ULTIMATE CHILI "CHEESE" NACHOS
There's something so delicious and comforting about a bed of warm corn tortilla chips topped with a liberal drizzling of my ultimate vegan nacho "cheese" sauce. Spoon on a generous dollop of my one-pot chili and a sprinkle of chopped jalapenos and cilantro.

- Preheat oven to 350 degrees F (180 degrees C).
- For the meatless chili: Heat the oil in a medium-large saucepan. Stir in the onions and red bell pepper and fry at a gentle sizzle until just starting to brown, about 5 minutes. Stir in the kidney beans, plant-based meat, green beans and garlic. Turn up the heat to hear that sizzle and cook, about 1 minute.
- Stir in the tamari, tomato puree, Worcestershire sauce, chili paste, chopped tomatoes and 1/3 cup water. Bring to a gentle simmer, then cook, checking and stirring occasionally, 15 to 20 minutes. The sauce should be rich, tangy and thickened. Season with salt and pepper to taste. Finally, stir in the cilantro.
- For the nacho "cheese" sauce: Heat the oil in a medium pan, stir in the flour and cook, about 1 minute. Gradually stir in the milk using a wooden spoon or whisk to avoid any lumps. Bring to a gently bubbling simmer and cook until the sauce thickens to a creamy consistency and coats the back of a wooden spoon, 4 to 5 minutes.
- Add the nutritional yeast, chipotle paste, bouillon and turmeric, stirring constantly to marry all the flavors, about 2 minutes. Remove from the heat.
- For the assembly: Spread the nacho chips on a baking sheet and bake to warm them through, about 3 minutes.
- Spread the chips out onto a platter or in individual bowls. Spoon the nacho sauce onto the warm tortilla chips, add the chili in the middle and top with the jalapenos and cilantro.
THE ULTIMATE SLOW COOKED CHILI
Chili is always a little bit of experimentation, a whole lot of flavor, and one of my absolute favorite dishes. There is always a little give and take but here is my honed recipe with the (staple) list of ingredients. Serve in a bowl on a cold night or even spread over white or brown rice sometimes. Always sprinkle generously with Cheddar cheese and crumbled tortilla chips and maybe a dollop of sour cream and enjoy!

TYLER'S DAD'S ULTIMATE CHILI DOGS
Tyler Florence on the Food Network is one of my favorite chefs. I really like that show "How to Boil Water", but this recipe came from Tyler's Ultimate Tailgating show on Super Bowl weekend courtesy of his dad. It looked absolutely divine and I LOVE LOVE LOVE chili dogs, chili fries, and chili and cheese wraps. The ingredients and prep are simple and I have all the ingredients on hand usually.

- SAUCE:.
- Heat olive oil in a skillet over medium heat.
- When hot, add the onion and garlic and cook, stirring, until it is soft and translucent, about 5 minutes.
- Add the ground beef, breaking it up with the back of a spoon, and cook until nicely browned, about 10 more minutes.
- Stir in the ketchup, chili powder, and mustard and simmer for 15 minutes until thickened.
- Season with salt and pepper.
- While the chili is cooking, get the grill going.
- Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot.
- Take a few paper towels and fold them several times to make a thick square.
- Blot a small amount of oil on the paper towel.
- Then carefully and quickly wipe the hot grates of the grill to make a nonstick grilling surface.
- Bring a pot of water up to a simmer and parboil the dogs for about 5 minutes.
- Take them out of the water, pat them dry, and grill them just long enough to mark them. (That'll give them a grilled flavor too.)
- Brush the insides of the rolls with olive oil and lay them face down on the grill; cook until toasty.
- To serve, put a dog in each roll and top with the chili and some Cheddar.

