CHICKEN RICE DIVAN BAKE
I got this off of Southern U.S. Cuisine. We love it! I have made a lower fat version of it using lite cheddar, lite sour cream and margarine without the taste being compromised at all. DH loves this casserole and always goes back for seconds!

Steps:
- Cook broccoli according to package directions; drain well.
- Arrange broccoli in 13x9x2-inch baking dish.
- Sprinkle with half the cheese; top with cubed chicken.
- Season with salt and pepper; spoon on the cooked rice.
- In a saucepan, melt butter over low heat.
- Blend in flour; stirring a minute or until flour turns slightly golden, add milk.
- Cook, stirring constantly, over medium heat until mixture thickens and bubbles.
- Remove from heat; stir in lemon juice and fold in the sour cream.
- Pour over chicken.
- Bake covered at 400' for 15- 20 minutes.
- Remove foil sprinkle with remaining chees and bake another 5 minutes.
UPSCALE CHICKEN DIVAN CRESCENT BAKE
This totally yummy casserole appeals to everyone. There are subtle underlying flavors from the dijon and sherry that make it a bit more special, and it serves beautifully. Once you've made this, you will probably think of many variations. For example, a great brunch option is to make it vegetarian style, using a spinach, mushroom and feta filling (and mushroom soup on top).

- Preheat oven to 375. Spray 9x9 pan with non-stick spray (use a 9x13 pan for a double batch, as shown in the photo).
- Filling: combine chicken, broccoli, mayo and cheese lightly. Set aside.
- Sauce: combine all sauce ingredients. Place ONE CUP sauce in bottom of casserole dish and set remaining sauce aside.
- Assembly: Unwrap Crescent Rolls into 8 pieces. Place one-eighth of the filling onto the longer side of each triangle and roll up. Place rolls on top of 1 cup sauce in casserole dish, seam side down and allowing an inch between rolls so that the crescents will brown on 3 sides. ** Don't pour remaining sauce on top just yet.
- Bake rolls at 375 degrees for 20 minutes. The tops will be slightly brown - remove from oven and pour remaining sauce on top. Sprinkle remaining 1/2 cup cheese on top.
- Return to oven for 5 more minutes until cheese melts.

- baking dish with Pam.
- Put broccoli in bottom of pan.
- Mix soup, mayonnaise, lemon juice, and curry.
- Spread on top of broccoli.
- Layer chicken on top of soup mixture.
- Sprinkle with cheese.
- Mix crumbs and butter and sprinkle over cheese.
- Bake uncovered for about 30 minutes until hot.

- In a small saucepan, melt 1/4 cup butter. Add flour, stirring until blended. Stir in the cream and cooking sherry or water; cook and stir until thickened and bubbly. Cook and stir 2 more minutes. - In 2-quart saucepan, mix chicken and 1/2 cup of the enchilada sauce. Heat to boiling over medium-high heat, stirring occasionally.
- Separate or cut each can of dough into 4 rectangles (if using crescent rolls, press perforations to seal). Spoon chicken mixture and 1 tablespoon of the cheese onto 1 long side of each rectangle. Roll up; pinch edges to seal. Place seam side down in 13x9-inch (3-quart) glass baking dish. Pour remaining sauce over enchiladas, and sprinkle with remaining cheese.
- Bake at 375°F 15 to 20 minutes.

CHICKEN DIVAN CASSEROLE
Steps:
- Preheat the oven to 350 degrees F and place a rack in the top third of the oven. Grease a 9-by-13-inch baking dish with some olive oil and set aside.
- In a medium bowl add the breadcrumbs and the olive oil. Season with salt and pepper and set aside.
- Place the chicken in a large pot and cover with water. Add 4 teaspoons salt and bring to a boil, then immediately reduce to a low simmer. Cook the chicken until the internal temperature on an instant read thermometer reads 160 degrees F, 15 to 20 minutes.
- Remove and cool slightly, then slice the chicken into thin strips or shred, and place in the bottom of the prepared dish. Add the broccoli and sprinkle the Parmesan over the top.
- Melt the butter in a medium saucepan set over medium heat. Add the flour and use a wooden spoon or whisk to stir until smooth and cooked, 4 to 5 minutes. Add the nutmeg, and cayenne. Slowly whisk in the milk, Cheddar, stock and wine. Bring to a boil, whisking often. Reduce to a simmer and cook until thickened and smooth, 5 to 8 minutes.
- Pour the sauce over the broccoli and chicken and then top with the breadcrumb mixture and sprinkle the paprika over the top. Cover the dish with foil and bake 15 minutes. Remove the foil and bake until the top is golden and the casserole is bubbling, 15 minutes.
- Cool for about 5 minutes and then serve.
