This Tuscan Chicken Sandwich features seasoned grilled chicken, provolone cheese, baby spinach leaves, roasted red peppers, and pesto mayo on Ciabatta rolls or sandwich buns.

2 boneless chicken cutlets
1/2 tsp garlic powder
1/2 tsp dried oregano
Salt and pepper (to taste)
1/2 cup Roasted Red Peppers (from a jar)
1/4 cup mayonnaise
1 Tbsp pesto (from a jar)
2 slices provolone cheese
1 cup baby spinach leaves (or lettuce)
2 large sandwich buns (or Ciabatta rolls)

Steps:

  • Place the chicken cutlets between sheets of plastic wrap and pound thin.
  • Sprinkle the chicken on both sides with garlic powder, dried oregano, salt and pepper.
  • Drain and slice or dice the roasted red peppers.
  • Pre-heat the grill for medium-high direct heat.
  • In a small bowl, whisk together the mayonnaise and the pesto and set aside.
  • Grill the chicken until cooked through, about 3 - 5 minutes per side.
  • Place the provolone slices onto the chicken to melt just a little during the last minute or two.
  • Transfer the chicken to a plate and let rest about 3 minutes.
  • If desired, toast the sandwich buns or Ciabatta rolls on the grill until heated through and lightly browned.
  • Spread the pesto mayo onto both sides of the sandwich buns or rolls.
  • On the bottom halves of the sandwich buns, layer the spinach leaves, chicken with melted provolone cheese, and roasted red peppers followed by the sandwich roll tops.

2 tablespoons balsamic vinaigrette
1/2 loaf focaccia bread, cut horizontally to create a top and bottom
1 cup loosely packed mixed salad green
3 -4 slices vine-ripened tomatoes, 1/4-inch thick
3 -4 slices red onions, 1/4-inch thick
3 ounces boneless skinless chicken breasts, grilled and sliced thinly on the bias
1 tablespoon mayonnaise
1 tablespoon basil pesto

Steps:

  • Spread vinaigrette in a thin layer over the bottom slice of focaccia.
  • On top of the vinaigrette, layer greens, tomato, onion and chicken.
  • Stir together mayonnaise and pesto; spread on the top slice of focaccia.
  • Close the sandwich and serve.

1 1/4 lb. (about 6) boneless skinless chicken thighs
2 garlic cloves, minced
1/2 cup roasted red bell pepper (from a jar), cut into bite-sized strips
1/2 teaspoon salt
1/4 cup mayonnaise
3 tablespoons purchased pesto
1 (10-inch) focaccia (Italian flat bread)
6 slices tomato

Steps:

  • Place chicken thighs in 3 1/2 or 4-quart slow cooker. Sprinkle with garlic, roasted pepper strips and salt.
  • Cover; cook on Low setting for 6 to 7 hours.
  • Just before serving, remove chicken from slow cooker; place on large plate. Shred chicken with 2 forks; return to slow cooker and mix well.
  • In small bowl, combine mayonnaise and pesto; blend well. Cut focaccia into 6 wedges; split each in half. Spread cut sides with mayonnaise mixture. With slotted spoon, place about 1/3 cup chicken mixture onto bottom half of each focaccia wedge. Top each with tomato slice and top half of focaccia.

Had some pizza dough and leftover grilled chicken that needed to get used, so i threw together a simple pizza, and it was the best i've ever made! The whole fam loved it.

1 store bought pizza dough, uncooked
1 cup tomato sauce, like hunts
3 cups fresh mozzarella cheese, sliced or shredded
2 cups cooked chicken (i like grilled)
2 tablespoons fresh basil, sliced
1 tablespoon dried parsley
black pepper

Steps:

  • Preheat oven to 425.
  • Roll out pizza dough on a well floured surface. Place onto pizza pan that is dusted with cornmeal, or drizzled with olive oil.
  • Spread tomato sauce over dough in a thin, even layer.Top with fresh basil.
  • Evenly sprinkle cheese onto pizza. Top with chicken, especially places not covered with cheese.
  • Sprinkle parsley over the cheese. Finish of with a little freshly ground black pepper, to taste.
  • Bake for 18-20 minutes, or nutil crust is golden.

4 teaspoons prepared pesto sauce
2 squares focaccia bread (4x4-inch) or 2 ciabatta (4x4-inch)
2 boneless skinless chicken breast halves

2 canned artichoke hearts, drained, thinly sliced
1 plum tomato, thinly sliced
1 cup mixed baby greens