COOK'S ILLUSTRATED "ULTIMATE CHILI"

- Preheat oven to 300 degrees. Place Ancho chilies in 12-inch skillet over medium-high heat; toast, stirring frequently, until flesh is dry and fragrant, 4-6 minutes, reducing heat if chilies begin to smoke. Transfer to bowl of food processor and cool. Do not wash out skillet. Add arbol chilies, cornmeal, oregano, cumin, cocoa, and1 teaspoon salt to food processor with toasted ancho chilies; process until finely ground, about 2 minutes. With processor running, very slowly add ½ cup broth until smooth, thick paste forms, about 45 seconds, scraping down sides of bowl as necessary. Transfer to small bowl. Place onions in now-empty processor bowl and pulse until roughly chopped, about four 1-second pulses. Add jalapenos and pulse until consistency of chunky salsa, about four 1-second pulses, scraping down bowl as necessary. Heat 1 tablespoon oil in large Dutch oven over medium-high heat. Add onion mixture and cook, stirring occasionally, until any exuded moisture has evaporated and vegetables are softened, 7 to 9 minutes. Add garlic and cook until fragrant, about 1 minute. ULTIMATE TAILGATE CHILI
No more long, detailed and complicated chili recipes for me. This one is simply delicious! Yesterday we had surprise guests for a pre-season game. I couldn't find a recipe online that fit the bill so I whipped up this chili to feed a crowd and it was a hit. Super easy with canned ingredients I had in my pantry. You can adjust accordingly to feed less people or use paprika instead of chili powder for less heat. Perfect with cornbread or on hot dogs! - In a large stock pot, start to brown beef. About half way through add onion and finish browning meat.
- Add garlic salt, chili powder, cumin, Rotel tomatoes, and tomato sauce. Stir well.

ULTIMATE VEGGIE CHILI

- In a large stockpot, saute onion, bell pepper, and garlic in the olive oil over medium-high heat until onions are starting to soften. Stir in cumin, chipotle, and red pepper flakes. Crumble the thawed tofu into the mixture and saute 5 minutes more.
- Reduce heat to medium. Add all tomatoes, jalapenos, green chiles, black beans, kidney beans, corn and cashews; mix well. Reduce heat to low and simmer for 1 hour, stirring occasionally. Add salt and pepper, to taste.
- Garnish with sour cream, grated Cheddar, and additional cashews, if desired.

- To make the biscuits, heat oven to 450°F. Stir ingredients until soft dough forms. Turn onto surface dusted with Bisquick mix. Knead 10 times. Roll dough 1/2 inch thick. Cut with 2 1/2-inch cutter. Place on ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown.
- Next, Heat gas or charcoal grill. Add beef to large bowl, and season with salt and pepper. Shape beef into 4 equal patties. Place on grill over medium-high heat. Close grill; cook to desired doneness. I cook mine about 4 minutes per side, but it will depend on how thick your burgers are. Remove from grill, and keep warm while you make cheese sauce.
- To make cheese sauce, melt butter in 1-quart saucepan over medium-high heat. Stir in flour; cook about 1 minute. Beat in milk and mustard with whisk. Heat to bubbling, and let thicken, about 2 minutes. Turn off heat, and stir in provolone cheese, Cheddar cheese and a pinch of salt and pepper. Stir until cheese is melted.
- To assemble burgers, split biscuits in half and place a burger patty on the bottom of each biscuit. Top each burger with about 1/4 cup of hot chili, then carefully drizzle on the warm cheese sauce. Finish the burgers with warm crispy onion rings and corn chips. Top with the top half of the biscuit, and enjoy!

THE ULTIMATE FIREHOUSE CHILI RECIPE
I saw this recipe online some four or five years ago, modded it each time that I made it, and eventually came to the below listed version as my personal favorite. Seems as though it won some contest in California. Could be wrong on that, but that is all I remember. I love it. Maybe one of you all will like it too. Tips. The type of beer is up to you. The coffee, I use a dark roast or espresso. Decaf or regular, I just use what is around. Make sure not to use pickled red peppers. They need to be preserved in salt and water only. Preferably charred before being jarred. More details - please mince the poblanos and serranos, and rough chop the onion. Use an old, angry, bitter onion. I am serious.

