1 small head cauliflower
3 tablespoons olive oil
salt and pepper
9 ounces smoked turkey sausage
4 ounces snow peas
1 yellow bell pepper
2 teaspoons ginger paste
3 scallions
1 quarter cup roasted cashew halves
1 third cup Thai sweet chili sauce
2 tablespoons soy sauce
chopped cilantro
1 cup white rice, for serving

Steps:

  • Preheat the broiler.
  • Toss the cauliflower with 2 tablespoons of the olive oil and a few grinds of salt and pepper; spread on a rimmed baking sheet. Broil, stirring occasionally, until lightly charred and tender, about 10 minutes. (Keep a close eye, so it doesn't burn.).
  • Heat the remaining tablespoon of oil in a large nonstick skillet over medium-high. Add in the turkey sausage and cook, without turning, for 1 minute. Then stir, sautéing for another 2 minutes. Add the snow peas, bell pepper, and ginger to the skillet. Cook, stirring occasionally, until crisp tender, 1-2 minutes. Toss in the scallions, cashews, and cooked cauliflower.
  • Stir in the chili sauce and soy sauce, toss to thoroughly coat.
  • Serve over hot cooked rice with a sprinkle of freshly chopped cilantro or parsley.

1 lb Italian turkey sausage links, cut into 1-inch slices
1 1/2 cups sliced onions
2 medium red, yellow or green bell peppers, cut into strips (about 2 cups)

Steps:

  • In 12-inch nonstick skillet, heat oil over medium-high heat. Add sausage; cook 8 to 10 minutes or until no longer pink and completely cooked (at least 165°F). Using slotted spoon, transfer to plate, and keep warm.
  • Reduce heat to medium; add onions and peppers to drippings. Cook 8 to 10 minutes, stirring occasionally, until tender. Stir in garlic and seasoning; cook 30 to 60 seconds or until garlic is fragrant.
  • Stir in tomatoes and sausage; heat to simmering, stirring occasionally. Reduce heat; cook uncovered 8 to 10 minutes or until completely heated through.

1 tablespoon canola oil
1 small onion, chopped
1 carrot, julienned
1/2 medium green pepper, sliced

3 tablespoons reduced-sodium soy sauce
1/2 teaspoon ground ginger

4 garlic cloves, thinly sliced
1 (2-inch) knob ginger, cut into matchsticks

Steps:

  • In a cold 12-inch skillet, combine oil, garlic and ginger. Place over medium heat until sizzling, then continue to cook, stirring frequently, until garlic and ginger are golden brown, 5 to 7 minutes. Transfer with a slotted spoon to a paper towel-lined plate and sprinkle lightly with salt.
  • Add coconut oil to pan, then stir in scallion whites and cook until starting to brown, about 2 minutes. Stir in red-pepper flakes and cook for 1 minute.
  • Stir in turkey, raise heat to medium-high, and cook, breaking up meat with a spoon, until golden and crisp, about 7 minutes. Don't stir the meat too much, so it can turn deep brown.

  • Gently mix about two-thirds of the fried garlic and ginger into the turkey. Serve turkey over rice, topped with cilantro, basil, scallion greens and fresh chile, and garnished with remaining fried ginger and garlic.
