From Something Different Country Store and Deli, Urbanna, Virginia. A real Virginia country-cured ham such as Smithfields is best in this recipe.

3 cups chopped smoked turkey
2 cups finely chopped cooked country-cured ham
6 hard-boiled eggs, peeled and chopped
1/2 cup finely diced onion
1/2 cup finely chopped celery
1/3 cup prepared yellow mustard
1 cup mayonnaise
1/2 cup sweet pickle relish
1 teaspoon garlic granules
1 tablespoon dried parsley
seasoning salt, to taste (use with caution)
fresh ground black pepper, to taste
10 hoagie rolls, toasted if desired
lettuce leaf

Steps:

  • In a large mixing bowl, combine the first 10 ingredients; taste salad.
  • Carefully season to taste (if needed) with salt and pepper--country ham is plenty salty so you may not need any salt.
  • Cover and refrigerate for several hours.
  • Spread about 1 cup salad on bottom half of toasted rolls; top with a few crisp lettuce leaves, cover with roll tops and serve.

5 cups cooked wild rice
1/2 cup Western salad dressing
1 cup cubed fully cooked ham
1 cup cubed cooked turkey
1 cup thinly sliced celery
1 cup frozen peas, thawed
2/3 cup thinly sliced radishes
1/2 cup finely chopped onion
1 cup mayonnaise
2 teaspoon prepared mustard
1/4 to 1/2 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine rice and dressing; cover and chill overnight. Add ham, turkey, celery, peas, radishes and onion. Combine mayonnaise, mustard, curry, salt and pepper; mix well. Stir into salad. Cover and refrigerate for at least 2 hours.

3-3/4 cups uncooked bow tie pasta
1 cup chopped fully cooked lean ham
1 cup chopped cooked turkey breast
1 cup shredded reduced-fat cheddar cheese
1/4 cup chopped onion
1/4 cup chopped celery
1 hard-boiled large egg, chopped
1 cup fat-free mayonnaise
1/4 cup picante sauce
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon sugar

180g/6oz bag Continental salad
2 ripe pears
good handful walnut halves
3 slices turkey
3 slices ham
1 small red onion , finely chopped
1 tbsp red wine vinegar
2 tsp clear honey
125g/4½oz pot low-fat yogurt

Steps:

  • Tip the bag of salad onto a large platter. Quarter, core and slice the pears, and roughly chop the walnuts. Scatter the pears and walnuts over the salad leaves. Cut the turkey and ham into strips and scatter over the top.
  • Mix together all the dressing ingredients in a small bowl, then drizzle over the salad just before serving.
