WHITE BEAN, TURKEY, AND SAUSAGE CHILI



White Bean, Turkey, and Sausage Chili image

A family favorite vamp of chili from Grandma Cheryl! You MUST use a large cast-iron pan, or chili will not thicken as fast or as much! Can sub chicken breast for turkey cutlets. Jalapenos and hot sausage are optional, but add the most flavor if you're not scared of a little spice!

1 (1 ounce) package hot Italian sausage links
1 tablespoon olive oil
2 turkey cutlets, cut into bite sized pieces
1 tablespoon ground cumin
1 ½ teaspoons garlic powder
salt and ground black pepper to taste
2 onions, chopped
8 cloves garlic
4 (15 ounce) cans white kidney beans (cannellini), rinsed and drained
3 (10.75 ounce) cans low-sodium chicken broth
1 tablespoon ground cumin
1 ½ teaspoons garlic powder
2 jalapeno peppers, chopped
2 whole jalapeno peppers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Wrap the sausages in foil, place them on a baking sheet, and bake for 30 minutes.
  • Heat olive oil in a large cast-iron pan over medium-high heat. Cook and stir turkey in hot oil until evenly browned, about 5 minutes.
  • Season turkey with 1 tablespoon cumin, 1 1/2 teaspoons garlic powder, salt, and black pepper. Add onions and garlic to the turkey; continue to cook and stir until onion is softened, 5 to 7 minutes.
  • Pour in the white kidney beans and chicken broth. Season with 1 tablespoon cumin and 1 1/2 teaspoons garlic powder. Simmer over medium heat, stirring occasionally, for 30 minutes.
  • Mix in the chopped jalapeno and the whole jalapeno peppers, if desired. Remove the sausages from the oven and cut them into bite-sized pieces. Stir the sausage into the chili.
  • Cook the chili until the whole jalapeno peppers are tender and chili is thick, about 15 minutes more.

I came up with this recipe by trying to mix ingrediants together that were not only tasty and good for you but easy to make for my family after work. My husband and four year old LOVE it! I serve it with garlic and cheese Bisquick drop bisquits. I don't add any salt to this chili because the broth and sausage are salty enough.

1 lb lean turkey sausage, cut into dime size pieces
extra virgin olive oil
1/4 teaspoon sage
1 teaspoon dried parsley
1 teaspoon dried celery flakes
1 small onion, chopped fine
1 (15 1/2 ounce) can great northern beans
2 (19 ounce) cans cannellini beans
2 (15 1/2 ounce) cans chicken broth
1 bunch broccoli
garlic, to taste
pepper, to taste

Steps:

  • Heat olive oil in large soup pot.
  • Cook onions until translucent.
  • Add sausage and brown well.
  • Add garlic, sage, parsely and celery.
  • Deglaze pot with chicken broth until all sausage pieces are scraped from bottom of pot.
  • Add remaining chicken broth and simmer.
  • Add 1 can of northern beans and 1 can of cannelini beans. (Strained slightly in can. Leave some of the juice.).
  • Take the remaining can of cannelini beans, strained slightly and pour into bowl. Use your hands and "mash the beans." It's messy but adds a some starchy thickness to the chili.
  • Add smashed beans to the pot and stir well.
  • Chop just the florets of the brocolli into small pieces and add to the pot.
  • Simmer until ready to serve. (About 20 minutes.)
  • You can substitute chopped spinich for the brocolli and/or add cheese when serving.

1/2 lb bass farm mild bulk pork sausage
1/2 lb ground turkey (or substitute lean ground beef)
salt & pepper
1 dash seasoning salt
1 -3 tablespoon chili powder, to taste
basil
oregano
garlic powder
3 (15 ounce) cans diced tomatoes with juice
1 (12 ounce) can tomato juice or 1 (12 ounce) can V8 vegetable juice (about 1 1/2 cups)
1/2 large green pepper, diced
1 medium onion, diced
1 teaspoon sugar or 1 -2 dash ketchup
1 (16 ounce) can Bush's light red kidney beans, rinsed & drained
1 (16 ounce) can Bush's dark red kidney beans, rinsed & drained

Steps:

  • In a 5-quart crockpot combine canned tomatoes and beans, cover and turn on high while you prepare the rest of the ingredients.
  • Brown the turkey and sausage together in the same skillet, seasoning with seasoned salt,regular salt, and pepper, drain and add to crockpot.
  • (Note: If I have a 1-lb package of each, I usually cook all of it and freeze half for the next time I make chili.) Saute green pepper and onion in a little olive oil until tender and add to crockpot.
  • Season to taste with chili powder, basil, oregano and garlic powder.
  • NOTE: If you use pre-seasoned canned tomatoes, you may not need to add additional seasonings, or not as much.
  • I usually add a small spoonful of sugar or a squirt of ketchup to take the acid edge off the tomatoes and sweeten it up just a bit.
  • You'd be surprised at the difference this makes!
  • Once everything is in the pot, add as much or as little of the tomato or V8 juice as you like to get the desired consistency.
  • Cover and cook on high 4-5 hours, longer if you use low.
  • Serve with Corn Bread.
  • Variations: You can substitute chili hot beans or black beans for one of the cans of kidney beans, or use ground beef in place of the turkey.
  • You can add a can of tomato paste to thicken it (just add a bit more sugar or ketchup).

