DONNA'S TURNIP GREEN CASSEROLE

Donna's Turnip Green Casserole image

My MIL has made this for the last 20 years I've know her. It is really good and is usually only fixed for Thanksgiving and Christmas. Use a good quality brand of turnip greens. Store brands often have lots of hard stems. NOTE: 11/15/12 I have learned that Bush's no longer makes canned greens. I would recommend using frozen...

Provided by Melanie B

Time 1h10m

Number Of Ingredients 8

2 can(s) bush's turnip greens, drained** see note**
1 can(s) cream of mushroom soup
1 c mayonnaise
3 Tbsp red wine vinegar
4 eggs, slightly beaten
salt and pepper
1/2 c bread crumbs
1/2 c grated cheddar cheese

Steps:

  • 1. Mix all the wet ingredients together, then pour into a casserole dish. Add as much salt and pepper as you wish. She used a couple of shakes, probably about 1/4 teaspoon of each.
  • 2. Top with bread crumbs and cheese.
  • 3. Bake one hour at 350 degrees
  • 4. She has one of those big square Corning Ware casserole dishes she uses. Note 11/15/12 I made this for a work luncheon. It fits in a 8x8 or 9x9 square baking pan. My MIL must have made a doube batch because her dish was much larger.

TURNIP-SQUASH VEGETARIAN BUDGET CASSEROLE

Turnip-Squash Vegetarian Budget Casserole image

I'm currently on a budget casserole roll here. Feel free to sub the cream of potato soup for any other cream soup (my other favorites are mushroom and celery), they're pretty packed with flavor. It's just that not as many use cream of potato like I do! I like Stovetop traditional sage stuffing mix and the turkey one, any kind of boxed stuffing will do. You can used canned french-fried onions like French's or Durkee but I prefer homemade, Recipe #44115 those are sooooo good.
