4 boneless skinless chicken breast halves (6 ounces each)
1/8 teaspoon pepper
1 can (20 ounces) unsweetened pineapple chunks, drained
1 medium sweet red pepper, julienned
1 small onion, sliced and separated into rings
1/4 cup packed brown sugar
1/4 cup reduced-sodium teriyaki sauce
1 teaspoon minced fresh gingerroot

Steps:

  • Sprinkle chicken breasts with pepper; place each on a double thickness of heavy-duty foil (about 18 in. x 12 in.). Top with pineapple, red pepper and onion. Combine the remaining ingredients; spoon over vegetables. Fold foil around mixture and seal tightly., Grill, covered, over medium heat for 20-25 minutes or until chicken juices run clear. Open foil carefully to allow steam to escape.

This foil packet dinner features the juiciest chicken ever with tropical barbecue flavors - you're gonna love it!

1/2 cup barbecue sauce
4 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 (8-ounce) can sliced pineapple, drained
1 red bell pepper, cut into 1-inch chunks
2 scallions, sliced

Steps:

  • Preheat oven to 350 degrees F. Cut 4 (12-inch) squares of aluminum foil.
  • Place barbecue sauce in a shallow dish. Evenly sprinkle chicken breasts with salt and pepper, then dip in barbecue sauce, coating completely.
  • Place each breast in center of a piece of foil. Top evenly with pineapple slices, bell pepper, and scallions. Spoon any remaining barbecue sauce over vegetables. Wrap foil securely, leaving room for steam to circulate, and seal edges tightly. Place packets on a baking sheet.
  • Bake 20 minutes, or until chicken is no longer pink in center. Open packets carefully, as steam may be released.

4 12" x 8" sheets of non-stick aluminum foil
4 boneless, skinless chicken breast halves (1 - 1 1/4 lb)
4 green onions, cut into 1" pieces
1 can (20 oz) pineapple chunks, drained
1 medium red bell pepper, cut in strips
1/2 cup Teriyaki sauce
2 Tbsp packed brown sugar
1 tsp grated fresh ginger
Hot cooked rice

Steps:

  • Place one chicken breast on the center of each piece of foil. Top with green onions, pineapple and green pepper. Combine Teriyaki sauce, brown sugar and ginger; spoon over chicken and vegetables. Fold foil to seal packets but leave room for heat inside to circulate. Bake in 450 degree oven on a cookie sheet for 18 to 22 minutes, or 14 to 16 in a medium-high covered grill. Serve over rice with additional teriyaki sauce, if desired.
