1 1/4 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1 teaspoon vanilla extract
1/3 cup vegetable oil
3/4 cup milk
1/4 cup chopped pecans
1/2 cup chocolate chips, melted (real semisweet)

Steps:

  • Heat oven to 350°F.
  • Combine flour, sugar, baking powder and salt in a 8-inch baking pan. Set aside.
  • Stir together egg and vanilla in a small bowl with wire whisk. Make two indentations in flour mixture; pour oil in one and egg mixture in the other. Pour milk over flour mixture;mix well. Stir in pecans.
  • Bake for 30 to 40 minutes or until wooden toothpick inserted in center comes out clean.
  • Sprinkle chocolate chips over warm cake. Let stand for 2 minutes; slightly swirl chocolate chips.

If you want a moist, easy, not too sweet snack cake, this is the cake for you. Mixed in the pan you bake it in, so not a lot of dirty dishes. Not the prettiest cake I ever made, but was still wonderful. I used white and milk chocolate chips for the top, and swirled. That is all this simple cake needed. Enjoy! My photo's

1 - 1/4 c all-purpose flour
1 - 1/2 tsp vanilla
1 c granulated sugar
1/3 c vegetable oil
1 - 1/2 tsp baking powder
3/4 c milk
1/2 tsp salt
1/4 c chopped pecans or walnuts, optional
1 egg
1/2 c semi sweet chocolate chips, - i used 1/4 cup white choc chips and 1/4 cup milk chocolate chips

Steps:

  • 1. Preheat oven to 350°F.
  • 2. In an 8-inch square baking pan combine flour, sugar, baking powder and salt. In small bowl, whisk together egg and vanilla. Make 2 small wells in the flour mixture; pour oil in one and egg and vanilla mixture in other. Add milk; stir until well mixed. Stir in pecans.
  • 3. Bake at 350° for 30 to 40 minutes, or until wooden pick inserted in center comes out clean. Sprinkle chocolate chips on warm cake. Let stand 2 minutes then swirl melted chips slightly.

3 cups all-purpose flour*
2 cups [brand:name] Extra Fine Granulated Sugar
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons white vinegar
1 tablespoon vanilla extract
1 cup vegetable oil
2 cups water
Basic Buttercream Frosting
Cream Cheese Frosting
Marshmallow Frosting

  • Preheat oven to 350ºF. Whisk together the dry ingredients: flour, sugar, baking soda, and salt. Use the handle of the whisk to create three depressions in the flour mixture (two small ones and a big one). Pour the vanilla and the vinegar in the small depressions, and pour the oil into the large one. Pour the water over all of it and mix until smooth. Lightly spray a 9X13-inch baking dish with nonstick cooking spray, and pour the batter into the dish. Bake for 45-50 minutes or until it passes the toothpick test. Serve it warm right away, or let it cool completely and top with your favorite frosting.
