SPICY TROPICAL COOLERS



Spicy Tropical Coolers image

2/3 cup sugar
1 jalapeno pepper, sliced, plus more for garnish
2 cups pineapple juice
2 cups orange-flavored vodka
1 cup mango nectar
1/2 cup fresh lime juice (from 4 to 5 limes)
Pineapple and mango chunks, for garnish

Steps:

  • Make the jalapeno syrup: Bring the sugar, 2/3 cup water and half of the jalapeno slices to a simmer in a small saucepan, stirring to dissolve the sugar. Remove from the heat and let cool completely, about 20 minutes.
  • Meanwhile, muddle the remaining jalapeno slices in a large liquid measuring cup with a wooden spoon. Add the pineapple juice; let sit while the syrup cools.
  • Strain the jalapeno syrup and pineapple juice mixture into a pitcher. Stir in the vodka, mango nectar and lime juice and refrigerate until ready to serve. Pour into ice-filled glasses; garnish with skewers of pineapple, jalapeno and mango.

This tropical fruit drink is wonderfully refreshing. This really is not a Breakfast drink, its more of a fruit slushy. If you add protein powder and/or prepared oatmeal, it can be a nice filling beverage you can have in the morning that will last till lunch.

1 medium banana frozen and in chunks
1/3 c pineapple juice
1/2 c strawberries frozen
1 c plain yogurt, low fat
1 c canned pineapple chunks with juice (about 1/4 c juice)
1 Tbsp honey
1/2 tsp vanilla extract
1 pkg splenda (optional)
1 Tbsp flax (optional)
1 Tbsp wheat germ (optional)
6 ice cubes

Steps:

  • 1. Place half of each ingredient in a blender; adding half of strawberries one at a time, cover and process until blended. Repeat with rest of ingredients; pulsing to break up strawberries and combine. Add ice and pulse to crush into smoothie. Pour into glasses.