CHILI (TYLER FLORENCE'S ULTIMATE CHILI)

- In a large soup pot, heat the olive oil. Season the beef shoulder all over with salt and pepper, add it to the pot and brown it. As it's browning stir in the chili powder, coriander, cumin, paprika, oregano and cinnamon. Lower the temperature under the meat to "toast" the spices. In a food processor puree the onions, garlic, chipotle peppers, jalapeno, tomato paste and sugar and add it to the pot. Increase the heat to medium to steam vegetables a little and sweeten the peppers. Add enough water to cover by 1 inch, about 1 quart, and add tomatoes with their liquid. Bring to a boil and skim off any foam that rises to the surface. Reduce the heat and simmer until the meat is fork-tender and comes apart with no resistance, about 2 hours. As it cooks down, add more water, if necessary. When done, stir in the masa harina. Take a potato masher and mash the chili so the meat comes apart in shreds. Season with salt and pepper, to taste. Garnish each serving with the shredded Cheddar, chives, and sour cream.

- Instructions for the night before: Trim chicken livers (To do this remove any white, stringy portions with your fingers or a knife) Place livers in a medium bowl and cover with water Squeeze in the juice of 2 lemons or 1/4 cup apple cider vinegar and place in fridge for at least 8-12 hours. This will neutralize some of the strong flavor of the liver Place beans in a bowl and cover liberally with water - they will expand to more than double their current size. - 1. Brown beef on olive oil in saute pan.
- 2. Remove beef with slotted spoon into big pot. Leave drippings in saute pan; add bacon grease.
- 3. Add onions to saute pan.
- 4. Top onions with brown sugar (more for carmelization of onions, rather than flavor). Sautee until onions are translucent and soft.
- 5. Pour onions into pot, drippings and all.
- 6. Deglaze saute pan with 1/4 cup beer, scraping up brown bits from bottom. Pour that into the pot.
- 7. Into the pot, add broth, all tomatoes (add them whole), bell peppers, tomato paste, and all spices. Give it a really good stir, cover and simmer on very low heat, for about an hour.
- 8. While waiting, dice mushrooms into itty bitty pieces, and shuck that ear of corn.
- 9. After an hour, give your chili a few good stirs, and use back of big spoon or spatula, to push down on the tomatoes, breaking them up. Add mushrooms and corn. Cover and let simmer on very low heat for another hour.
- 10. After that hour, now add beans and beer. Stir, cover and let simmer on very low heat for 30 minutes.
- 11. Turn off heat, uncover and stir, break up some more tomatoes, and then cover it back up and let it sit, covered, for at least 30 minutes before serving. Top with shredded cheese and scallions when serving.

OTORO'S ULTIMATE CHILI
Everybody loves this great hearty chili. I make this quite often, especially in the winter. Also quite good using venison as a substitute. Serve with hot dogs, cornbread, or maybe some cooked macaroni. I'll sometimes make this a day in advance as it always tastes better the second day. I don't use enough cilantro to have fresh on hand so I usually use dried in this recipe.

- Heat the olive oil in a non-stick 5 quart pot on medium high heat. Add the onion with a pinch of salt and cook, covered on medium low heat for 30-40 minutes, stirring occasionally until light brown. Add more oil if needed, make sure the onions don't burn!
- Turn the heat up to medium high and begin to cook the meat. Season with kosher salt and freshly ground black pepper.
- Once the meat is almost cooked add the garlic and tomato paste. Break up the tomato paste and incorporate into the meat. It should look like a sloppy joe consistency.
- When the meat is cooked through, drain if desired and add the beans (along with their liquid) and the rest of the ingredients, stir to combine. If it seems too thick add a bit of water and bring to a boil.
- Turn the heat down and simmer, partially covered for an hour to an hour and a half. Stir occasionally.
- Remove from heat. Ladle into serving bowls and garnish with chopped onion, tomato, or grated cheese if desired. Bon Appetito.
