Triple Layer Banana Cake /w Peanut Butter Fudge Icing image

A year around family favorite, the recipe for this moist layer cake was passed on to me by my mother. Children can't keep their fingers out of the icing, which tastes just like peanut butter fudge. This is a Taste of Home recipe, which I shamefully call my own at family gatherings. LOL (after all , I did bake it!)

3/4 c butter ,softened, do not use margarine
2 c granulated sugar or 1/2 c. brown sugar and 1 1/2 c. granulated sugar
3 large eggs
1 1/2 c over ripe bananas, mashed
2 tsp vanilla
3 c all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
1 c dairy butter milk
ICING:
6 Tbsp creamy peanut butter
3 Tbsp butter,soft
1 tsp karo corn syrup
5 1/2 c powdered sugar
8 to 10 Tbsp milk- 2% is ok
peanut halves or pieces, for garnish or walnut halves

Steps:

  • 1. Cake: In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla. Combine the flour, baking powder, soda, and salt; add to creamed mixture alternately with buttermilk, beating after each addition. Pour into 3 greased and floured 9-inch round baking pans. Bake at 350^ for 25 to 30 minutes or until toothpick test is clean. Cool for 10 minutes in the pan, before removing from pan to wire racks to cool completely. --- Icing: In a large bowl, beat the peanut butter, butter and corn syrup until smooth. Beat in powdered sugar and enough milk to be of spreading consistency. Frost between layers and over sides and top of cake. Garnish around top edge of cake and center with a single row of nuts.

Water, vegetable oil and eggs called for on cake mix box
2 tablespoons Betty Crocker™ Rich & Creamy triple chocolate fudge chip frosting
1/4 cup Irish cream liqueur or whipping cream
2 1/4 cups (14 oz) chopped chocolate-flavored candy coating
3 1/2 teaspoons shortening
1/4 cup white vanilla baking chips

Steps:

  • Heat oven to 350°F. (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with cooking spray. Make and bake cake mix as directed on box using water, oil and eggs. Cool completely.
  • Crumble cake into large bowl. Add frosting and liqueur; mix well. Roll mixture into 1 1/2-inch bails; place on cookie sheet. In 1-quart heavy saucepan, melt candy coating over low heat, stirring occasionally. Stir in 3 teaspoons of the shortening until smooth.
  • Place sheet of waxed paper on work surface. To coat each truffle, place on 2-pronged meat fork; hold over saucepan of chocolate. Spoon chocolate over truffle, making sure to cover cake particles completely. Let excess chocolate drip back into pan. Using tip of knife, slide coated truffle onto paper. Let stand at room temperature until set, about 15 minutes.
  • In small microwavable bowl, microwave baking chips and remaining 1/2 teaspoon shortening on High 30 to 60 seconds or until mixture is smooth. Drizzle over truffles. Let stand until set.

1 cup semisweet chocolate chips (6 oz)
1 box Betty Crocker™ Super Moist™ chocolate fudge cake mix
1/2 cup vegetable oil
3/4 cup applesauce
2 eggs
1/2 cup chopped pecans

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease and lightly flour bottom only of 13x9-inch pan.
  • In small microwavable bowl, microwave condensed milk and 1/2 cup of the chocolate chips uncovered on Medium (50%) about 1 minute or until chocolate is softened; stir until smooth, and set aside.
  • In large bowl, beat dry cake mix and oil with electric mixer on low speed about 15 seconds or until crumbly; reserve 3/4 cup. Add applesauce and eggs to remaining mixture; beat on low speed 30 seconds, scraping bowl occasionally (batter will be thick and grainy). Beat on medium speed 2 minutes, scraping bowl occasionally. Spread batter in pan.
  • Drop melted chocolate mixture by teaspoonfuls over batter, dropping more around edge than in center. Stir remaining 1/2 cup chocolate chips and the pecans into reserved cake mixture; crumble over batter.

1 box fudge cake mix
1 box (small box) chocolate fudge instant pudding
2 large eggs
3/4 c milk
1 pkg semi-sweet chocolate chips

Steps:

  • 1. Combine all ingredients along with 1/2 of the bag of semi-sweet chips and stir with a wooden spoon until blended. Pour 1/2 of the batter into a greased and floured bundt pan. Make a trench in the batter in bundt pan then gradually pour the remaining chocolate chips in the center of your trench. Then pour the rest of the batter over until all is in bundt pan. Bake at 350 for 50 to 60 minutes. Take out and cool for ten minutes then turn out cake onto serving plate.

