Steps:
- Heat the oil in a large skillet over medium heat, and saute the onion, green bell pepper, yellow bell pepper, and garlic until tender. Stir in the turkey, and cook until evenly brown. Drain, and mix in tomatoes and pumpkin. Season with chili powder, pepper, and salt. Reduce heat to low, cover, and simmer 20 minutes. Serve topped with Cheddar cheese and sour cream.

SLOW COOKER PUMPKIN TURKEY CHILI
An easy chili that's sure to please. I've made this for a Halloween party and a chili cook-off at work with great results! It's a great base with lots of options to spice it up depending on the crowd you're cooking for! I usually put everything together in the morning and let it simmer all day; cooking time can be adjusted to fit your needs.

- Heat olive oil in a large soup pot over medium heat; brown turkey, stirring often, until crumbly and no longer, pink, about 10 minutes. Drain and discard any fat.
- Transfer turkey to a slow cooker and stir in onions, diced tomatoes, pumpkin, chili beans, black beans, brown sugar, pumpkin pie spice, and chili powder. Set cooker to Low, cover, and cook until pumpkin is tender and has started to break apart, at least 3 hours.

- In a large dutch oven, heat oil over medium heat.
- Add the onion, yellow bell pepper, and garlic; stir and cook for about 8 minutes or until soft.
- Add in oregano, cumin, and chili powder.
- Cook and stir 1 minute.
- Add in black beans, turkey, pumpkin, tomatoes with liquid, broth, sherry, and salt/pepper to taste.

CROCK POT TURKEY WHITE BEAN PUMPKIN CHILI

- 1. Heat a large heavy saute pan over high heat and lightly spray with oil. Add meat and cook, breaking it up until white, about 5 minutes. Add to crock pot. 2. Add oil to the saute pan, then onions, garlic, sauté about 3 - 4 minutes; add cumin and sauté another minute. 3. Add to crock pot. CROCK POT PUMPKIN AND TURKEY CHILI
This chili recipe is rich, hearty, and super easy. This doesn't have the same flavor as a Tex-Mex chili but the basic flavors are there. While eating, you can't really put your finger on what's different. The cumin and chili powder are just right, not too spicy. A great meal to throw in the Crock Pot on a busy day and let it do all the work for you.

- Brown the turkey in a large pan over medium-high heat.
- Toss the turkey in the Crock Pot and add in the bell pepper, onion, and garlic.
- Add in the tomatoes, beans, tomato sauce, pumpkin, and all of the spices.
- Stir everything together.
- Set to cook on high 6-8 hours or on low for 8-10. You can add a little chicken broth if it's too thick for your liking.
- Add any usual chili toppings such as sour cream, cheese, green onions, etc. It would be good with cornbread. We served it with sharp cheddar cheese, sour cream, and Cheddar Corn Muffins (the recipe is posted for these as well).

FALL TURKEY CHILI WITH PUMPKIN

- In a large skillet, sauté onions and bell peppers in olive oil until onions are translucent and fragrant, about 3-4 minutes. Add garlic and stir for about 30 seconds. Add in ground turkey and continue sautéing until turkey is browned. Drain excess oil, then transfer mixture to a large (4 quart or more) sauce pan. Stir in tomatoes, pumpkin, beans, corn and spices. Bring to a boil, stirring regularly. Once boiling, reduce heat and simmer for 20-30 minutes, stirring occasionally. Serve with sour cream, cheese, and cilantro as garnish.
