8 slices bread (I like Cibatta or a good Italian bread)
16 slices smoked turkey, sliced (deli is fine, but not shaved or chipped)
4 plum tomatoes, lightly seeded and roasted
4 tablespoons mayonnaise
1 teaspoon olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper
4 ounces gouda cheese, smoked (approximately 1 cup)
8 slices bacon (smoked or hickory)
2 cups arugula
1 avocado, thin sliced

Steps:

  • Tomatoes -- Roasting the tomatoes. Just cut in quarters (de-seed, just lightly squeeze to get rid of most of the seeds), drizzle with olive oil, salt and pepper and roast at 400 for approximately 15 minutes until somewhat soft but not over done. Remove and let cool. Once cool dice fine and mix with the mayonaise, some salt and pepper. Cover and chill.
  • Bacon -- Honestly, just cook in the microwave. Put on a paper plate topped with a paper towel topped with the bacon and then top with another paper towel and cook 3-4 minutes until crisp. Remove and let cool as you build your sandwich.
  • Sandwich -- Spread the tomato mayonaise on the bread, top with cheese, 2 slices of bacon, arugula, avacado and turkey, more cheese and top with another slice of bread spread with the tomato mayo. Put either on a lightly oiled grill pan, panini press or just a regular non stick pan. If you don't have a panini press, just weight down sandwich with a heavy pan or a brick wrapped in foil. Anything heavy will work. Sometimes I will just add a couple of heavy cans to a small pan and it works just fine. Just something to weight them down a bit. Cook until golden brown. Let cool a few minutes and slice.

2 tablespoons extra virgin olive oil (plus extra for drizzling)
5 slices smoky bacon
1 small leek
3/4 lb ground turkey breast
1 tablespoon McCormick's Montreal Brand steak seasoning
6 -8 soft sun-dried tomatoes, chopped
1 vine-ripe tomatoes, thinly sliced
salt
6 slices white bread
1/2 cup soft cheese spread with herbs (such as Alouette or Boursin)
1/4 cup cream or 1/4 cup half-and-half
black pepper
4 lettuce leaves (green leaf or bibb)

Steps:

  • Heat a nonstick skillet with a drizzle of oil over medium to med-high heat.
  • Chop one slice of bacon and add it to the pan.
  • While the bacon cooks, trim the tough green tops from the leek; halve the leek lengthwise, and thinly slice it into half-moons.
  • Place the slices in a colander and rinse vigorously with running water, separating the layers to release the grit.
  • Dry the leeks on a clean kitchen towel; and add them to the browned chopped bacon.
  • Wilt the leeks for 2-3 minutes; then transfer them and the bacon pieces to a plate to cool.
  • Return skillet to stove over low heat; add in 2 tablespoons oil.
  • Put turkey in a bowl; add in grill seasoning, sun-dried tomatoes, and cooled-to-handle leeks and bacon; mix well.
  • Form mixture into 2 very large patties no thicker than 1 inch (the patties will hang just off the sides of the bread once cooked).
  • Increase heat under oil; add in the patties; cook for 6 minutes on each side.
  • Heat a second skillet over med-high heat; add in the remaining bacon slices; cook bacon until crisp; transfer to paper-towel lined plate to drain.
  • Season sliced tomatoes with salt.
  • Place the sliced bread under the broiler; toast for 1 minute on each side.

1 pound Butterball Ground Turkey (fresh or frozen)
1/4 cup finely minced white or yellow onion
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon kosher salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
10 slices cooked bacon
4 slices cheddar, American, or Swiss cheese (or your favorite), or to taste
leafy lettuce, to taste (I used organic romaine)
1 to 2 tomatoes, sliced thin
4 buns or rolls for serving, lightly toasted if desired
ketchup, mustard, pickles, or favorite condiments, for serving

Steps:

  • Preheat grill to medium-high heat (or preheat a grill pan or cast iron skillet indoors) and oil the grill grates.
  • To a large bowl, add the turkey, onion, ketchup, Worcestershire sauce, salt, pepper, and stir to combine.
  • Form 4 patties; they will be very soft. If necessary, put them in the fridge as necessary to chill and firm up a bit.
  • Place patties on the grill and cook for about 5 minutes on each side, or until burgers are cooked through.
  • In the last approximately 2 minutes of cooking, top each burger with about 3 slices bacon (Tip - Buy precooked bacon and simply microwave it for about 1 minute to cook), cheese, and close the grill lid so the cheese melts.
