut plums into quarters or smaller. I just slice from top to bottom right beside the pit; do this all the way around.
  • Place water and sugar in small saucepan, dissolving sugar and bringing to just boiling.
  • Add plum pieces and turn heat lower in order to reach a simmer.
  • Wait 5 minutes after adding plums and add blueberries.
  • Cook all for 10 more minutes.
  • Strain fruit from pot and let cool to at least room remperature or chill until ready to make.
  • Place plums and blueberries in blender and mix.
  • Add buttermilk and vanilla, mix well.
  • Add crushed ice and blend well.
  • Add more more milk or vanilla to suit your taste (or a little of the sugar water for a sweeter drink).
  • Serve immediately over a few ice cubes to keep it good and chilled (it does go fast though!).
  • If you are over 21 and aren't driving-- you can go ahead and add some light rum.
  • Enjoy!

This mango-banana-strawberry smoothie is inspired by lassi, the creamy yogurt drinks popular throughout India. It's as easy to make as a smoothie should be. Just toss everything into a blender - the flesh of an entire mango, a handful of strawberries, half of a banana, a cup of buttermilk, a bit of honey and a few ice cubes - then blend to cool and creamy perfection. If you don't have fresh mango, frozen works just as well, and if you don't have buttermilk on hand (who does?), plain old yogurt will do just fine. Add a splash of milk to loosen if it gets too thick.
