12 ounces ground turkey
1 medium sweet red pepper, chopped
1 small sweet yellow pepper, chopped
1/3 cup chopped onion
3 garlic cloves, minced
1-1/2 cups salsa
1/2 cup canned kidney beans, rinsed and drained
2 teaspoons chili powder
1 teaspoon ground cumin
8 cups torn romaine
2 tablespoons fresh cilantro leaves
Optional toppings: chopped tomatoes, shredded cheddar cheese and crushed tortilla chips

Steps:

  • In a large skillet, cook turkey, peppers, onion and garlic over medium heat 6-8 minutes or until turkey is no longer pink and vegetables are tender, breaking up turkey into crumbles; drain., Stir in salsa, beans, chili powder and cumin; heat through., Divide romaine among four plates. Top with turkey mixture; sprinkle with cilantro and toppings of your choice. Serve immediately.

This is a great, fast recipe for those nights that you have little time but want a balanced meal. Add beans or olives, if that is what you like. We can't find taco salad shells here, so if you have them where you are, try those. If you don't like raw onions, cook the onions with the ground turkey.

½ pound ground turkey
1 (1 ounce) packet taco seasoning mix
½ cup chopped green bell pepper
4 cups mixed salad greens and fresh herbs
2 cups tortilla chips
½ cup shredded Mexican cheese blend
⅓ cup chopped onion
½ cup fresh salsa
1 tablespoon sour cream

Steps:

  • Cook turkey in a skillet over medium heat until completely browned, 5 to 7 minutes; season with taco seasoning mix. Add green bell pepper; cook and stir until pepper is tender, about 5 minutes.
  • Arrange salad greens onto 2 plates. Top greens with tortilla chips, cheese, and onion. Spoon turkey over the each salad. Top with salsa and sour cream.

4 tablespoons olive oil
1 small onion, diced
1 pound ground turkey
1 small zucchini, diced
1 red bell pepper, ribs and seeds removed, diced
1 1/2 cups prepared green salsa
Coarse salt and ground pepper
2 heads Boston lettuce, leaves separated
1 1/2 cups crushed tortilla chips
1 cup small cherry tomatoes, halved
1 cup (about 4 ounces) shredded cheese, such as white cheddar or Monterey Jack

Steps:

  • Heat 2 tablespoons oil in a large skillet over medium-high heat. Add onion, and cook, stirring often, until translucent, 5 to 7 minutes. Add turkey; cook, stirring often, until starting to brown, 5 to 7 minutes.
  • Add zucchini, bell pepper, and 1 cup salsa; cook until vegetables are crisp-tender, 5 to 6 minutes. Season with salt and ground pepper. Transfer to a plate, and let cool.
  • In a large bowl, toss lettuce with tortilla chips, tomatoes, and remaining 1/2 cup salsa and 2 tablespoons oil. Transfer to serving plates, and top with turkey mixture and cheese.

1 pound extra-lean ground turkey breast
1 head iceberg lettuce - rinsed, dried, and chopped
6 green onions, chopped
1 (15 ounce) can kidney beans, drained and rinsed
2 cups shredded Cheddar cheese
½ cup diced dill pickles
½ cup sliced black olives
2 cups fat-free mayonnaise
1 teaspoon lemon juice
1 teaspoon white wine vinegar
¾ cup taco sauce
1 (14.5 ounce) package low-fat baked tortilla chips

Steps:

  • Place turkey in a large deep skillet, season with garlic salt and cook over medium high heat until fully cooked. Crumble and set aside to cool.
  • Mix together the turkey, lettuce, green onions, kidney beans, cheese, pickles and olives.
  • Whisk together the mayonnaise, lemon juice, vinegar and taco sauce.
  • Pour dressing over salad and refrigerate. Before serving, mix in 2 cups broken tortilla chips. Garnish with whole chips and serve.