1 tablespoon instant coffee powder
3 eggs
1 cup water
1/2 cup sour cream
1/3 cup vegetable oil
1/2 cup butter, softened
3 1/2 cups confectioners' sugar, sifted
1/2 cup cream
2 ounces unsweetened chocolate (melted and cooled)
4 ounces semisweet chocolate
2 tablespoons strong coffee
3 tablespoons butter, softened

Steps:

  • CAKE: In a large mixer bowl, combine cake mix, coffee powder, eggs, water, sour cream and oil.
  • Beat on medium speed for 2 minutes.
  • Spread in two 9-inch round cake pans, greased and floured, dividing evenly.
  • Bake 30 to 35 minutes.
  • Cool 10 minutes in pans on a wire rack, then remove layers and cool completely.
  • FILLING: Beat 1/2 cup butter, confectioner's sugar, cream, and unsweetend chocolate together on medium speed until light and fluffy.
  • Add more confectiner's sugar or cream to make a soft, creamy spreading consistency.
  • ASSEMBLY: Place 1 cake layer top-side down on a serving plate.
  • Spread with a generous amount of filling.

  • Chill 30 minutes.
  • GLAZE: In a small saucepan over low heat, melt semi-sweet chocolate and coffee, stirring until smooth.

1 box cake mix, chocolate fudge
1 small box if instant chocolate pudding mix
1 c sour cream
3/4 c vegetable oil
1/3 c milk
4 large eggs
1/2 c hot water with 2 tsp expresso powder added
1 - 2 c chocolate chips, reg or mini, to taste

Steps:

  • 1. Preheat oven to 350 degrees F. In mixer bowl, blend together the cake and pudding mix, sour cream, oil, milk, beaten eggs and expresso. Beat at medium speed for a minute. Turn on low and fold in chocolate chips. If the chocolate chips are regular size, dust with flour before folding them in. Pour batter into a well greased (or spray well with non stick spray) 12 cup bundt pan.
  • 2. Bake for 50 to 55 minutes, or until top springs back and a toothpick comes out clean. Cool cake thoroughly in pan at least 40 minutes before inverting onto a plate. Dust the cake with powdered sugar or drizzle with chocolate glaze or chocolate ganache. Another variation would be to add peanut butter chips to the batter and PB glaze on top. Enjoy

4 ounces unsweetened chocolate
1 3/4 cups sugar, divided
1/2 cup water
1 2/3 cups flour
1 teaspoon baking soda

2 cups heavy cream
400 g semisweet chocolate or 400 g milk chocolate
1/8 teaspoon salt

Steps:

  • Cake.
  • PREHEAT oven to 350°F Microwave chocolate, 1/2 cup of the sugar and the water in large bowl on HIGH 2 minute or until chocolate is almost melted, stirring after 1 minute
  • Stir until chocolate is completely melted. Cool to lukewarm.
  • MIX flour, baking soda and salt; set aside.
  • Beat butter and remaining 1-1/4 cups sugar in large bowl with electric mixer on medium speed until light and fluffy.
  • Add eggs, 1 at a time, beating well after each addition.
  • Add flour mixture alternately with the milk, beating until well blended after each addition. Add chocolate mixture and vanilla; mix well.
  • Pour into 2 greased and floured 9-inch round cake pans.BAKE 30 to 35 minute or until toothpick inserted in centers comes out clean.
  • Cool in pans 10 min.; remove from pans to wire racks. Cool completely.
  • Ganache:.
  • Bring cream to a boil. Add in corn syrup and salt. Turn off heat, add chocolate in and stir till melted and smooth.
  • Let cool till its the right consistency to frost.
  • Take half the ganache and whip it till it turns light and thick.
  • Place one cake layer down. Top with whipped ganache (save some ganache, dont use all of it). Top with 2nd cake layer and crumb coat the whole cake with a thin layer of whipped ganache. Place in fridge to set.
  • After it is set, pour the other half of the ganache (unwhipped ganache) over the cake and let set inthe fridge.
  • I suggest you remove the cake from the fridge about 30 minutes before serving or you are going to have a hard time cutting it and eating it.

1/2 c pecans, chopped
