FAT FREE FRESH TROPICAL FRUIT SALAD
2 (20-ounce) cans pineapple chunks with 3/4 cup reserved juice, can be used in place of the fresh pineapple and the pineapple juice. Papayas can be used in place of mangoes, or use both! Plan ahead this needs to chill for 8 hours before using.

- In a 4-qt. serving bowl, toss the bananas and lemon juice. Stir in the cantaloupe, pineapple and strawberries. , In a small bowl, beat cream until it begins to thicken. Add sugar and extract if desired; beat until soft peaks form. Spoon over fruit. Sprinkle with coconut and almonds. Serve immediately.
