1-1/2 cups MIRACLE WHIP Dressing
6 hard-cooked eggs, chopped
1 stalk celery, chopped
1/2 cup CLAUSSEN Sweet Pickle Relish
1/4 cup finely chopped onions
1 Tbsp. celery seed
6 cups chopped leftover cooked dark and white meat turkey

Steps:

  • Mix all ingredients except turkey in large bowl. Gently stir in turkey.
  • Cover and refrigerate at least 1 hour before serving.

I love making this delicious salad with my left over turkey. I have mine on a lettuce leaf, or it can be served in bread. It's delicious on rye. Enjoy!

1 c mayonnaise
6 hard boiled eggs, chopped
1/2 c bread and butter pickles, diced or sweet pickle relish
2 stalk(s) celery, diced
1/2 c green onion, chopped
1 1/2 tsp celery seed
1/2 tsp dried dill
1 Tbsp parsley flakes
3 Tbsp roasted red pepper strips, chopped
1 Tbsp dijon mustard
5 c turkey, cooked and diced
salt and pepper to taste

Steps:

  • 1. In a bowl, lightly toss together, chopped eggs, diced pickles, celery, green onion, celery seed, parsley, roasted red peppers and turkey.
  • 2. In another bowl, mix mayonnaise with the dill and Dijon mustard. Stir the mayonnaise mixture into the turkey / egg mixture until blended well. Salt and pepper to taste. Cover and chill till ready to serve.

Poached Egg Whites, Turkey Bacon Salad image

Yield Makes 2 servings

Number Of Ingredients 9

1 cup white vinegar
1 teaspoon salt
4 egg whites
4 slices turkey bacon, cut into 1/2-inch strips
2 tablespoons olive oil
1 tablespoon vegetable oil
1 tablespoon red wine vinegar
2 teaspoon whole-grain mustard
4 cups frisée, picked and rinsed

Steps:

  • Add white vinegar and salt to a large pot of water; bring to a simmer. Slide an egg white into pot slowly; let cook 30 seconds before adding another egg white.
  • Repeat with remaining egg whites. Poach until opaque, 2 to 3 minutes each; with a slotted spoon, move to a plate.
  • In a medium pan over low heat, sauté turkey bacon until crisp, 7 to 10 minutes. Set aside.
  • In a microwave-safe bowl, whisk together oils, red wine vinegar and mustard; season with salt and black pepper. Nuke vinaigrette 45 seconds. Toss frisée and turkey bacon with warm vinaigrette.
  • Divide frisée mixture between 2 bowls and create a nest in each; add 2 poached egg whites to each nest. Season with salt and black pepper and serve immediately.
