PENNE PASTA WITH TOMATO TUNA SAUCE



Penne Pasta with Tomato Tuna Sauce image

An easy and delicious penne pasta dish with tomato tuna sauce. It's made with canned tuna and kalamata olives for a quick fuss free dinner anytime of the week.

Number Of Ingredients 12

2 tablespoon extra virgin olive oil
2 cloves of garlic (minced)
1 small onion (chopped)
1/4 teaspoon crushed chilli pepper
660 ml jar Passata (Italian strained tomatoes I used San Marzano)
1 teaspoon dried basil
salt and pepper to taste
2 x 85 grams canned oil packed tuna (drained or 190 gram jar of tuna filets.)
1/4 cup Kalamata olives (pitted and slivered)
2 sprigs of basil
450 grams Penne Rigate (or other pasta of your choice)
salt (for cooking water)

Steps:

  • Heat the oil in a medium sized sauce pot over medium low heat.
  • Sauté the garlic, chopped onions and the crushed chilli pepper just until the onions are soft, while stirring often for about 5 minutes.
  • Add in the passata (Italian strained tomatoes), dried basil, salt and pepper and stir well.
  • Fill the bottle of passata three quarters full with water. Give it a good swirl and add this to the sauce. Stir well.
  • Bring the sauce to a boil then lower the heat, cover and simmer for about 45 minutes or until the sauce thickens and the sweet concentrated flavors of the tomatoes come through.
  • While the sauce is slowly simmering, bring a large pot of water to boil.
  • Salt the water and cook the pasta according to package directions.
  • While the pasta cooks, add the drained tuna, slivered kalamata olives and fresh basil to the tomato sauce. Allow to simmer till the pasta is al dente.
  • When ready, drain the pasta and toss with some of the tomato sauce.
  • Plate the pasta and top with more sauce and a sprinkle of basil.
  • Serve while still warm.

This canned tuna pasta recipe is quick, healthy, and comforting. The perfect recipe when you don't have a lot in your pantry!

2 tablespoons olive oil
2 large cloves garlic (minced)
1 (5 ounce) can tuna, drained (I prefer tuna packed in oil)
1 teaspoon lemon juice
1 tablespoon fresh parsley (chopped)
Salt & pepper (to taste)
4 ounces uncooked pasta (I used spaghetti)

Steps:

  • Boil a salted pot of water for your pasta and cook it al dente according to package directions. Prep your other ingredients while it cooks.
  • When the pasta is close to being ready, add the oil to a small pan over medium heat. Once the oil is hot, add the garlic and cook it for 30 seconds.
  • Stir in the tuna, lemon juice, and parsley. Let it heat through.
  • Once the pasta is done, add some of the pasta water (a couple tablespoons) to the sauce and then drain the pasta and toss with the sauce. Season with salt & pepper as needed. Optional: serve pasta with freshly grated parmesan cheese and lemon zest.

1 tablespoon olive oil
1 onion, chopped
2 cloves crushed garlic
1 tablespoon capers
1 (14.5 ounce) can crushed tomatoes
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley
¼ teaspoon red pepper flakes
2 (5 ounce) cans tuna, drained
1 (16 ounce) package dry pasta

Steps:

  • In a large saute pan, heat oil over low heat. Add onion and garlic; cook and stir until onion is tender. Stir in capers, tomatoes, lemon juice, and parsley. Season with red pepper flakes to taste. Simmer gently for 3 minutes to thicken sauce. Fold in tuna, and heat through.
  • While sauce is cooking, add pasta to a large pot of rapidly boiling water; cook till just tender. Drain well.
  • Toss pasta with sauce, and serve.

12 ounces spaghetti
Coarse salt and freshly ground pepper
10 ounces tuna packed in olive oil (from 1 to 2 tins)
3 cloves garlic, thinly sliced
2 tablespoons capers, preferably salt-packed, rinsed and drained
Pinch of red-pepper flakes, plus more for serving
1 teaspoon grated lemon zest, plus 1 tablespoon juice (from 1 lemon)
2 tablespoons extra-virgin olive oil
1/4 cup coarsely chopped fresh flat-leaf parsley leaves

Steps:

  • Cook pasta in a large pot of generously salted water until al dente. Reserve 1 1/2 cups pasta water; drain.
  • Heat a large skillet over medium heat. Add tuna with its oil and garlic and cook, stirring a few times, until garlic is golden in spots, about 5 minutes. Stir in capers and pepper flakes and cook, 30 seconds. Add 1 cup reserved pasta water; bring to a simmer. Add cooked pasta and simmer, tossing a few times, until liquid is reduced to a sauce that coats pasta.
  • Remove from heat and toss in lemon zest and juice, oil, and parsley; season with pepper. Add more pasta water, a few tablespoons at a time, until pasta is evenly coated. Serve, sprinkled with more pepper flakes.

This is my version of a tuna pasta dish with capers, anchovies, and tomatoes. I make it at least once a week as it is my husband's favorite and he proclaims it's restaurant quality. You can easy double the recipe if you're cooking for more people.

½ (16 ounce) box penne
1 (5 ounce) can tuna, packed in olive oil, drained
¼ cup olive oil, divided
¼ cup finely chopped fresh basil
½ large organic lemon, juiced and zested
salt and ground black pepper to taste
1 ounce canned anchovy fillets, drained
2 teaspoons capers
1 clove garlic, thinly sliced
1 (14.5 ounce) can diced tomatoes
½ bunch fresh parsley, finely chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Empty tuna into a bowl and mash with a fork while pasta is cooking. Mix with 2 tablespoons olive oil, basil, lemon juice, lemon zest, salt, and pepper.
  • Heat the remaining 2 tablespoons olive oil in a large skillet and fry the anchovies for 3 minutes. Add capers and garlic; cook, stirring constantly, for an additional 3 minutes. Add tuna mixture and tomatoes; simmer sauce for about 5 minutes.
  • Drain pasta and add to the sauce. Mix well. Stir in parsley before serving.

This is an "Oh so easy" way to have fresh sauce for dinner, even if you are just coming in the door from work! This is my adaptation of my Italian mother-in-law's sauce that she loved to cook all day. Makes a wonderful Lenten dinner!!

1 large yellow onion
1/2 cup fresh parsley, chopped
1/2 cup fresh basil, chopped

2 (29 ounce) cans crushed tomatoes (I prefer to use redpack brand)

Steps:

  • Chop onion and sauté in oil.
  • Add parsley, basil, garlic, salt and pepper.
  • Add tuna, and simmer for about 5 minutes.
  • Add tomatoes, juice and all, If you don't care for the consistency of these tomatoes, you can puree them in the food processor or use tomato puree instead Simmer 20 minutes.
  • Pour over pasta.
