BROCCOLI TURKEY BAKE
This is a nice easy recipe for leftover turkey, or can be made with cooked boneless, skinless chicken breast.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
- In a 9x13 inch baking dish combine turkey, broccoli, cheese and cooked rice.
- In a small bowl combine crushed crackers and melted butter. Spread over rice mixture.
- Bake in preheated oven for 20 to 30 minutes, or until crackers are crispy.

When wondering what to make with leftover turkey, give this broccoli casserole a try. It's savory, creamy, cheesy and really easy to make. The Swiss cheese and butter cracker crumbs on top are a nice finish to the dish. This is a filling casserole and a great way to use Thanksgiving leftovers.

Steps:
- 1. Heat oven to 350. Grease 9x13" baking dish.
- 2. Put in a large bowl all ingredients EXCEPT cheese; stir.
- 3. Add 4 oz cheese and stir again.
- 4. Pour into greased 9x13" pan.
- 5. Cover with aluminum foil. Bake for 45-50 minutes until rice is done.
- 6. Uncover and top with crushed crackers and 4 oz of cheese.
- 7. Bake another 10 minutes until cheese is melted and browned.
TURKEY/HAM BAKE WITH BROCCOLI
A casserole dish with turkey, ham, broccoli combined with a creamy cheese sauce and baked. A friend brought this to a potluck dinner and it was very good. You can omit the ham and use all turkey, and use wine in place of the chicken broth.

- Preheat oven to 350 deg.
- In a small saucepan, melt butter over low heat. Add green onions; saute for about 1 minute.
- Add flour, cook, stirring, for 1 minute longer.
- Slowly stir in half-and-half and chicken broth.
- Simmer, stirring for about 10 minutes, until smooth and thickened.
- Add swiss cheese, mustard, salt and pepper. Stir until cheese is melted.
- Arrange cooked broccoli in a buttered 8x10 inch shallow baking dish. Place sliced turkey and ham over broccoli. Sprinkle with parmesean cheese and paprika.
- Bake at 350 deg. for 15 minutes.

- preheat oven 350 degrees.
- In 9x13 cake pan, spread the diced turkey on bottom. Layer broccoli on top of turkey. Mix together cream of mushroom soup and mayo and layer mixture on top of broccoli. Sprinkle cheese on top of mixture.
- Bake 35 minutes. Remove from oven and add durkee fried onions. Return to oven for 5 more minutes.
