1 1/3 pounds 93% lean ground turkey
1/2 medium yellow onion, finely grated & squeezed of excess moisture
2 cloves garlic, finely chopped or grated
2 tablespoons mayonnaise (see Recipe Notes)
2 teaspoons Worcestershire sauce
1 1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
oil, for the grill grates
for serving, as desired: burger buns, cheese of choice, toppings of choice (e.g. lettuce, tomatoes, thinly sliced onion, pickles, etc.), condiments of choice (e.g. mustard, ketchup, et.c)

Steps:

  • or large plate with parchment paper, wax paper, or aluminum foil. Set aside.
  • Arrange a few paper towels out on a cutting board, set a box mixer on top. Run the onion along the sides of the box mixer to grate it into fine, shredded pieces. Once grated, use the paper towel to soak up excess moisture from the onion. Too much moisture will make the turkey burger mixture very difficult to handle, so do not skip the extra 30 seconds it takes to blot the moisture from the grated onion. If your onion seems very wet, you can also wrap it in paper towels & wring out the moisture over the sink.
  • Add the ground turkey, grated onion, garlic, mayonnaise, Worcestershire sauce, kosher salt & ground black pepper to a large bowl. Using your hands, mix until just combined. Overworking the turkey burger mixture will lead to tough burgers; take care not to overmix.
  • Divide the turkey burger mixture into 4 even portions, about 1/3 pound (5.3 ounces) each. Lightly coat your hands in oil (or mist with nonstick cooking spray) & form each portion into a 1-inch thick patty. The mixture will be very wet at this point, so there's no need to fuss over making your burgers look perfect - just aim for forming them into the general shape & size you're after. Set them on the prepared baking sheet.
  • the turkey burgers: Transfer the baking sheet with the turkey burger patties to the freezer. Chill for at least 20 minutes.
  • Meanwhile, as the turkey burgers chill, preheat the grill for medium-high direct heat grilling, about 450 degrees F. Just before placing the burgers on the grill, generously oil a wad of paper towel. Use grilling tongs to run the oiled paper towel over the grill grates, generously oiling the grates.
  • Remove the turkey burgers from the freezer. At this point they should be quite a bit easier to handle; finish forming them into 1-inch thick patties, using your thumb to create an indent in the center of each patty. Firmly press each turkey burger patty down onto the prepared grill grates. Grill the turkey burgers for 6 minutes per side, or until a thermometer inserted in the center of the turkey burgers registers 160 degrees F. If you'd like to add cheese to your turkey burgers, do so when there are 2 minutes left of grilling time.
  • Allow the turkey burgers to rest for a few minutes (residual heat will increase the internal temperature to 165 degrees F) before serving as desired. Enjoy!

The ever-popular double-patty burger gets the Southern treatment. Two thin grilled patties seasoned with Worcestershire sauce are topped with Cheddar, then nestled in a toasted potato bun with thin slices of sweet onion and a swipe of creamy pimento spread.

1 medium sweet white onion, thinly sliced
1 1/2 pounds ground beef
2 tablespoons plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
4 ounces cream cheese, at room temperature
One 4-ounce jar pimentos, drained and chopped
1/4 cup mayonnaise
Generous pinch cayenne pepper
Vegetable oil, for the grill grates
Eight slices Cheddar
4 potato hamburger buns, split
1/2 head iceberg lettuce leaves
Dill pickles, for serving
French fries, for serving

Steps:

  • Prepare a grill for medium-high heat.
  • Put the onions in a medium bowl and cover with ice water. Let the onions soak 10 minutes while you prep the patties and pimento sauce.
  • Combine the beef with 2 tablespoons of the Worcestershire sauce, 1 teaspoon salt and several grinds of black pepper in a medium bowl. Form the meat mixture into eight 3-ounce patties. A quick and easy way to do this is to divide the mixture into 8 piles. Place a pile on top of a deli container lid. Place the top of a second deli container lid against the pile, press down evenly and firmly and watch as a perfect patty forms. Repeat with the remaining meat mixture. Make a slight indentation in the middle of each patty with your thumb to keep the patty from shrinking as it cooks. Set aside.
  • Add the cream cheese, pimentos, mayonnaise, cayenne, 1/4 teaspoon salt and the remaining 1 teaspoon Worcestershire to a medium bowl and stir until well combined. Drain the onions and pat dry.
  • Lightly brush the grill grates with oil. Grill the patties, indentation-side up, until marked on the bottom, about 3 minutes. Flip and grill until marked on the second side and slightly firm, about 2 minutes more for medium rare. Top each patty with 1 slice cheese, cover the grill and cook until melted, about 1 minute. Remove to a plate and let rest for a few minutes. Toast the buns cut-side down, 1 to 2 minutes.
  • Top each bottom bun with 2 burgers. Top the burgers with lettuce and the onions and spread the inside of the top buns with the pimento sauce. Top the burgers with the top buns and secure with a toothpick if desired. Serve with dill pickle and French fries.

