TUNA CASSEROLE WITH CHEESE SWIRLS

Steps:
- Heat oven to 425*.
- Cook and stir onion and pepper in shortening in saucepan until tender. Stir in 1/4 cup baking mix. Add soup; gradually stir in milk. Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute. Stir in tuna, peas and lemon juice.
- Pour mixture into ungreased baking dish, 11-1/2x 7-1/2x 1 1/2". Keep hot in oven while preparing biscuits.
- Stir 2 cups baking mix and the water to a soft dough. Gently smooth dough into a ball on floured cloth-covered board. Knead 5 times.
- Roll dough into a rectangle, 15x9 inches; sprinkle with cheese. Roll up, beginning at wide side. Seal well by pinching edges into dough. Cut into twelve 1 1/4-inch slices. Place slices cut side down on hot tuna mixture.
- Bake 20 to 25 minutes.
MY SWISS CHEESE TUNA CASSEROLE
Wow, this is not your ordinary tuna casserole recipe. The traditional casserole is brought to a whole new level in this recipe (almost a little fancy). From the albacore tuna to the Swiss cheese, the flavor is a bit richer in this casserole. We loved the texture from big chunks of mushrooms. Sweet peas balance out the savoriness...

Steps:
- 1. Slice the mushrooms and dice the onions. Sauté in butter over medium heat.
- 2. Add Worcestershire sauce. I use quite a bit.
- 3. Sauté stirring frequently until done.
- 4. While the mushrooms and onions are cooking, boil the eggs and prepare the noodles as directed. Cook only to al dente firmness so they don't become mushy in the oven.
- 5. When mushrooms and onions are done, add tuna and favorite seasonings. Cook on low for a couple of minutes stirring frequently. In the same pan that you sauteed the mushrooms and onions in, add the soup and milk. Stir over low heat until smooth.
- 6. Drain noodles and return to pot. Add tuna mixture and coat the noodles well. Put eggs into an egg slicer. Cut lengthwise. Then turn again and cut. Add to noodles.
- 7. After the eggs are stirred in, add peas. Now is a good time to add more seasoning. Stir to blend ingredients.
- 8. Transfer mixture to a 9x13 baking dish.
- 9. Top with Swiss cheese slices.
- 10. Tightly cover with foil and bake at 350 for 30 to 45 minutes, or until bubbly and cheese is melted.
- 11. Remove foil and cover with French fried onions. Return to oven for a few minutes until the onions are browned (about 10 minutes).
- 12. Make sure you let it cool for a while. It will be lava hot!! I used to make this with Colby jack cheese and it's really good that way too!
CREAMED TUNA & CHEESE SWIRLS
Grew up with my mom making this recipe for dinner alot. Now I make it a lot for my kids. It is just good ole' comfort food in my home.

Steps:
- Combine flour, baking powder and salt; cut in shortening till mixture resembles coarse meal. Add milk all at once and mix just until dough follows fork around bowl.
- Turn out on lightly floured surface; knead gently 30 seconds. Roll or pat 1/2 inch thick and spread with cheese. Roll as for jelly roll and cut in 1 inch slices. Bake on sprayed baking sheet at 450 for 12-15 minutes.
- Meanwhile make sauce by combining flour, salt, pepper and milk in saucepan over medium heat. Stir with wire whisk until flour is dissolved. Cook over medium heat until sauce thickens. Add tuna and stir to combine. Serve sauce over cheese swirls.

- In large skillet, heat oil over medium heat, saute onion and celery until onion is soft. Add remaining ingredients except biscuits, heat thoroughly.
- Transfer mixture to 1 1/2 quart casserole. Arrange biscuits around top edge of dish.
- Bake at 400 degrees in oven for 10 to 15 minutes or until biscuits are golden brown.
CHEESE-SWIRLED TUNA CASSEROLE WITH GREEN PEAS AND MINT
Steps:
- Preheat oven to 425 degrees. Lightly butter 11/2 to 2-quart casserole and set aside.
- Tuna Mixture:
- Stir-fry onion in butter in a large heavy skillet over moderate heat, until lightly browned, about 5 to 8 minutes. Blend in flour and salt, then broth. Add milk and heat, stirring constantly until thickened and smooth, 3 to 5 minutes. Mix in tuna, sour-cream, pimiento and lemon juice; set off heat, but keep warm.
- Cheese Swirl Biscuits:
- Sift flour, baking powder, and salt together into a large mixing bowl. Add shortening and cut in with pastry blender until texture of coarse meal. Add milk and fork briskly to make soft dough. On a lightly floured surface, roll the dough into a 12 by 8 by 1/4-inch rectangle. Scatter cheese evenly on top, then jelly-roll style, starting from short end, to form roll 8 inches long. With floured sharp knife, slice 1-inch thick. Spoon tuna mixture into casserole. Space biscuits evenly on top, arranging so spiral designs show. Bake, uncovered, until biscuits puff and brown slightly -- about 20 minutes. In a saucepan with 1/2 cup boiling water add frozen peas, follow directions on the back of package. Drain. In a glass bowl, toss peas, with butter and dried mint.