Number Of Ingredients 18

5 1/2 cups freshly shredded green cabbage (about 1/2 a large cabbage)
1/2 cup green onion, chopped (about 6 onions)
2 chipotle chiles in adobo (2 large ones out of a small can)
1 cup real mayonnaise
4 tablespoons clover honey
2 tablespoons fresh squeezed lime juice (about 1 small lime)
3/4 teaspoon kosher salt (for the cabbage dressing)
3 tablespoons canola oil
1 large yellow onion, chopped (2 cups chopped onion)
1 1/4 lbs ground turkey (85/15 lean to fat content)
4 cups fresh zucchini, cubed small (about 3 small zucchini)
1/2 teaspoon garlic powder
1 teaspoon kosher salt (for the turkey-calabasitas mix)
1/2 teaspoon fresh cracked black pepper
1 (11 1/8 ounce) bag original Fritos corn chips
1 (16 ounce) brick longhorn style mild cheddar cheese, freshly shredded
1 fresh summer slicing tomatoes, cubed and with seeds removed
1 avocado, cubed

Steps:

  • Shred the cabbage in a food processor with the shredding blade. Place the cabbage with the chopped green onions into a large bowl.
  • Rinse out the cabbage from the food processor and change to the regular chopping blade. Put the 2 chipotle peppers in and process until they form a smooth paste. Add to that the mayonnaise, honey, lime juice, and salt.
  • Pour the chipotle dressing into the cabbage mix and toss to coat. Set aside in the fridge until ready to assemble salad.
  • Heat the canola oil in a large Texas skillet. Add the yellow onions, turkey meat, and zucchini. Sprinkle the mix with the garlic powder, salt, and pepper.
  • Cook on medium heat, stirring often, until the turkey is no longer pink and the onions and zucchini have cooked down and gotten soft. (About 10 minutes).
  • Remove the turkey from heat and keep warm to assemble the salad.
  • Assemble the salad by placing some of the Frito chips around the edges of a plate and put some turkey mix in the middle of the chips, then some of the chipotle cabbage slaw, cheese, tomatoes, and avocado. Garnish with some optional cilantro if desired.

5 tblspn olive oil
2 lbs. ground Turkey
2 small white or yellow onions (finely chopped)
4 cloves garlic (finely chopped)
4 teasp ground ancho chile spice
4 teasp ground cumin
Guacamole
3 avacados
3 handfuls of cilantro (chopped fine)
3 healthy pinches of salt (to taste)
1 tblspn of lime juice
1-2 heads of romain lettuce (chopped)
2 cans black bean refried beans
1 bag Trader Joes Spicy Soy and Flaxseed Tortilla chips
2 large tomatoes chopped
1 large bowl of shredded mild cheddar cheese
1 small bowl of light sour cream

Steps:

  • In a large skillet, poor 3 tblspn olive oil then add 2 chopped onions and heat about 6-7 minutes until translucent, stirring as necessary. Next add the garlic and heat another 1 minute. Then add ground turkey and continue mashing it down with a fork until its broken up and looks like ground beef. Then add the 4 tspns of adobo and 4 tspns of cumin and stir in and mix well with the ground turkey. Add the additional olive oil when you add the turkey if necessary. At the same time add both cans of refried black beans to a separate pan and heat for 2-3 minutes, until hot. Simple guacamole-halve 3 avacados and scoop out contents into a medium bowl. Mash avacados with a fork until smooth (does not have to be lump free. Do it to the consistency that you prefer). Add chopped cilantro, salt and lime juice. mix all ingredients well. Surround plate with soy flaxseed chips. add lettuce to the middle. Top lettuce with black bean refried beans and then the cheddar cheese so that it melts from the heat of the black beans. Then top with ground turkey and top with a large tspn full of guacamole. Finally, sprinkle chopped tomatoes and serve. Add light sour cream if desired.

1 (1.25 ounce) package taco seasoning mix
1 (15 ounce) can black beans, rinsed and drained
1 head iceberg lettuce, shredded
2 tomatoes, diced
1 (10 ounce) bag tortilla chips, coarsely crumbled
1 (8 fluid ounce) bottle thousand island dressing

Steps:

  • Heat a large skillet over medium-high heat, and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Mix in taco seasoning mix as directed on package. Remove from heat.
  • Combine the turkey, black beans, lettuce, tomatoes, and tortilla chips in a large bowl. Toss with salad dressing. Serve immediately, or refrigerate for an hour before serving.
