6 ounces fresh baby spinach (about 7 cups)
1/4 pound sliced deli smoked turkey, cut into strips
2/3 cup sliced baby portobello mushrooms
1 hard-boiled large egg, chopped
1/3 cup sliced red onion
1/4 cup walnut halves
1/4 cup dried cranberries
4-1/2 teaspoons olive oil
1 tablespoon maple syrup
1-1/2 teaspoons finely chopped shallot
1-1/2 teaspoons red wine vinegar
1-1/2 teaspoons Dijon mustard
1 small garlic clove, minced

Steps:

  • In a large salad bowl, combine the first 7 ingredients. In a small bowl, whisk the remaining ingredients. Drizzle over salad; toss to coat.

2 cups (12 ounces) shredded cooked turkey, chicken breast or chicken breast tenders
1 6-ounce bag baby spinach
6 white or cremini mushrooms, thinly sliced
1 cup cooked wild rice
2 tablespoons chopped walnuts
1 to 2 hard boiled eggs (to taste), finely chopped (optional)
2 tablespoons chopped chives
1 to 2 tablespoons chopped fresh herbs such as parsley, tarragon or marjoram
2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar, tarragon vinegar or sherry vinegar
1 teaspoon Dijon mustard
Salt and freshly ground pepper
1 small garlic clove, pureed
1/3 cup extra virgin olive oil
2 tablespoons plain low-fat yogurt

Steps:

  • Combine all of the salad ingredients in a large salad bowl. Whisk together the lemon juice, vinegar, Dijon mustard, salt, pepper, garlic, olive oil and yogurt. Toss with the salad just before serving.

2 cups sliced fresh strawberries
1 small sweet yellow pepper, julienned
4 green onions, sliced
DRESSING:
1/4 cup red wine vinegar
3 tablespoons olive oil
2 tablespoons water
4 teaspoons honey
1/2 teaspoon dried minced onion
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place first 5 ingredients in a large bowl. Place dressing ingredients in a jar with a tight-fitting lid; shake well. Drizzle over salad; toss to combine. Serve immediately.

I originally had this salad while I attended a Pampered Chef party. This was a very pretty salad, and it had lots of flavor; especially the home-made salad dressing. My family loves this salad!! Prep time in making this salad is questionable.

Number Of Ingredients 13

6 tablespoons apricot preserves
4 tablespoons cider vinegar
4 teaspoons vegetable oil
4 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces smoked turkey, deli-meat torn into bite size pieces
1/2 cup diced red bell pepper
1 mango, cut into 1/2-inch to 3/4-inch cubes (about 1 cup)
3 hard boiled egg whites, coarsley chopped (discard the yolks)
1/4 cup chopped red onion
6 ounces fresh spinach
sliced almonds, add desired amount

Steps:

  • For dressing - In a jar with a tight fitting lid, shake all the dressing ingredients together until blended. Cover, and chill the dressing in the refrigerate until ready to use.
  • For salad - In a large bowl, add the salad ingredients, then add to individual salad bowls. Shake dressing vigorusly; pour desired amount of dressing over the salad bowls; tossing gently to coat.
  • Sprinkle sliced almonds over the salad, if desired, and serve immediately.
  • Serves: 4 (adult size servings).
  • Note: Peaches and nectarines can be substituted for the mango.
