A hearty turkey noodle soup made from leftovers. If you are short on turkey meat, add more veggies!

2 quarts chicken broth
1 turkey carcass, skin and meat removed
1 onion, quartered
2 carrots, halved lengthwise
3 celery stalks, halved lengthwise
2 bay leaves
1 cup chopped carrots
⅓ cup chopped celery
¼ cup chopped onion
2 cups penne pasta
3 cups chopped cooked turkey
1 (10.75 ounce) can condensed cream of mushroom soup

Steps:

  • Combine chicken broth, turkey carcass, onion quarters, carrot halves, celery halves, and bay leaves in a slow cooker.
  • Cook on High for 4 hours. Carefully strain broth, discard solids, and transfer broth to a bowl. Rinse slow cooker.
  • Pour broth back into slow cooker; add chopped carrots, chopped celery, and chopped onion.
  • Cook on Low for 3 hours. Add penne pasta to slow cooker; cook for 2 1/2 more hours.
  • Mix turkey meat and cream of mushroom soup into soup and cook for 30 more minutes.

1 1/2 pounds Yukon gold potatoes (, diced)
3 ribs celery (, sliced)
3 large carrots (, peeled and sliced)
1 medium white onion (, diced)
3 cloves garlic (.minced)
6 cups low sodium chicken broth
1 teaspoon salt
3/4 teaspoon ground pepper
1/2 teaspoon poultry seasoning
3 cups cooked shredded turkey
1/4 cup heavy cream
1 teaspoon dried parsley

Steps:

  • Combine potatoes, celery, carrots, onion, garlic, chicken broth, salt, pepper, and poultry seasoning in a 6-quart slow cooker.
  • Cover and cook on high for 3 to 4 hours, or on low for 6 to 8 hours until vegetables are tender.
  • Uncover and measure out approximately 2 cups of soup and transfer into a blender*. Puree briefly until ingredients are mostly combined.
  • Return pureed soup to crockpot and add shredded turkey, heavy cream, and parsley. Stir well, cover, and cook on high for another 30 minutes. Serve hot.

1 cup chopped onion
1/2 cup chopped celery
4 cups Original Chicken Stock
1/2 tsp Black Pepper Coarse Ground

1/2 tsp Thyme Leaves
1 Bay Leaves
1/2 tsp salt
1 cup uncooked medium egg noodles
1 cup shredded cooked turkey
1/2 cup frozen peas

Steps:

  • Mix carrots, onion, celery, stock and seasonings in 6-quart slow cooker. Cover.
  • Cook 3 hours on HIGH or 6 hours on LOW.
  • Stir in noodles and turkey. Cover and cook 15 minutes longer on HIGH or until noodles are tender. Stir in peas. Ladle soup into serving bowls.

This is how I take care of the turkey carcass. But you can make this soup by following the directions and using 12 cups of chicken broth with 1/2 teaspoon of poulty seasoning. You can freeze the carcass and make the broth when convenient for you.

1 turkey carcass
1 onion
1 celery
1 carrot
1/2 teaspoon salt
1/2 teaspoon pepper
1 bay leaf
1/2 teaspoon poultry seasoning
2 teaspoons instant chicken bouillon granules
12 cups water
2 onions
1 garlic clove, minced
2 carrots, peeled and chopped (I slice them)
2 stalks celery, chopped
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 cups turkey, shredded (include reserved turkey from above)
noodles, uncooked your choice
2 tablespoons fresh parsley leaves, chopped

Steps:

  • Turkey Broth:.
  • Put the turkey carcass in your slow cooker on Low with an onion, celery stalk,a carrot, salt and pepper,bay leaf, 1/2 poultry seasoning, 2 teaspoons chicken powder and water. Cook on Low overnight.
  • Next morning, strain the both and pour it back in the slow cooker.
  • Remove turkey meat from bones, set meat aside.
  • Soup:.
  • In the slow cooker with the broth, add onions, garlic, carrots, celery, thyme, salt and pepper.
  • Cook at High for 4 hours; add turkey, noodles, and parsley.
  • Cook another 1/2 hour.
  • Enjoy!
  • NOTE: Cooking time doesn't include the overnight that your broth is cooking.

1 cup homemade turkey broth
2 cups diced cooked turkey
1/4 vidalia onion, chopped
1 cup celery, diced
1 cup carrot, diced
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
2 -3 cups chicken broth
2 cups diced potatoes
1/2 cup 2% low-fat milk
1/2 cup cream
1/2 cup flour

Steps:

  • Ingredients in turkey stock, besides the leftover turkey parts, were 1/2 Vidalia onion chopped, stalk of celery chopped and 1/4 cup chopped fresh parsley.
  • Combine all soup ingredients, except milk, cream and flour, in crock pot.
  • Use just enough chicken broth to barely cover meat and veggies.
  • Cook on low for 8 hours, or until potatoes and carrots are easily pierced.
  • Combine milk, cream and flour and add to soup.
  • Let cook for approximately 30 minutes more, stirring occasionally to thicken.
  • You can also add any leftover gravy you have.

SLOW-COOKER DILL-TURKEY CHOWDER

Steps:

  • Place turkey in 4- to 5-quart slow cooker. Sprinkle with garlic-pepper blend and salt. Stir in remaining ingredients except half-and-half and cornstarch.
  • Cover; cook on Low heat setting 6 to 8 hours.
  • In small bowl, mix half-and-half and cornstarch; gradually stir into chowder until blended. Increase heat setting to High. Cover; cook about 20 minutes, stirring occasionally, until thickened.
