Our thinly breaded Chipotle Lime Tilapia is the perfect combination of sweet and spicy. It's the perfect introductory fish dish - it doesn't taste "fishy" at all and it's ready in less than 30 minutes.

4 tilapia fillets
1 cup crushed tortilla chips
2 Tablespoons chipotle peppers in adobo sauce
1/2 cup chunky salsa
1 Tablespoon lime juice
1 lime (sliced for garnish)
1 bunch cilantro (for garnish)

Steps:

  • Preheat oven to 425 degrees.
  • In a food processor or blender, blend chipotle peppers, salsa, and lime juice. Place in a shallow bowl.
  • Place crushed tortilla chips in a separate shallow bowl.
  • Dredge tilapia through the chipotle mixture and then through the tortilla chips. Place the fillets in a greased 9 x 13 inch baking dish.
  • Bake for about 20 minutes, until the fillets easily flake with a fork and the edges are browning.
  • Garnish with limes and cilantro before serving.

1/2 cup mayonnaise
2 tablespoons finely chopped pickled jalapenos
2 tablespoons canned chopped green chiles
Juice of 1 lime, plus wedges for serving
2 tablespoons chopped fresh cilantro
Kosher salt
1 1/2 cups all-purpose flour
2 large eggs
1 cup finely ground tortilla chips (about 4 ounces)
1 pound large shrimp, peeled and deveined
1/2 to 1 teaspoon chipotle chile powder
Vegetable oil, for frying
Chipotle barbecue sauce, for serving

Steps:

  • Combine the mayonnaise, jalapenos, green chiles, lime juice, cilantro and a pinch of salt in a small bowl; refrigerate until ready to use.
  • Put 1 cup flour in a small shallow bowl; whisk the eggs in a separate shallow bowl. Combine the ground tortilla chips and the remaining 1/2 cup flour in a third bowl.
  • Season the shrimp with salt and the chile powder. Dredge the shrimp in the plain flour, dip in the egg, letting the excess drip off, then press into the tortilla chip?flour mixture until evenly coated. Transfer to a large plate.
  • Heat 1/2 inch of vegetable oil in a large skillet over medium-high heat until shimmering. Working in two batches, add the shrimp and cook, turning, until golden and crisp, about 3 minutes. Transfer to a paper towel?lined plate to drain. Season with salt. Serve with the jalapeno mayonnaise, chipotle barbecue sauce and lime wedges.

I'm not fond of fish, but even I like this dish. Tilapia is mild, and the spicy crust is very appealing. I like to make the crumb crust in bulk and freeze in meal sized amounts. Then this becomes a super quick weeknight meal.

4 tilapia fillets
6 corn tortillas, torn in pieces
1 jalapeno pepper, seeded and coarsely chopped
1 teaspoon lime juice
1/4 cup fresh cilantro
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
1 teaspoon seasoning salt
1 egg, beaten

Steps:

  • Preheat oven to 375°F Coat a baking sheet with cooking spray.
  • Place tortilla pieces, pepper, lime juice, cilantro and spices in blender. Pulse until the mixture is uniform small crumbs. Spread on plate.
  • Beat egg in shallow dish.
  • Dip each fillet in egg, then in crumbs, patting crumbs to adhere. Place on baking sheet.
  • Bake until fish flakes, about 15 minutes depending on thickness of fillets.

4 ounces sour cream
1/4 cup adobo sauce, from chipotle peppers
1 tablespoon lime juice, fresh
1 teaspoon lime zest
1/8 teaspoon cumin
1/8 teaspoon chili powder
1/4 teaspoon Old Bay Seasoning
salt and pepper
6 ounces Doritos
1/2 tablespoon dried chipotle powder
1/2 tablespoon cumin
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2-1 tablespoon jalapeno
1 lb tilapia fillet
1 lime, juice of
1 egg

Steps:

  • Combine all ingredients for the dressing in a small bowl. Set in the frig. for two hours.
  • In a food processor, put Doritos, spices and jalapeno and process until finely crushed. Place on waxed paper when ready to cook.
  • Preheat oven to 350 Degrees.
  • In a med. bowl, whisk egg.
  • Dip fish into egg and then coat both sides of the fish with crust ingredients. Be sure they are well coated.
  • Place fish on parchment paper lined baking sheet and squeeze lime over the fish.
  • Bake for 30 minute.
  • Serve with the chipotle lime dressing and enjoy.