1 medium red onion, coarsely chopped
3 -4 canned chipotle chiles in adobo, coarsely chopped
2 links turkey sausage, sliced into 1/2-inch pieces
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1 (14 ounce) can pinto beans, undrained
1 (14 ounce) can black beans, undrained
1 (14 ounce) can kidney beans, undrained
1 (14 ounce) can Italian-style diced tomatoes, undrained
1/4 cup coarsely chopped mexican chocolate
2 cups merlot
1 cup fresh cilantro leaves, chopped
1/2 cup shredded low-fat cheddar cheese

Steps:

  • Spray a large saucepan or Dutch oven with a few sprays of the oil spray. Add onion and saute over medium-high heat until tender.
  • Add chipotles, sausage, seasonings, beans, tomatoes, chocolate, and wine.
  • Bring to a boil over high heat and then reduce the heat to a simmer.
  • Cover and let simmer for 30 to 40 minutes. Stir in cilantro and cheese just until cheese is melted. Serve immediately.

A long time ago I ate some Chicken White Chili...that I thought was wonderful. Since that time I have been unable to find a recipe which would match those ingredients. I needed to make something with chicken or turkey for a meeting I'm going to tonight. Because of food allergies of some of the attendees, I decided to use a Turkey sausage for more flavor and to create my own recipe since those listed here didn't contain the ingredients I wanted to use.

1 large onion (chopped)
2 tablespoons extra virgin olive oil
2 tablespoons garlic (minced)
14 ounces turkey sausage
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup carrot (chopped in small pieces)
1/2 cup celery (chopped in small pieces)
4 ounces pimento pepper (diced & drained)
1 bay leaf
48 ounces great northern beans (cooked)
6 cups chicken broth
8 ounces salsa verde
1 1/2 teaspoons chili powder
1/2 teaspoon cumin
1/2 cup chicken broth
2 tablespoons cornstarch

Steps:

  • Put the olive oil in a large medium hot pan and saute' the onion until soft.
  • Add the mince garlic and carmelize them together being careful not to burn the garlic.
  • Add the turkey sausage, salt and pepper and cook until the juices run clear.
  • Add the carrots, celery, pimento, bay leaf, bens, and the 3 1/2 cup of broth to the pan.
  • Simmer until the vegetables are tender.
  • Mix the 1/2 cup chicken broth with the 2 Tablespoons of cornstarch and then add to the simmering soup, stirring until it thickens slightly.
  • Add more salt and pepper to taste if needed.
  • If the soup seems too thick add additional chicken broth.
  • Bring back to the boiling stage and then serve.
  • Serve along side a bottle of hot sauce for those who like more 'heat'.

2 poblano peppers (or one large), seeds and ribs removed, finely chopped
2 small onions, coarsely chopped
12 oz mild Italian or chicken Italian sausage
1 tsp ground cumin
1 tsp chili powder
1/2 tsp dried oregano
1/4 tsp black pepper
2 16 oz cans navy or great northern beans
1 14.5 oz can chicken broth
2 c coarsely chopped cooked turkey or chicken breast
1 c whole milk
1 c shredded cheddar cheese for serving

Steps:

  • preheat a large stockpot on medium high for 2-3 minutes. Put oil in pan, then add peppers and onions. Cook, stirring for 2-3 minutes or until tender. Reduce heat to medium. Remove casings from sausage and add to pan. Cook, stirring to crumble meat, 5-6 minutes or until sausage is brown and no pink remains. Stir in all spices, then beans (mash one can first) and broth and bring to a boil. When mixture boils, reduce heat to low, cover, and let thicken for up to 45 minutes. Stir in turkey and milk, and cook 2-3 minutes more to blend flavors and heat turkey through. Serve topped with cheese.

Steps:

  • 1. Heat a large Dutch oven over medium-high heat. Add oil to pan; swirl to coat. Add onion and garlic; sauté 4 minutes or until browned. Remove casings from sausage; add sausage to pan. 1 tablespoon vegetable oil
1 pound ground turkey
12 ounces hot Italian sausage, removed from casings and crumbled
2 teaspoon s Essence, recipe follows
1 1/2 chopped yellow onion
1/2 cup chopped green bell peppers
1/2 cup chopped, roasted and peeled green poblano or Anaheim chiles
2 tablespoons minced garlic
2 tablespoons chili powder
1 1/2 teaspoon s ground cumin
1/2 teaspoon s salt
1 bottle (12-ounce) lager beer
1 can (28-ounce) chopped tomatoes with their juice
2 cups cooked pinto beans, or canned beans, rinsed and drained
1/4 cup chopped fresh cilantro leaves
2 cups grated Monterey Jack cheese, garnish
Tortilla chips, accompaniment

Steps:

  • In a large pot, heat the oil over medium-high heat. Add the turkey, sausage and Essence, and cook, stirring, until the meat is no longer pink, 6 to 8 minutes. Add the onions, bell peppers, and chilies, and cook, stirring, until soft, about 3 minutes. Add the garlic, chili powder, cumin, and salt, and cook for 1 minute. Add the beer, tomatoes and beans, stir well, and bring to boil. Reduce the heat and simmer uncovered for 45 minutes to 1 hour, stirring occasionally to prevent the chili from sticking to the bottom of the pot.
  • Remove from the heat add the cilantro. Adjust the seasoning, to taste, and cover to keep warm until ready to serve.
  • To serve, ladle into large bowl and sprinkle each serving with 1/4 cup of cheese. Serve chips on the side.
