Easy Chicken Gyros with Tzatziki Sauce image

A simple yogurt marinade makes these 5-ingredient chicken tenders a juicy, fast, and simple Greek-inspired pita sandwich thats ready in 30 minutes or less.

Juice of 1/2 lemon
1/2 cup plain yogurt
1 1/4 teaspoons Mediterranean-spiced sea salt (, sea salt mixed with dried oregano)
1 1/2 pounds chicken tenders
2 tablespoons extra-virgin olive oil
1 cup tzatziki sauce (, recipe below)
4 slices flat Greek pita bread
4 cocktail tomatoes (, halved and then quartered)
1/4 red onion (, thinly sliced)
½ cucumber (, halved with skin and seeds removed)
¾ cup low-fat plain Greek yogurt
2 cloves garlic (, pressed or minced)
1 tablespoon red wine vinegar
1 tablespoon fresh dill (, minced)
Pinch of kosher salt and freshly ground black pepper

Steps:

  • Combine the lemon juice, yogurt, and sea salt in a large bowl and add the chicken tenders, tossing to coat well. Cover with plastic wrap and refrigerate for 30 minutes or overnight.
  • Heat a large non-stick skillet over medium-high heat and add 1 tablespoon of olive oil. Add half of the chicken tenders to the pan, shaking off the excess yogurt mixture before adding to the pan. Cook the chicken tenders for about 5 minutes, undisturbed, until browned, then flip and cook for another few minutes or until the chicken is cooked through. Transfer to a platter, add the additional tablespoon of olive oil and cook the remaining chicken tenders.*
  • Prepare the tzatziki sauce by grating the cucumber. Gather the cucumber together and place in a paper towel and press the water out of the shredded cucumber and place in a medium size bowl. Add the yogurt, garlic, red wine vinegar, fresh dill, kosher salt and freshly ground black pepper and mix well. Cover and refrigerate for 30 minutes or up to 3 days.
  • Warm the pita bread in a toaster oven or in the microwave for 30 seconds.
  • Spread some of the tzatzhiki sauce onto the warm pita bread with tomatoes, sliced red onion and 2 or 3 slices of chicken tenders. Fold the pitas and wrap in parchment paper or serve immediately.

Chicken Marinade:
2 lbs. Chicken Breast (cut into pieces)
1/4 cup Greek Yogurt
3 Tablespoons Fresh Lemon Juice
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Red Wine Vinegar
1 1/2 teaspoon Salt
1 teaspoon Pepper
2 teaspoons Oregano
Tzatziki Sauce:
1 1/2 cups Greek Yogurt
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Lemon Juice
1 Tablespoons Red Wine Vinegar
1-2 teaspoons Salt
1 Tablespoons Fresh Dill (diced)
3 Garlic Cloves (finely diced)
1 cucumber (grated and squeezed to drain)
Greek Salad:
3 Tomatoes (diced)
2 Cucumber (peeled and diced)
1/4 Red Onion (diced)
2 Tablespoons Fresh Italian Parsley (diced)
1 Tablespoon Extra Virgin Olive Oil
Salt and Pepper (to taste)
Feta Cheese
4-6 Greek Pita Breads (Naan bread, or Flatbread)

Steps:

  • Place chicken, yogurt, lemon juice, olive oil, vinegar, salt, pepper, and oregano in bag and let marinate at least 30 minutes, preferably 2-4 hours. The ideal time is 24 hours.
  • To make tzatziki sauce, stir together yogurt, olive oil, lemon juice, vinegar, salt, dill, and garlic. Stir in grated cucumber and taste for seasonings. Squeeze the cucumber to remove excess water before adding to rest of ingredients.
  • To make greek salad, place tomatoes, cucumber, red onion, parsley, olive oil, salt and pepper in bowl. Stir to coat. Season to taste.
  • Chicken can be cooked on grill or in skillet. To cook on grill -- place chicken on kebobs and heat grill to medium heat. Cook for 5-7 minutes per side or until chicken is full cooked.
  • To cook chicken on skillet. Heat skillet to medium high heat. Sprinkle with oil. Add chicken and cook for 8-10 minutes, or until chicken is fully cooked and golden brown.
  • Place chicken in pita bread. You can warm the pita bread to make it pliable. Top with tzatziki sauce and greek salad. Add additional feta, if desired.

8 pita breads or flatbreads
Make this Authentic Greek Tzatziki Sauce a few hours in advance or overnight.
2 lbs. chicken breast tenders (boneless, skinless)
2 tablespoons extra virgin olive oil
3 tablespoons Greek yogurt (plain, full fat)
3 tablespoons lemon juice
1 tablespoon white wine vinegar
1 tablespoon extra virgin olive oil
3 teaspoons minced garlic
2 teaspoons marjoram
2 teaspoons rosemary
1 1/2 tablespoons dried oregano
1 teaspoon onion powder
1 teaspoon salt
1/4 teaspoon black pepper
1 cup seeded and finely diced tomatoes
1 cup finely diced cucumbers (peeled or unpeeled)
1 cup finely diced red onion
1 cup crumbled feta cheese
1/2 cup finely diced flat leaf (Italian Parsley (optional))

Steps:

  • Make the Tzatziki SauceMake this Authentic Greek Tzatziki Sauce a few hours in advance or overnight.
  • Marinate the Chicken
  • Measure the marinade ingredients and put them into a 1 gallon zip top bag, close the bag and then massage the bag to mix well.
  • Add the chicken tenders to the zip top bag, close the bag and then massage the bag so that each chicken tender is well covered by the marinade.
  • Place the bag in the refrigerator and let it marinate for at least 3 hours. 12 hours works the best, but don't marinate it longer than 24 hours or your chicken will be too mushy.
  • Warm the Pita Bread
  • Preheat your oven to 250 degrees Fahrenheit.
  • Just before you cook the chicken, place the pita breads on a baking sheet and place them in the oven to be warmed.
  • Cook the Chicken
  • You can cook the chicken on an outdoor grill or an indoor grill pan. Brush the grill / grill pan with olive oil, then preheat using medium high heat.
  • After the grill / grill pan is hot, remove the chicken from the marinade bag and place on the grill / grill pan.
  • Cook the chicken for 3 to 5 minutes on each side (cooking time depends on the size of chicken tenders), until they are golden brown and thoroughly cooked with an internal temperature of at least 165 degrees Fahrenheit.
  • Remove the chicken from the grill / grill pan and place onto a cutting board. Cover with foil and allow to rest for 5 minutes.
  • Slice the chicken tenders and put on a serving plate.
  • Assemble the Gyros
  • Lay out a warmed pita bread.
  • Place sliced chicken down the middle of the pita bread.
  • Top the chicken with an ample amount of tzatziki sauce.
  • Garnish the top of the tzatziki sauce with cucumber, tomatoes, red onions, feta cheese and optionally parsley.
  • Fold up the pita bread and enjoy!

Traditional Greek gyro's are hard to come by. This is a hearty meal that only the largest of appetites should try! You can find thin sliced chicken in most supermarkets now, however if you can't find it you can also pound chicken tenders. Also, depending on your skillet you may adjust the amount of oil needed to fry the fries. Finally, if you can't find greek yogurt any plain yogurt will do even though it is not traditional you will still get the same taste!

1 lb thin sliced chicken
1 large russet potato
2 large pita bread
2 cups vegetable oil
2 tablespoons white vinegar
1/2 teaspoon ground oregano
1 teaspoon paprika
salt and pepper
romaine lettuce
cherry tomatoes, halved
1/4 medium red onion, sliced
8 ounces plain Greek yogurt
1 garlic clove, minced
1/4 teaspoon cumin
1/8 teaspoon sugar
1/2 medium cucumber, finely diced
salt and pepper

Steps:

  • In a small bowl combine Greek yogurt, garlic, cumin, sugar, cucumber, and salt and pepper. Stir and refrigerate until ready to use.
  • Pound chicken as thin as you can get it. Even if you have purchased the thin sliced chicken you still want to get it as thin as possible. Place chicken in a bowl and combine with vinegar, oregano, paprika, and salt and pepper. Cover and refrigerate for at least 30 minutes.
  • In the mean time, peel you potato and cut into 1/4 inch strips. Place cut potato in cold water for at least 15 minutes. Blanching the potatoes before frying will ensure a crispier fry.
  • In a large skillet heat vegetable oil. Personally, I regulate the temperature by instinct. I let the oil heat up and test it with a drop of water; if the water shoots back I know the oil is hot enough. If you aren't comfortable with this method you want the oil to stay around 360 degrees. When the oil is hot enough drop fries inches Depending on the thickness of your fry and your temperature control your fries will take anywhere from 10-20 minutes. You want your fries to have a deep golden brown. Keep a careful eye on them and flip if necessary.
  • Heat a medium DRY skillet. No oil is necessary to sauté the chicken. Begin to sauté chicken. It should only take about 1 minute on each side depending upon how thinly you pounded it. Let chicken rest under tin foil until you are ready to assemble.
  • You can either toast your pita or microwave it. I prefer to microwave it so it is more pliable (only about 20 seconds). Place 2 heaping tablespoons of the tzatziki sauce and spread over pita. Then place half of the chicken, place mostly in the center, making sure that you are able to fold in the sides. Traditionally, fries are to be placed on top of chicken WITHOUT drying off the oil; however this is entirely up to you. Place fries on top of chicken and top with tomatoes, lettuce, and red onions. Serve with extra tzatziki sauce on the side for dipping.

1 cup Greek yogurt
¼ cup extra-virgin olive oil
2 tablespoons lemon juice
1 tablespoon red wine vinegar
3 cloves garlic, minced
2 teaspoons kosher salt
1 ½ teaspoons paprika

1 teaspoon ground cumin
1 teaspoon ground coriander seed
1 teaspoon dried oregano
½ teaspoon crushed red pepper
¼ teaspoon ground cinnamon
2 ½ pounds boneless, skinless chicken thighs
1 large onion
2 8- to 10-inch wooden skewers
6 pita breads, warmed
½ cup tzatziki sauce
½ cup shredded lettuce, or to taste
½ cup diced tomato, or to taste
¼ cup diced red onion, or to taste

Steps:

  • Combine Greek yogurt, olive oil, lemon juice, vinegar, garlic, salt, paprika, black pepper, cumin, coriander, oregano, red pepper, and cinnamon in a medium bowl and stir until well combined. Pound chicken thighs evenly to about 1/2 inch in thickness. Coat all chicken well in marinade, cover, and refrigerate at least 4 hours or overnight.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cut ends off onion and cut onion in half horizontally. Place onion halves next to each other on a parchment or foil-lined rimmed baking sheet.
