TURKEY AND WHITE BEAN CHILI

Steps:
- In a large kettle, soak beans in cold water to cover by 2 inches overnight. Drain beans in a colander and return to kettle with enough water to cover by 2 inches. Cook beans at a bare simmer until just tender, about 1 hour, and drain in a colander.
- In a skillet, heat the oil and saute the onion and jalapeno until soft and beginning to caramelize, 4 minutes. Add the garlic and cook, stirring, for 2 minutes. Add the ground turkey, Southwest Essence, chili powder, salt, cumin, oregano, and bay leaf and cook, stirring occasionally, until turkey is browned and cooked through, 6 minutes. Add the cornmeal and cook, stirring, for 2 minutes. Add the chicken broth, canned tomatoes, canned chiles, and cilantro stems and stir to combine. Bring to a boil, reduce heat to a simmer, and cook, uncovered, for 45 minutes, stirring occasionally. After it has cooked for 30 minutes, add the cooked beans. Add the heavy cream and cilantro leaves and cook, stirring occasionally, for 15 minutes longer.
- Serve the chili in deep bowls, garnished with dollops of sour cream, grated Cheddar cheese, and green onions to taste.
- Combine all ingredients thoroughly.

- In a large, deep, skillet, heat oil over medium-high heat. Add ground turkey; season with salt and pepper. Cook, breaking up turkey with spoon, until browned, 9 minutes.

- Add cannellini beans, chicken broth, and water; bring to boil. Reduce heat; simmer until thick, 15 to 20 minutes.

- Heat canola oil in a dutch oven or deep skillet over medium high heat.
- Add ground turkey and season with salt and pepper.
- Cook until browned, stirring to break up turkey.
- Add chopped onion and minced jalapeno and cook until soft, about 3 minutes.
- Stir in ground cumin and tomato sauce and cook for 2 more minutes.
- Add the cannellini beans, the broth and the water.
- Bring to a boil.
- Reduce heat and simmer until thicker, about 20 minutes.

- In a large Dutch oven or other heavy pot, heat oil over medium-high. Add onion; cook until softened, 8 minutes. Add garlic, chiles, rosemary, cumin, oregano, and cayenne and cook until fragrant, 2 minutes; season with salt. - Preheat oven to 350 degrees F (175 degrees C).
- Wrap the sausages in foil, place them on a baking sheet, and bake for 30 minutes.
- Heat olive oil in a large cast-iron pan over medium-high heat. Cook and stir turkey in hot oil until evenly browned, about 5 minutes.
- Season turkey with 1 tablespoon cumin, 1 1/2 teaspoons garlic powder, salt, and black pepper. Add onions and garlic to the turkey; continue to cook and stir until onion is softened, 5 to 7 minutes.
- Pour in the white kidney beans and chicken broth. Season with 1 tablespoon cumin and 1 1/2 teaspoons garlic powder. Simmer over medium heat, stirring occasionally, for 30 minutes.
- Mix in the chopped jalapeno and the whole jalapeno peppers, if desired. Remove the sausages from the oven and cut them into bite-sized pieces. Stir the sausage into the chili.
- Cook the chili until the whole jalapeno peppers are tender and chili is thick, about 15 minutes more.

- Heat the vegetable oil in a large skillet over medium heat, and pan-fry the turkey breast until the meat is no longer pink, about 10 minutes per side. Transfer the turkey breast into a bowl to cool; shred it with 2 forks. Set the turkey meat aside. In the same skillet, cook the onions and garlic over medium heat until the onion is translucent, about 5 minutes; scrape the onions and garlic, along with any drippings, into the bowl with the turkey.
- Place 1 can of cannellini beans, the hominy, and the chicken broth into a slow cooker. With an immersion blender, blend the mixture until smooth. Transfer the shredded turkey, onions, garlic, 3 more cans of cannellini beans, the cilantro, cumin, and Cajun seasoning into the slow cooker, and stir to combine. Wearing gloves, cut off the serrano chile stems, split the chiles, and scrape the seeds and membranes from 2 of the chiles with a spoon. Mince all 3 chiles. For milder flavor, seed and remove membranes from all the chiles. Mix the serrano chiles into the soup.
- Cover the cooker, and cook on Low setting for 4 to 6 hours or High setting for 2 to 3 hours.

TURKEY SAUSAGE AND WHITE BEAN CHILI
I came up with this recipe by trying to mix ingrediants together that were not only tasty and good for you but easy to make for my family after work. My husband and four year old LOVE it! I serve it with garlic and cheese Bisquick drop bisquits. I don't add any salt to this chili because the broth and sausage are salty enough.

- Heat olive oil in large soup pot.
- Cook onions until translucent.
- Add sausage and brown well.
- Add garlic, sage, parsely and celery.
- Deglaze pot with chicken broth until all sausage pieces are scraped from bottom of pot.
- Add remaining chicken broth and simmer.
- Add 1 can of northern beans and 1 can of cannelini beans. (Strained slightly in can. Leave some of the juice.).
- Take the remaining can of cannelini beans, strained slightly and pour into bowl. Use your hands and "mash the beans." It's messy but adds a some starchy thickness to the chili.
- Add smashed beans to the pot and stir well.
- Chop just the florets of the brocolli into small pieces and add to the pot.
- Simmer until ready to serve. (About 20 minutes.)
- You can substitute chopped spinich for the brocolli and/or add cheese when serving.

- Heat oil in a Dutch oven over medium heat; add in onions and saute for 8-10 minutes or until lightly browned (adding in the garlic the last 3 minutes of cooking).
- Add in the oregano, cumin and chili powder, chili flakes and jalapeno pepper (if using) cook for 1-2 minutes.
- Add in tomato paste and stir for 1 minute.
- Add in ground turkey; cook until no longer pink.
- Stir in bay leaf and cocoa powder, then add in undrained diced tomatoes, tomato sauce, beef broth and beer; bring to a boil and simmer on top of the stove for about 15 minutes, stirring occasionally, then season with salt and pepper.
- Set oven to 325 degrees.
- Place in oven uncovered, and cook for about 1 hour, stirring occasionally (the longer you cook this in a low heat oven the richer and thicker it will be, you can even cook it for even 2 hours!).
- After 1 hour cooking add in drained beans, and season with more salt if desired; return to oven and cook uncovered for another 35-40 minutes.
- Sprinkle the cheddar cheese on top the last 5-6 minutes of cooking time.