A nice version with a good homemade pimento cheese. This version for the pimento is a Zaar recipe, Recipe #349992. I made a few changes to mine with; no mustard, 1 teaspoon grated onion and a pinch of red pepper flakes; but that was just my personal taste. The recipe is good as is. And if you don't want to make your own, you can always buy some pre-made right in your grocery store - but the homemade is so good. A lighter turkey burger flavored with hickory smoked bacon, topped with sauteed onions, diced tomatoes and served on Texas toast. Serve with a dill pickle and potato chips. I happen to love "baked" potato chips right from the grocery store.

pimento cheese (see Zaar Tangy Homemade Pimento Cheese)
8 slices Texas toast thick bread (I just bought mine at the grocery store in the freezer section to make it easy. A few minutes in the)
4 large plum tomatoes, lightly seeded and chopped (You can use slices, but I love them chopped for this burger)
2 large onions, thin sliced
2 teaspoons butter
salt
pepper
1 1/2 lbs ground turkey (4 burgers)
4 slices hickory smoked bacon, diced fine
1 small onion, fine chopped
2 teaspoons minced garlic
1 large egg
1 teaspoon Worcestershire sauce
3/4 cup fresh breadcrumb (dried to me can make the burger dry)
1/4 cup fresh parsley
2 tablespoons Dijon mustard
salt
pepper
butter, to saute the burgers

Steps:

  • Cheese -- Now weather you make your own or buy some. Just make sure it is done before you start making your burgers.
  • Burgers -- In a small saute pan on medium heat add the bacon and slowly render until the bacon is cooked through and is golden brown. You don't want it crisp as you will be adding it directly to the burger meat. Remove the bacon to a plate lined with a paper to drain. Then in the same pan, drain all the bacon drippings and add the onion and garlic and cook just a minute, this will soften them up a bit.
  • In a large bowl, add the egg (beaten well), worcestershire, dijon mustard, pinch of salt (about 1/2 teaspoon) and pepper (about 1/4 teaspoon), the onion and garlic mix, bacon, bread crumbs, parsley, and mix well. Lastly, add in the turkey and mix lightly to combine. Over mixing the turkey can cause the burger to become tough. Make 4 large patties and place on a small cookie sheet lined with parchment or foil and freeze for 15-20 minutes. Freezing them slightly makes it easier to cook.
  • Onions -- As your burgers are in the freezer, saute the onions. Use that same pan you cooked the bacon, onion and garlic. The same flavors are fine for this. Add the butter, onions, salt and pepper and bring to medium heat and sweat (cook) the onions without browning until they are soft and translucent. They will take around 10 minutes. When they are done, turn off the heat and set to the side. The onions can also be done the day or night before and then reheated in the microwave in just seconds.
  • Tomatoes -- You can use slices, but I just like them chopped for this burger. To me it just works best and is just as easy to prepare. Cut in half and lightly squeeze over your sink, and most of the seeds and juice will come right out. Then chop and set to the side in a small bowl as you cook your burgers.
  • Texas Toast -- As the burgers cook prepare your Texas toast according to directions. My brand takes approximately 15 minutes in the oven, so I start that before I start to cook the burgers.
  • Burgers -- I add butter to either a saute or grill pan and bring to medium high heat. Add the chilled (but not frozen) burgers) and cook approximately 5-6 minutes per side. It is turkey, so you want the burger completely done. Remember make sure you get a nice crust on the first side before you flip the burger.
  • Sandwich -- This is just my version, but I like to add the onions on the first slice of toast, then the burger, top with the tomatoes and cheese sauce. Finish it with last slice of toast and slice in half.

There are a couple steps to ensure a crisp on the outside, juicy on the inside and all around delicious grilled turkey burger. Grated onion and barbecue sauce give the patties savoriness and provide additional moisture, so they don't dry out from the high heat of the grill. Coating the patties in a mixture of barbecue sauce and mayonnaise guarantees a seared and glazed exterior. If you'd like to turn these into cheeseburgers, simply drape sliced cheese - preferably Cheddar or pepper Jack - over the patties in the last two minutes of grilling and cover the grill.

1 medium yellow onion, peeled
1 pound ground turkey
1/4 cup store-bought or homemade barbecue sauce
2 tablespoons mayonnaise

4 hamburger buns
Toppings (such as shredded iceberg, sliced onion, tomato and pickles) and condiments (mayonnaise, barbecue sauce or mustard), as desired

Steps:

  • Heat the grill to medium-high. Lightly grease a plate and set aside. Coarsely grate 1/4 cup onion; reserve the remaining onion. In a medium bowl, mix the turkey, grated onion and 2 tablespoons barbecue sauce. Form 4 patties about 4 ½ inches wide (about 5 ounces each). Press a small dimple in the center of each patty, then place the burgers on the plate and refrigerate until firm (at least 5 minutes or, covered, up to 2 days).
  • Meanwhile, in a small bowl, stir together the remaining 2 tablespoons barbecue sauce with the mayonnaise; season with 1 teaspoon each of salt and pepper.
  • When ready to grill, dip the reserved onion in oil. Clean the grates with a grill brush, then grease the grates with the oiled onion. (This perfumes the grill and your patties.) Lightly coat the tops of the burgers with some of the mayo mixture (about 1/2 teaspoon per patty).
  • Grill the burgers, mayo side down, until well browned and patties release from the grates, 4 to 6 minutes. (If flare-ups occur, move to an area of the grill where there are no flames underneath. For a gas grill, close the lid between flips, listening and keeping an eye out for flare-ups.) Spread mayo mixture on the tops of the patties, then flip and grill on the second side until cooked through, another 4 to 6 minutes.
  • Transfer to a plate and let rest for at least 5 minutes. Grill the cut sides of the buns until toasted, 1 to 2 minutes. Build burgers on the buns with the patties and desired toppings and condiments.

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Combine turkey, red onion, sour cream, mustard, and steak seasoning in a bowl until well mixed. Form into four 3/4-inch thick patties. Drizzle with olive oil on both sides and season with salt.
  • Cook on the preheated grill until cooked through, about 5 minutes per side, laying Swiss cheese over burgers just before removing from the grill. An instant-read thermometer inserted into the center of the burgers should read at least 165 degrees F (74 degrees C).
