2/3 cup dry french breadcrumbs
2/3 cup parmesan cheese
1/4 cup parsley
1/2 teaspoon salt
1/4 teaspoon pepper
3 garlic cloves, minced
1/3 cup butter
3 lbs chicken, with skin

Steps:

  • Mix the dry ingredients together in a 1-quart mixing bowl and set aside.
  • In a 1-quart sauce pan, heat butter and garlic over low heat until butter melts. Remove from heat.
  • Coat chicken pieces with the butter mixture then thoroughly coat with dry mixture.
  • Put chicken on an ungreased cookie sheet, skin side up.
  • Mix together the remaining dry ingredients and the butter mixture together. Sprinkle over the chicken.
  • Bake at 350° for 1 hour. For crispier chicken cook an additional 15 minutes.

UNCLE LANG'S THREE TEACUP CHICKEN

I was charmed when my uncle bought a small Chinese teacup to measure the soy sauce, vinegar and sugar for this recipe. He typically browns a whole chicken in the wok which requires skill to do. I prefer to use chicken breasts or legs. The Sichuan peppercorns must be dry-roasted in a work for a few minutes to bring out their flavor and then crushed before being cooked.

3 whole star anise
1/4 cup soy sauce
1/4 cup rice vinegar
1/4 cup sugar
2 tablespoons Shao Hsing rice wine or dry sherry
1/2 teaspoons peanut oil
4 whole chicken legs or 4 small breast halves on the bone (about 2 pounds)
3 medium garlic cloves, smashed
6 slices ginger
1/2 cup homemade chicken broth

Steps:

  • In a medium bowl, combine the star anise, soy sauce, vinegar, sugar, and rice wine. Set aside.
  • Heat a 14-inch flat-bottomed wok over high heat until a bead of water vaporizes with 1 to 2 seconds of contact. Swirl in the oil and carefully add the chicken skin side down, spreading it in the wok. Cook, undisturbed 3 to 4 minutes, adjusting the heat between medium and medium-high to let the chicken brown.
  • Add the garlic and ginger. Then, using a metal spatula, turn the chicken over, and pan-fry 3 to 4 minutes, or until the chicken is browned but not cooked through. Stir the soy sauce mixture, and swirl it into the wok. Turn the chicken over. It should be golden brown. Swirl the broth into the wok, cover, reduce the heat to low, and cook 8 minutes for the legs or 5 minutes for the breast.

vegetable oil, for deep-frying
3 lbs chicken, whole, cut into 8 pieces
3 cups seasoning, Uncle Lou's Fried Chicken Seasoning (available online)
6 cups dipping sauce, Uncle Lou's Spicy Love dipping sauce

Steps:

  • Heat oil in a deep-fryer or heat 3 inches of oil in a heavy pot until a deep-fryer thermometer reads 375 degrees F. Line a baking sheet with paper towels.
  • Rinse chicken thoroughly pat dry with more paper towels. Put the seasoning mix in a plastic bag. Add the chicken 2 to 3 pieces at a time, close the bag, and shake until all of the chicken is well coated.
  • Remove the chicken from the bag and shake off excess seasoning mix. Slip the chicken into the hot oil and fry until the juices run clear, about 12 to 15 minutes. Remove from the oil and drain on the lines baking sheet to remove excess oil. Serve as is, or dipped in the Sweet Spicy Love sauce.
