ASPARAGUS-TURKEY PASTA TOSS
Since turkey is economical, we enjoy it in many ways year-round. This springtime favorite started out as a seafood recipe, but I adapted it.

Steps:
- Cook pasta according to package directions. Meanwhile, in a small saucepan, melt butter. Stir in the flour, bouillon, pepper and salt until smooth; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Reduce heat; add cheeses and stir until smooth., Stir in the turkey, asparagus and mushrooms. Cook until heated through. Drain pasta and place in a serving bowl. Pour sauce mixture over pasta; toss gently to coat.

- Cook pasta as directed on package, omitting salt.
- Meanwhile, brown meat with onions and peppers in large skillet. Stir in next 4 ingredients. Bring to boil; cover. Simmer on medium-low heat 3 min. or until heated through, stirring occasionally.
- Drain pasta; place in large bowl. Add meat sauce; mix lightly. Top with remaining ingredients.

- Cook pasta according to package directions. Meanwhile, crumble sausage into a large skillet. Cook over medium heat until meat is no longer pink; drain and keep warm. , In the same skillet, saute pepper in oil until crisp-tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, olives, basil, pepper flakes, salt and sausage. Drain pasta. Stir into skillet and heat through. Sprinkle with cheese.

TURKEY SAUSAGE AND PASTA TOSS
I like to cut out the fat in my recipes as much as I can, being a diabetic I have to watch what I eat but I do not want to cut out flavor. This is a healthy alternative to pork or beef. This is a quick one dish meal that's good and filling.

- Cook pasta according to package directions, omitting the salt.
- Meanwhile, heat tomatoes in a medium saucepan, add turkey kielbasa. Stir in asparagus and pesto, cover and simmer about 5-6 minutes or until asparagus is crisp-tender.
- Drain the pasta, toss with tomato mixture and sprinkle with cheese.
