OVERNIGHT ITALIAN BREAKFAST CASSEROLE

This Quick and Easy Overnight Italian Breakfast Casserole is perfect for weekend brunch, Christmas morning, or breakfast for dinner! Made with lots of veggies and Italian sausage, it's so flavorful and delicious! Serve warm or cold!

1 Tablespoon olive oil or cooking spray
1 pound uncooked Italian sausage, casings removed
1 teaspoon Italian seasoning
1 teaspoon fresh rosemary, finely chopped
1 small onion, diced
2 red bell peppers, seeds removed, diced
2 cups fresh spinach
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 dozen large eggs
1/2 cup full-fat milk
1/3 cup ricotta cheese
1/3 cup finely grated Parmesan cheese

Steps:

  • Generously grease a 9×13 casserole dish. Set aside until needed.
  • Place a large skillet over medium heat. Add a Tablespoon of olive oil or spray with nonstick cooking spray. Add the sausage to the skillet and, using a spatula, break the sausage up into small chunks. Add in the Italian seasoning and rosemary and continue cooking until the sausage is golden brown and no pink remains. Using a slotted spoon, transfer the sausage to a clean plate and set aside. Discard of remaining grease and return the pan to the burner.
  • Add a little more olive oil to the pan. Then add the onions and peppers and cook until they begin to soften, about 6 minutes. Stir in the spinach, garlic, salt, and pepper and continue cooking for another 2 minutes. Add in the sausage and stir to combine. Remove pan from heat and set aside until needed.
  • In a large mixing bowl, whisk together the eggs, milk, ricotta, and Parmesan cheese.
  • Spread half of the sausage and veggie mixture in the bottom of the prepared casserole dish. Top with the egg mixture, then top with the remaining sausage and veggies. Shake the pan lightly back and forth to gently mix the ingredients.
  • Cover casserole and refrigerate overnight, or place the baking dish in the oven and bake at once.

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
4 cups spinach
2 cups of grated sharp cheddar cheese
3 cups of chopped bell peppers
1 tablespoon butter

Steps:

  • Lightly cover the bottom of a 10-inch non-stick skillet with butter. Heat butter over medium-low heat until hot.
  • Add one package Simply Potatoes Diced Potatoes with Onion to skillet. Cover with lid. Cook for 10 minutes, turning every 3 to 4 minutes.
  • Add 3 cups of chopped bell peppers. Cover with lid. Cook for 3-4 minutes, turning every 2 minutes.
  • Add 2 cups of grated sharp cheddar cheese and 4 cups of spinach. Cook for 2 minutes, turning constantly until cheese is melted and spinach is wilted.

2 (20 ounce) packages Simply Macaroni & Cheese, heated as directed on package
1 (16 ounce) bag frozen spinach, thawed and squeezed dry
2/3 cup breadcrumbs
3 tablespoons butter, melted
2 tablespoons parmesan cheese, grated

Steps:

  • Heat oven to 350 degrees F. Coat a 2-3 quart glass baking dish with cooking spray. Set aside.
  • Transfer 1 package of the heated Simply Macaroni and Cheese to the bottom of prepared baking dish and spread evenly. Top evenly with spoonfuls of spinach. Cover spinach with 2nd package of macaroni and cheese and spread evenly.
  • In a small bowl, combine the breadcrumbs, butter and cheese. Sprinkle over casserole.
  • Bake for 30-35 minutes or until hot and bubbly and crumbs are just starting to brown.

1/2 lb boneless skinless chicken breast
2 cups Brussels sprouts
1/4 cup fat-free low-sodium chicken broth
20 ounces Simply Potatoes Steakhouse Seasoned Diced Potatoes
1 cup asiago cheese

Steps:

  • Place potatoes in a microwave safe bowl and cook on defrost for 3 minutes, cube chicken in 1 ½ inch cubes, cut the Brussels sprouts in half and finely shred the asiago cheese.
  • In a deep nonstick oven proof pan sprayed with cooking spray on medium heat cook chicken 5 minutes turn chicken pieces and cook additional 3 minutes. Add Brussels sprouts and chicken broth cover and let simmer until Brussels sprout are fork tender add potatoes mix until well incorporated top with cheese.
  • Place skillet in oven turn oven on broil and broil until cheese has melted and has started to turn a golden color.

4 eggs, lightly beaten
4 tablespoons scallions, diced
4 slices bacon, diced
3/4 cup cheddar cheese, freshly shredded
1 cup Simply Potatoes® Shredded Hash Browns, defrosted

Steps:

  • Pre-heat oven to 350 degrees.
  • Heat small skillet on medium-high temperature.
  • While skillet is heating up, slice bacon in half lengthwise and then dice into medium sized pieces.
  • Place bacon in skillet and cook 5-7 minutes or until just crispy, set aside on plate lined with papertowel.
  • Slice white and light green parts of scallions, set aside .
  • Lightly beat eggs until just blended.
  • Spray four cupcake holes with non-stick spray.

1 (8 count) package hot dogs
2 yellow onions
1 green pepper
1 (24 ounce) package any cut Simply Potatoes (Steakhouse works well)
1/2 teaspoon salt and pepper

Steps:

  • Pour oil in 9x13 baking pan.
  • Slice each hot dog into 8 pieces and place all in the pan.
  • Cut the onions into thin slices and add to pan.
  • Cut pepper into chunks and add to pan.
  • Add entire bag of potatoes to pan.
  • Add salt and pepper and toss to coat.
  • Bake for 50 minutes at 400 degrees. Can be served with or without Italian rolls!

6 -8 poblano peppers
2 cups monterey jack cheese
1 (10 ounce) can enchilada sauce
1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
16 ounces chorizo sausage (Mexican sausage.)

Steps:

  • Roast poblanos over open flame. Put peppers in plastic bag and let peppers steam about 10 minutes.
  • Remove charred skin, slit peppers and remove veins and seeds. Set aside.
  • Grill Chorrizo in pan, breaking it up as it cooks. When almost ready, remove chorrizo and then add the potatoes to chorrizo lard. Coat potatoes and and cook until lightly brown, add chorrizo and mix together.Add a cup enchilada sauce, lower temperature, cover and cook about 10 minutes till potatoes are done.
  • Fill poblanos with potato mixture and set in a baking dish. Pour rest of enchilada sauce at bottom of dish and top poblanos with the cheese.
  • Bake in oven at 325 degrees for about 20 minutes until cheese melted.

1 tablespoon salted butter
1 red bell pepper
1 (24 ounce) package Simply Potatoes Homestyle Slices
1 (12 ounce) package pepper bacon
4 eggs

Steps:

  • Pre-heat oven to 350 degrees. Use 1/2 tablespoon of butter to grease an 8 x 8 glass baking dish and set aside.
  • Cook peppered bacon until crispy and set aside to cool on a plate lined with a paper towel.
  • Julienne red bell pepper into 1 inch long slices. Heat 1/2 tablespoon butter in a non-stick skillet over medium-high heat. When pan is hot, add red pepper slices and sautee until they start to brown but aren't soft (about 3-4 minutes).
  • Layer Simply Potato Country Style Slices in the buttered baking dish. Crumble bacon and spread over potatoes. Sprinkle red bell pepper slices over the top. Cover dish with foil and bake at 350 degrees for 25 minutes.
  • Take dish out of oven, discard foil, crack 4 eggs (placing one in each quadrant) over dish, place back in oven, and bake the remaining 10 minutes uncovered.
  • Pull out of oven, slice, and serve immediately. Egg yolks should still be runny when slicing. Can be made ahead and baked within 24 hours.
