1 (8 ounce) package cream cheese, softened
1 cup sour cream
1 (1 ounce) package dry fiesta-style ranch dressing mix
1 cup chunky salsa
1 ½ cups shredded Cheddar cheese
10 (10 inch) flour tortillas

Steps:

  • In a medium bowl, mix the cream cheese, sour cream, fiesta-style ranch dressing mix, chunky salsa and Cheddar cheese. Spread even amounts of the mixture onto the tortillas. Roll tortillas and chill in the refrigerator until ready to serve.
  • To serve, slice the chilled, rolled tortillas into 3/4 inch slices and arrange on a large serving platter.

2 (8 ounce) packages cream cheese, softened
½ cup sour cream
4 green onions, chopped
1 (1 ounce) package taco seasoning mix
14 (10 inch) flour tortillas

Steps:

  • Mix cream cheese, sour cream, green onions, and taco seasoning in a bowl until well blended. Spread a thin layer of the cream cheese mixture onto each tortilla. Roll each tortilla tightly to create a long tube. Spread more of the cream cheese mixture on the edges of the tortilla to seal. Freeze rolls on a baking sheet for 20 minutes for easier slicing. Cut each roll into 1-inch pieces and thaw before serving.

I don't know where I got this recipe, but I know it wasn't on this site, 'cause I couldn't find it anywhere. I've made them before (and they're yummy) so I knew I must have it written down somewhere. Luckily, I found it and am posting it here for safe-keeping. You can use any type of seafood you desire, just be sure to finely dice it, and enjoy. BTW, Prep time doesn't include chilling time, and the 1/2 cup of seafood cocktail sauce at the end of the ingredient list is optional for dipping.

1 (8 ounce) pkg.of cream cheese, softened
1/4 cup seafood cocktail sauce
1 (8 ounce) package imitation crabmeat, finely diced
1/4 cup swiss cheese, shredded
1/4 cup green onion, chopped, or
1/4 cup green pepper, chopped
4 (8 inch) flour tortillas
1/2 cup seafood cocktail sauce

Steps:

  • Mix softened cream cheese and cocktail sauce together, until well blended.
  • Stir in crabmeat, swiss cheese and green onion, or green pepper and mix well.
  • Spread evenly onto the 4 flour tortilla shells and roll each one up tightly.
  • Wrap in plastic wrap and refridgerate for at least 2 hours, or overnight.
  • After they are thoroughly chilled, slice into 1/2 inch circles, and serve with the 1/2 cup, optional cocktail sauce.
  • Note: I microwave my tortilla shells (one at a time) for about 15 seconds, before I spread the mix on them.That makes the shells much easier to roll.
  • I also make my own 'cocktail sauce' by simply mixing prepared horseradish and ketchup (to taste) together.

1 pkg cream cheese
1 envelope original ranch dressing mix
1 jar(s) armor dried beef (found near canned meat)
5-6 large flour tortillas

Steps:

  • 1. Soften your cream cheese and add the ranch dressing mix. Chop your dried beef in a food processor until the slices are small pieces. Add to cream cheese mixture and mix well.
  • 2. Warm each tortilla in microwave for about 10 seconds. Spread cream cheese filling over the tortilla all the way to the edges. Start at one end and roll the tortilla up tightly. Repeat with remaining tortilla shells.
  • 3. Refrigerate for about an hour or so. Remove from refigerator and slice into 1/2 to 1 in slices. Serve on a pretty platter!

1/2 cup corn kernels
1 to 2 sliced green onions
2 garlic cloves, grated or minced
1/3 cup salsa
1 teaspoon cumin
juice of half a lime
1 teaspoon salt
Serrano pepper, seeded and finely diced
1 container Chobani 0% Greek yogurt
TORTIILAS:
Flour tortillas
GARLIC OIL:
1/3 cup canola oil
2 grated garlic clove
TOPPING SEASING:
Salt
Dried Cilantro
Chipotle Chile Powder
AVOCADO CREAMA:
1 Large ripe avocado, mashed until creamy
1 container Chobani 0% Greek yogurt
Juice of half a lime
1/2 teaspoon salt
1/2 teaspoon chipotle chile powder

Steps:

  • Preheat oven to 400˚F. Combine all Filling Ingredients together Heat canola oil and grated garlic cloves in a small saucepan over med heat. When the oil is hot, turn off the heat and let the garlic infuse into the oil for 5-10 minutes. Assemble the tortillas by adding about 2 tbs. of the filling along the lower third of 8-10 flour tortillas -- feel free to sprinkle with a bit more cheese on top if you like it extra cheesy! Roll up and place seam-side-down on a baking sheet lined with parchment paper Brush the tortilla rollups with the garlic oil and sprinkle with salt, dried cilantro, and chipotle chile powder. From previous experience, I recommend wrapping filled, rolled tortillas with waxed paper and chilling before slicing.

6 whole wheat tortillas
8 ounces fat free sour cream
3 tablespoons hot sauce (we used 3 packets of Taco Bell hot sauce)
10 ounces colby-monterey jack cheese, shredded
1 lb boneless skinless chicken breast, cut into small bite-sized pieces
1 1/2 cups salsa

Steps:

  • Cook chicken with salsa over medium heat on stovetop. Let cool.
  • Mix sour cream with hot sauce, to taste.
  • Divide sour cream mixture equally among the tortillas - spread on tortillas.

When coming up with recipes for my daughter's bridal shower, I wanted to be sure to have some meatless options for any guests who don't eat meat, so this is how I made the tortilla rollups for her shower - they were a big hit ith everyone!

1 pkg large burrito style tortillas
1 - 8 oz pkg. cream cheese
1 c sour cream
1 c grated cheddar cheese, sharp or mild, your choice
1 can(s) (small) chopped green chiles

1 chopped green onion, optional

  • 1. Mix all ingredients together except the tortillas. Divide evenly among the tortillas and spread mixture over each tortilla. Roll the tortillas up and cut into one inch slices. Refrigerate for a couple of hours and serve! You can serve these alone or with some salsa for dipping.
