TROPICAL FRUIT PARFAIT
Steps:
- In a small bowl stir together yogurt, lime juice, and cayenne pepper; set aside.
- Spoon 1/4 of drained fruit into the bottom of 2 wine or parfait glasses. Add 1/4 of the banana. Spoon 1/4 cup yogurt mixture over fruit and top with 1/4 cup of granola. Repeat layers.
- Serve immediately garnished with a sprig of fresh mint.

Steps:
- First blend the banana with the juice until very thick and creamy. Scoop out into a bowl.
- Blend the mango and kiwi. Leave it just a little bit chunky.
- In a large mug, layer alternately: banana puree, granola, mango/kiwi puree. Enjoy.

TROPICAL FRUIT PARFAIT WITH HONEY-GINGER DRIZZLE AND GINGERSNAP GRANOLA
Steps:
- For the parfait: Add the honey, ginger and 1/2 cup water to a small saucepan. Bring to a boil, stirring to dissolve the honey. Remove from the heat and let cool a bit.
- Remove the ginger and mix half of the syrup into the Greek yogurt; reserve the rest for drizzling on the fruit.
- Divide the kiwis, mangoes and papayas among 6 small wide-mouthed glasses or parfait glasses. Drizzle with the reserved syrup. Top each serving with a dollop of yogurt.
- For the granola: Toast the oats in a nonstick skillet over medium heat until light brown, about 3 minutes. Transfer to a baking sheet.
- In the same skillet, melt the butter with the maple syrup, brown sugar, ginger, cinnamon, allspice and salt. Add the oats back to the skillet along with the almonds and coconut; toss to coat. Serve the granola over the parfaits.

- To make, stir together yogurt, honey, and tropical fruits. Transfer the mixture to ice-pop molds and freeze, at least 8 hours and up to 1 month. To serve, unmold and drizzle one side with honey, then dip in coconut.

- Peel and cut 1/2 pink grapefruit and 1/2 navel orange into segments. Combine with 1/2 kiwi, peeled and chopped, and 1/4 cup pineapple chunks. Place 1/2 cup nonfat Greek yogurt in a bowl. Spoon half the fruit mixture over yogurt, add 2 tablespoons high-fiber cereal. Add another 1/2 cup nonfat Greek yogurt, remaining fruit, and another 2 tablespoons high-fiber cereal. Top with 2 tablespoons shredded coconut.
