- Preheat oven to 350°F. Coat a 9- x 13-inch baking dish with cooking spray. In a large bowl, stir together chicken, celery, cheese, sour cream, mayonnaise, water chestnuts, soup, and almonds. Spoon into prepared baking dish. Bake, uncovered, for 30 minutes. Sprinkle onion rings evenly over top and bake 5 more minutes, or until bubbly around edges. Let stand 5 to 10 minutes before serving. Notes: We're thinking that a side of deliciously flavored broccoli would be a great accompaniment for this casserole.

- Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
- In a large bowl, stir together chicken, celery, cheese, sour cream, mayonnaise, water chestnuts, soup, and almonds. Spoon into prepared baking dish.
- Bake, uncovered, for 30 minutes. Sprinkle onion rings evenly over top and bake 5 more minutes, or until bubbly around edges. Let stand 5 to 10 minutes before serving........OR
- To make it EVEN BETTER, saute a large onion with celery in 2 T butter. When soft, add cheese (may use Velveeta or cheese whiz or Campbell's Cheddar Cheese soup-all work well) and Cream of Chicken soup. Cook over heat, stirring constantly until smooth. Add all other ingredients. Make a box of StoveTop Stuffing as directed. Place a bed of the prepared stuffing in the bottom of the pan, making a crust. Pour the chicken mixture over the top. Cook as directed above, topping with the onion rings for the last 5 minutes of cooking. I sometimes mix 1/2 the can of onion rings in the chicken mixture and reserve. The other 1/2 for the top. this is a little more work but makes a big difference
- in flavor, especially in adding the onion. In cooking the onion and celery, there aren't
- any under-cooked pieces in the final product, either.
