ASPARAGUS-TURKEY PASTA TOSS



Asparagus-Turkey Pasta Toss image

Since turkey is economical, we enjoy it in many ways year-round. This springtime favorite started out as a seafood recipe, but I adapted it.

Number Of Ingredients 12

4 ounces uncooked angel hair pasta
1 tablespoon butter
1 tablespoon all-purpose flour
1/2 teaspoon chicken bouillon granules
1/4 teaspoon pepper
1/8 teaspoon salt
3/4 cup milk
1/4 cup shredded Swiss cheese
3 tablespoons shredded Parmesan cheese
1 cup diced cooked turkey
10 fresh asparagus spears, cut into 1-inch pieces
1/2 cup sliced fresh mushrooms

Steps:

  • Cook pasta according to package directions. Meanwhile, in a small saucepan, melt butter. Stir in the flour, bouillon, pepper and salt until smooth; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Reduce heat; add cheeses and stir until smooth., Stir in the turkey, asparagus and mushrooms. Cook until heated through. Drain pasta and place in a serving bowl. Pour sauce mixture over pasta; toss gently to coat.

1/2 lb. penne pasta, uncooked
1 lb. ground turkey breast
1 small onion, chopped
1 red pepper, chopped
1 pkg. (1 oz.) TACO BELL® Taco Seasoning Mix
1 cup water
1 cup frozen corn
1/2 cup TACO BELL® Thick & Chunky Salsa
1 cup shredded lettuce
1 cup KRAFT Shredded Cheddar & Monterey Jack Cheeses
1/4 cup sour cream

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, brown meat with onions and peppers in large skillet. Stir in next 4 ingredients. Bring to boil; cover. Simmer on medium-low heat 3 min. or until heated through, stirring occasionally.
  • Drain pasta; place in large bowl. Add meat sauce; mix lightly. Top with remaining ingredients.

3 cups uncooked penne pasta
2 Italian turkey sausage links, casings removed
1 large sweet yellow pepper, cut into 1/2-inch strips
1 tablespoon olive oil
6 garlic cloves, minced
4 plum tomatoes, cut into 1-inch chunks
20 pitted ripe olives, halved
1/4 cup minced fresh basil
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1/4 cup shredded Romano cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, crumble sausage into a large skillet. Cook over medium heat until meat is no longer pink; drain and keep warm. , In the same skillet, saute pepper in oil until crisp-tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, olives, basil, pepper flakes, salt and sausage. Drain pasta. Stir into skillet and heat through. Sprinkle with cheese.

I like to cut out the fat in my recipes as much as I can, being a diabetic I have to watch what I eat but I do not want to cut out flavor. This is a healthy alternative to pork or beef. This is a quick one dish meal that's good and filling.

8 ounce(s) uncooked penne pasta
1 can(s) ( 14 oz ) no-salt - added stewed tomatoes
6 ounce(s) turkey kielbasa or smoked turkey sausage, cut into 1/4 inch slices
2 cup(s) ( 1 nch ) fresh asparagus pieces or broccoli florets
2 tablespoon(s) reduced fat pesto
2 tablespoon(s) grated parmesan cheese

Steps:

  • Cook pasta according to package directions, omitting the salt.
  • Meanwhile, heat tomatoes in a medium saucepan, add turkey kielbasa. Stir in asparagus and pesto, cover and simmer about 5-6 minutes or until asparagus is crisp-tender.
  • Drain the pasta, toss with tomato mixture and sprinkle with cheese.
