I just love this with some nice big prawns. It is one of those recipes that you can substitute any fruit you wish.

Number Of Ingredients 15

2 ripe avocados
1 lemon, juice of
1 lime, juice of
2 ripe tomatoes
2 nectarines or 2 peaches
4 cups lettuce greens, approx
2 kiwi fruits
2 tablespoons unsalted dry roasted peanuts
3 tablespoons grated ginger
1/4 cup chopped basil leaves
1/4 cup fresh lime juice
3 tablespoons Thai fish sauce
3 tablespoons brown sugar
3 tablespoons no flavour cooking oil
1 chili, finely sliced

Steps:

  • Pit, peel and slice the avocados, squeeze on a little lemon or lime.
  • Thinly slice the tomatoes.
  • Peel the mangoes and cut the flesh from the pits in large sections and slice thinly.
  • Peel and slice the kiwi fruit.
  • Place the peanuts in a food processor and chop finely.
  • Combine the dressing ingredients.
  • In a large bowl put in all ingredients, pour over dressing, toss well.
  • Place on serving platter or dinner plates.
  • Sprinkle with peanuts and serve immediately.

An easy salad to make with a bag of salad greens, pineapple, bacon bits, nuts and toasted coconut. Use fresh pineapple, if you can, and substitute toasted almonds for the macadamia nuts, if desired.

6 slices bacon
¼ cup pineapple juice
3 tablespoons red wine vinegar
¼ cup olive oil
freshly ground black pepper to taste
salt to taste
1 (10 ounce) package chopped romaine lettuce
1 cup diced fresh pineapple
½ cup chopped and toasted macadamia nuts
3 green onions, chopped
¼ cup flaked coconut, toasted

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly browned, about 10 minutes. Drain, crumble, and set aside.
  • Combine pineapple juice, red wine vinegar, oil, pepper and salt in a lidded jar or cruet. Cover and shake well.
  • Toss lettuce, pineapple, macadamia nuts, green onions and bacon together in a large bowl. Pour dressing over salad and toss to coat. Garnish with toasted coconut.
