Steps:
- Brown meat in a skillet with cooking spray.
- Spray and 8 by 8 dish with cooking spray.
- Layer cabbage on bottom of dish.
- Cover with onion, brown meat and rice.
- Combine tomatoes, mustard, brown sugar twin and salt and lemon pepper.
- Pour over mixture in the dish.
- Cover and bake at 350 degrees Fahrenheit for 1-1/2 hours.
- Uncover and bake additional 10 minutes.
VEGAN UNROLLED CABBAGE ROLLS
From Vegan Vittles by Joanne Stepaniak. This is a tasty, simple and hearty dish. I didn't have quick cooking brown rice and just used cooked brown rice instead- about a cup and a half- and it turned out just fine. I also doubled the tomato sauce because I wanted to use it up and it was delicious. You can definately play with this recipe. I may add some ground not meat next time.

- Place the oil in a 41/2 quart saucepan or Dutch oven, and heat it over medium high heat. When the oil is hot, add the onion, carrot, celery and garlic and saute them for 10 minutes.
- Add the remaining ingredients, mix well, and bring the mixture to a boil.
- Reduce the heat to medium-low and cover the pan with a lid and simmer the mixture for 30 to 35 minutes. Do not stir or lift the lid until the total cooking time has elapsed.
- Remove the saucepan from the heat and let the mixture rest, covered, for 5 minutes,.
- Stir to mix well and serve hot.

I started making a version of this casserole years ago because I love cabbage rolls and they take so long to prepare. I've adjusted the recipe many times but this is my current version. I have also noted lots of other recipes like this in the past couple of years so I guess it wasn't that big a leap from cabbage rolls to cabbage...

- 1. In a large skillet stir and brown beef, pork, garlic, and onion until meat is crumbled and no longer pink. Drain grease. Stir in diced tomatoes and seasonings. Bring mixture to a boil. Reduce heat and simmer to blend flavors and reduce juice a bit for about 10-12 minutes. Stir in rice and bacon and heat thoroughly. Remove from heat.
- 2. Preheat oven to 375 degrees. Layer 1/3 of cole slaw mix in bottom of a 9 by 13 inch baking pan. Put 1/2 of meat mixture on top of that layer. Next add another 1/3 of cole slaw mix. Now add remaining meat mixture and then top that with remaining cole slaw mix. Pour tomato sauce over top of casserole. Cover and bake for 50 minutes.
- 3. Uncover casserole and sprinkle cheese on top. Return to oven for 10-12 minutes to melt cheese. Allow to sit for 10 minutes before serving.

- In a large skillet, heat olive oil over medium heat.
- Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.
- Add the garlic and continue cooking for 1 minute.
- Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt.

- 1. Spray a medium saucepan with non stick spray. Add onions and garlic. Cook over medium heat for 2 mins., stirring often. Add broth and rice. Bring to a boil. Reduce heat to medium-low. Cover and cook for 20-25 minutes, until rice is tender and liquid has been absorbed. Stir occasionally.
- 2. Meanwhile, bring a large pot of water to a boil. Cut cabbage into 8 wedges for 5 minutes. Drain. Remove tough inner pieces. Seperate individual leaves and set aside.
- 3. Combine cooked rice with turkey, egg white, parsley, marjoram, salt, and pepper. Mix well, (using your hands works best).
- 4. Spray a 13x9" baking pan with non-stick spray. Line bottom with 1/2 the cabbage leaves. Spread rice/turkey mixture evenly over the cabbage. Top with remaining cabbage leaves.
- 5. Empty both cans of soup into a medium bowl. Add 1 can water and mix well. Pour soup evenly over cabbage. Cover and bake for 1 hour at 350. Reduce heat to 325 and cook another 45 minutes. Let cool for 5 minutes before serving.
NIGHTSHADE-FREE UNROLLED CABBAGE ROLLS WITH "NO-MATO" SAUCE (AUTOIMMUNE PALEO)

- First, you will need to make "no-mato" sauce. You can make it ahead if you like. It keeps in the fridge for several days and also freezes well. Preheat oven to 325F (or use a slow cooker set on low). Cut cauliflower into small chunks and use a food processor or blender to turn it into "snow" or "rice". This doesn't take very long -- several short pulses will do it. Be careful not to over-process. In a large bowl, mix together ground beef, cauliflower rice, onion, salt, and pepper so that it forms an even mixture. Slice cabbage into quarters and remove the tough inner core. Then, cut the cabbage into slices about half an inch thick. It doesn't have to be exact. Place a layer of sliced cabbage in the bottom of your ovenproof cooking vessel (I used a 5 quart pot with a tight-fitting lid). Add a layer of sauce, then a layer of beef mixture, then another layer of sauce. Repeat process until your pot is full. Try to end with a layer of cabbage with sauce on top. Cover pot and bake for 2 hours. Remove cover and bake an additional 30 minutes. If using a slow cooker, just let it go on low for about 8 hours, per Katie's recipe. This is a one-pot meal that does not need any sides! I used a knife and cut out pieces of this dish like you would cut a cake. You can also serve it from the top layer down, whichever you prefer. Enjoy! This recipe stores well for several days and is easy to reheat. Just put serving in a pot and heat it on the stovetop.
