2 tablespoons olive oil
1 onion, chopped
2 carrots, peeled, thinly sliced
1 red bell pepper, seeded, chopped
3 large jalapeño chilies, seeded, minced (about 4 1/2 tablespoons)
1 28-ounce can crushed tomatoes with added puree
3 cups water
2 15-ounce cans black beans, rinsed, drained
2 15-ounce cans kidney beans, rinsed, drained
1/2 cup bulgur*
2 tablespoons white wine vinegar
5 garlic cloves, minced
2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1/2 teaspoon ground cinnamon

Steps:

  • Heat 2 tablespoons olive oil in heavy large pot over medium-high heat. Add onion, carrots, red bell pepper, and jalapeños and sauté until onion and carrots are almost tender, about 8 minutes. Add tomatoes, 3 cups water, beans, bulgur, white wine vinegar, garlic, and spices. Bring to boil. Reduce heat to medium-high and cook, uncovered, until bulgur is tender and mixture thickens, stirring often, about 20 minutes. Ladle chili into bowls and serve.

1 tablespoon olive oil
1 large onion, coarsely chopped
3 cloves garlic, minced
1 pound butternut squash, peeled, seeded, and cut into 1/2-inch chunks
1 red bell pepper, ribs and seeds removed, cut into 1-inch chunks
1/4 teaspoon chipotle chile powder
Coarse salt and ground pepper
1 can (14. 5 ounces) stewed tomatoes in juice
1 can (19 ounces) chickpeas, drained and rinsed
1 can (19 ounces) black beans, drained and rinsed
1/2 cup chopped cilantro
Lime wedges, for serving

Steps:

  • In a Dutch oven or 5-quart saucepan with a lid, heat oil over medium. Add onion and garlic and cook, stirring occasionally, until tender, 5 to 7 minutes. Add squash, bell pepper, and chile powder; season with salt and pepper and cook, stirring 1 minute. Add 1/2 cup water. Cover and simmer until vegetables are crisp-tender, about 7 minutes.
  • Stir in tomatoes and their juice, breaking them up with a spoon; add chickpeas, black beans, 1/4 cup cilantro, and 1/2 cup water. Bring to a boil. Reduce to a simmer, partially cover, and cook until lightly thickened, about 20 minutes.
  • Season with salt and pepper. Stir in remaining cilantro and spoon into serving bowls. Serve with lime wedges.

1 cup textured vegetable protein
7/8 cup vegetable broth
1 large onion, chopped
1 large green bell pepper, chopped
1 (14 1/2 ounce) can tomatoes, crushed
1 (16 ounce) can tomato sauce
1 (15 ounce) can red kidney beans, drained
1 (15 ounce) can pinto beans, drained
2 -3 tablespoons chili powder
1 teaspoon dried oregano
1/2 teaspoon ground cumin

Steps:

  • 1. Place the TVP and broth in a 3-quart pot and bring to a boil over high heat. Remove the pan from heat and let sit for 5 minutes, or until the broth has been absorbed.
  • 2. Add all of the remaining ingredients to the TVP mixture and stir to mix. Place over high heat and bring to a boil. Reduce heat to low, cover, and simmer for 25 to 30 minutes or until the veggies are tender.

2 cups long-grain brown rice, uncooked
2 Tbsp. KRAFT Lite Balsamic Vinaigrette Dressing
2 carrots, cut into 1/4-inch-thick slices
1 onion, chopped
1 red pepper, chopped
3 cloves garlic, minced
2 cans (14.5 oz. each) diced tomatoes, undrained
1 can (15.5 oz.) red kidney beans, rinsed
1 can (15.5 oz.) cannellini beans, rinsed
1/2 cup KRAFT Original Barbecue Sauce
